STRAWBERRY KIWI QUINOA BREAKFAST PARFAIT
These breakfast parfaits look so pretty and colorful and are so tasty, you'd never know they're also super healthy. The Greek yogurt is packed with protein, the quinoa is also high in protein and has double the amount of fiber of most grains, and the strawberries and kiwi are both high in vitamin C and antioxidants. What a way to start the day!

Steps:
- In a small bowl, whisk together the yogurt, honey, and lime zest.
- Place 4 small (6-ounce/180-ml) juice glasses on a work surface and put 2 tablespoons of the quinoa in the bottom of each glass. Add 1/4 cup (60 ml) of the yogurt to each glass, followed by about 2 tablespoons of the diced strawberries and kiwi. Repeat the layering in each glass, and scatter any additional fruit that is left over the top layer of yogurt. Serve immediately.

- Prepare and dice 1/4 small pineapple, to yield 3/4 cup.
- In a glass, layer a third of pineapple with 1/4 cup whipped cottage cheese (or regular cottage cheese, blended) and 2 teaspoons honey.
- Make another layer of pineapple, cottage cheese, and honey; top with remaining pineapple. Garnish with 1 teaspoon toasted sweetened shredded coconut, if desired.

- Make the quinoa: Prepare quinoa if you haven’t already: Bring 2 cups water and 1 cup uncooked quinoa to a boil in a saucepan. Reduce heat and simmer for 15 minutes or until water has been absorbed and the quinoa is tender. Remove saucepan from heat and let cool for 5 minutes; fluff quinoa with a fork. Allow to cool. This step can be done the day before.
- Prep pineapple: While quinoa is cooking, prep pineapple by cutting it in half lengthwise. Scoop out pineapple flesh using a knife and a spoon so you’re left with two pineapple boats for serving. Chop the fruit and set aside.
- Sauté veggies: Heat oil in a large nonstick pan over medium heat. Add onion, red pepper, garlic and ginger. Cook, stirring frequently for about 5 minutes or until mixture is fragrant and onions are translucent.
- Combine: Add fresh pineapple, edamame, tamari, sambal oelek, lime juice and cooked quinoa to the pan. Stir to combine.
