This recipe is a wonderful, hearty meal for those cool Autumn days. Great for feeding friends on football Sundays.

Steps:

  • Crumble the ground beef into a large skillet over medium-high heat. Cook and stir until browned. Drain grease, and transfer beef to a slow cooker. Mix in the tomato soups (undiluted), onions, potatoes, and beans.
  • Cover, and cook on the Low setting for 4 to 5 hours, until stew is thick and potatoes are tender.

I got this recipe from a minister's wife, and I imagine she used it many times at church gatherings. It's an inexpensive "stick-to-the-ribs" dinner that's quite easy to prepare. Plus, it tastes even better reheated the next day.

  • In a skillet, brown beef with onion over medium heat; drain. In a 3-qt. baking dish, combine beef mixture with remaining ingredients. , Cover and bake at 350° for 1 hour or until rice and potatoes are tender.

1/4 cup uncooked long-grain rice
1 teaspoon Worcestershire sauce

  • Preheat oven to 350 degrees. Brown ground beef with onion in skillet, stirring until crumbly; drain.
  • Layer ground beef mixture, rice, potatoes and beans in lg. casserole.
  • Combine remaining ingredients with 1/2 Cup water in bowl, mixing well. Pour over casserole. Bake covered, at 350° for 1 1/2 hours.

I found this in the "Fix-It and Forget It" crock pot cookbook. I haven't tried it yet, and I will update after preparing with any changes. I've already increased the amount of chili powder from 1/8 tsp to 1 tsp and the Worcestershire sauce from 1/4 tsp to 1 tsp to add some flavor that it may be lacking.
