Steps:
- Heat oven to 425°F. Heat shortening in 10-inch ovenproof skillet or square baking pan, 9x9x2 inches, in oven 3 minutes.
- Stir together buttermilk, butter and eggs in large bowl. Stir in remaining ingredients except skins just until moistened. Stir in skins. Pour into skillet.
- Bake 20 to 25 minutes or until golden brown. Serve hot.

- Preheat the oven to 350 degrees F. Toss the pork rinds, tortilla chips, corn nuts and peanuts together in a large bowl.Whisk the lime zest and juice, Worcestershire, chili powder, cayenne and 1/2 teaspoon salt in a separate bowl. Pour the sauce over the snack mix and toss to coat well. Spread out on a rimmed baking sheet and bake until the mix is toasted and almost completely dry, about 10 minutes, tossing about halfway through.
- Let cool completely, and then store in an airtight container for up to 3 days.

- Preheat the oven to 350°F. Coat each cup of a 12-cup muffin pan with cooking spray. Whisk together the cornmeal, flour, sugar, baking powder, and salt in a medium-size bowl. Whisk together the buttermilk, egg, and oil in another small bowl. Whisk the wet mixture into the dry mixture until smooth. Fold in the cheese, and then divide the mixture evenly among the 12 cups of the muffin pan. Place 1 hot dog piece, vertically, into the center of each muffin and then bake for 15-20 minutes. Serve warm.
PIG SLOP
This is a favorite dish in my family, it's so easy to make and tastes great! My mom couldn't think of a good name for the casserole so she asked my brother and I for help coming up with the name. We named it 'Pig Slop' and as gross as the name sounds, it just works. You can call it Bean Casserole if the original name grosses you out! My mom would always serve this dish with cornbread, either on the side or she'd put the Pig Slop over the cornbread.

- Preheat an oven to 425 degrees F (220 degrees C). Stir together the cornmeal, salt, and baking soda in a bowl; set aside. Place the shortening into a 9 inch cast iron skillet, and place into the oven until the skillet is hot and the shortening has melted.
- Bring some water to a boil in a small saucepan. Add the pork cracklings and boil until tender, 5 to 8 minutes. Once tender, drain, and reserve. Meanwhile, beat the egg in a bowl along with the jalapeno pepper and buttermilk; stir in the cracklings. Stir in the cornmeal mixture until moistened, then pour the batter into the preheated skillet.
- Bake in the preheated oven until the top of the cornbread is brown, and it feels firm to the touch, 30 to 40 minutes. Turn out onto a serving plate and cut into wedges; serve immediately.
