PINEAPPLE SWEET AND SOUR SAUCE
I have tried a few different recipes for sweet and sour sauce from this site and from other cookbooks and none of them ever seemed to be quite right, so I experimented a few times and this is the one I liked the best. Now it's the only sauce I use for my sweet and sour pork or chicken.

Steps:
- Whisk 1/4 cup pineapple juice and cornstarch together in a small bowl until smooth.
- Combine cornstarch mixture, remaining 1 3/4 cup pineapple juice, sugar, ketchup, vinegar, soy sauce, crushed pineapple, and garlic powder in a large pot over high heat. Cook, stirring frequently, until sauce comes to a gentle boil. Reduce heat and continue to simmer until sauce is clear and reaches desired consistency, 15 to 25 minutes.

HAM GLAZE WITH MUSTARD AND PINEAPPLE
To use, remove ham from oven. Increase oven temperature to 400 degrees F (205 degrees C). Pour half of mixture over scored ham. Return to oven for 20 minutes. Remove ham and pour on remainder of mixture. Decorate with pineapple slices and bake until golden brown.

Steps:
- Preheat oven to 325 degrees F (165 degrees C).
- Whisk pineapple juice, brown sugar, and dry mustard in a bowl until brown sugar has dissolved.
- Place ham in a baking dish with cut side down and arrange pineapple rings and maraschino cherries onto the ham; secure with toothpicks if needed. Push cloves into ham and baste ham and fruit with pineapple juice glaze.
- Bake in the preheated oven until glaze has baked onto ham, 1 1/2 to 2 hours; baste with glaze every 30 minutes.
- Turn on oven's broiler.
- Broil ham until the glaze forms a crust and the pineapple slices are browned, about 5 minutes.

BEER-BATTERED COCONUT SHRIMP WITH PINEAPPLE-MUSTARD SAUCE
This recipe can be doubled. Plan ahead there is 30 minutes marinating time, and 20 minutes of freezing time. If your coconut strands are very long then either chop or process then to make them smaller, they will stick better to the beer/flour batter. The sauce can be made up to 1 day in advance. Purchase large shrimp for this, and the shrimp must be deveined and butterflied.

- For the dipping sauce; in a bowl combine all ingredients; cover and chill until ready to use.
- For the shrimp; peel the shrimp leaving the tails on.
- Butterfly the shrimp by making a deep slit down the back of each from the large end to the tail cutting to, but not through inside curve of shrimp.
- In a large bowl stir together coconut milk, cilantro and lime juice.
- Add in the shrimp; toss to coat; cover and chill for about 25-30 minutes.
- Drain the shrimp but DO NOT pat dry.
- In a small bowl whisk together the flour and beer.
- In a shallow dish combine the shredded coconut with flour and cayenne (if using.
- Dip the shrimp into the beer batter, then dredge in the coconut/flour mixture (pressing with fingers to adhear).
- Place the shrimp on a baking sheet then freeze for 20 minutes.
- Pour oil into a Dutch oven to depth of 2-inches.
- Heat oil to 350 degrees.
- Cook the shrimp in batches (2-3 minutes, or until golden).
- Drain on paper towels, then sprinkle lightly with salt.
- Serve immediately with prepared dipping sauce.

- Heat milk in double boiler. Beat yolks lightly. Combine sugar, flour, mustard powder ad salt and add to yolks. Add vinegar and pineapple. Slowly add to hot milk (will curdle). Add pinch of baking soda (less than 1/4 teaspoon) half way through to reduce curdling. Remove from double boiler and transfer to pot. Cook and stir until thickened (will thicken more as it cools).
