- 1 Preheat oven to 350°F. Spray 9-inch cake pan or spring form pan with nonstick cooking spray. If using a spring form pan, wrap foil around the bottom. 2 Stir together melted butter and brown sugar in pan. Place 7 or 8 pineapple slices in sugar mixture. Place cherry in center of each pineapple slice; cut remaining 2 slices of pineapple in half and place decoratively around slice in center of the pan. 3 Prepare cake mix according to the package directions (if using cake mix larger than 9 oz., a 10 or 12-inch pan is recommended). Pour half cake batter evenly over pineapple. Beat cream cheese, lemon gelatin and eggs in bowl of an electric mixer until smooth. Spread cream cheese mixture gently over cake mix. Pour remaining cake mix over cheese cake in pan. 4 Bake 65 to 75 minutes or until toothpick inserted in center comes out clean. 5 Cool 5 minutes. Loosen edges and turn out onto serving platter

- 1. Preheat oven to 350°F. Spray 9-inch spring form pan with nonstick cooking spray. Note: If using a regular sized cake mix, use a larger spring form pan, and increase the baking time, at least by 15 minutes. ( I used a regular mix and a 9.5 inch pan ). Keep checking it with a wooden pick in the center till comes out clean.
- 2. Stir together melted butter and brown sugar in pan. ( I doubled this )
- 3. Place 8 pineapple slices in sugar mixture. Place cherry in center of each pineapple slice; cut remaining 2 slices of pineapple in half and place decoratively around slice in center of the pan.
- 4. Prepare cake mix according to the package directions.
- 5. Pour half cake batter evenly over pineapple.
- 6. Beat cream cheese, lemon gelatin and eggs in bowl of an electric mixer until smooth.
- 7. Spread cream cheese mixture gently over cake mix.
- 8. Pour remaining cake mix over cheese cake in pan. I wrapped the pan in foil, as it was leaking a bit after 10 minutes of baking.
- 9. Bake 65 to 75 minutes or until toothpick inserted in center comes out clean. ( if using a regular sized cake mix as I did..add an additional 10 - 15 minutes on the baking time than what the original recipe called for).
- 10. Cool 5 minutes. Loosen edges and turn out onto serving platter
- 11. Enjoy!! The cake was delicious..I will be making this again for Easter.

- Preheat oven to 325°. Sprinkle brown sugar into an 8-in. ovenproof skillet. Arrange pineapple in a single layer over brown sugar; place a cherry in the center of each pineapple slice., For filling, in a large bowl, beat cream cheese and confectioners' sugar until smooth. - Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9-inch round cake pan with at least 2-inch high sides.
- Pour melted butter into the greased pan and swirl to coat. Sprinkle brown sugar evenly over butter. Place pineapple slices in an even layer over the brown sugar, slightly overlapping and trimming pieces to fit as necessary, covering the whole bottom of the pan. Set aside.
- Whisk together flour, baking powder, cornstarch, salt, cinnamon, and nutmeg in a small bowl until combined.
- Beat egg whites in a glass, metal, or ceramic bowl until stiff peaks form.
- Cream together 3/4 cup plus 2 tablespoons white sugar, softened butter, and egg yolks in a large bowl until light and fluffy, about 3 minutes. Add in half of the flour mixture and mix until just combined. Add ricotta cheese and mix until just combined. Add remaining flour mixture, stirring until just combined.
- Add 1/3 of the whipped egg whites to the batter, and fold until no streaks of egg whites remain. Gently fold in remaining egg whites until no streaks of egg whites remain. Pour batter evenly over pineapple slices, and gently smooth into an even layer.
- Place cake pan into the preheated oven and bake until a toothpick inserted into the center of the cake comes out with a few moist crumbs, 50 to 55 minutes.
- Allow cake to cool in the pan 10 minutes before running a knife around the sides to loosen. Invert cake onto a serving platter and let pan sit for a few minutes on top of the cake before removing. Allow cake to cool before serving.
