PITTSBURGH POTATOES

I have been making this for about 15 years now and never get tired of it. It is good for just about any occasion from graduations to super bowl parties to office parties. Seems to be one of the first to go.

Steps:

  • Preheat oven to 375.
  • In a large mixing bowl mix all ingredeanes (make sure that the hash browns are still frozen).
  • Spread mixture evenly in to a 13x9 glass baking pan.
  • Bake for 45 minutes.
  • Let cool for about 3-5 min and serve.
  • Also good the reheated.

1 (2 lb) bag frozen hash browns
1 (10 3/4 ounce) can cream of mushroom soup do not add water (I use cream of chicken)
1 (16 ounce) container sour cream (light or fat free)
1 small onion, chopped (optional)
4 cups fancy shredded sharp cheddar cheese
salt and pepper (I do not use salt but rather garlic pepper)
cayenne pepper (optional)

Steps:

  • Cook first 3 ingredients in boiling water to cover in a saucepan 15 minutes; drain and add pimiento strips.
  • Cook cheese and next 4 ingredients in a saucepan over low heat, stirring costantly, until thoroughly heated and cheese melts.
  • Pour cheese sauce over potato mixture, and spoon into a baking dish.
  • Top with breadcrumbs, and dot with butter.
  • Bake at 350 degrees F.
  • for 20 to 30 minutes.

4 cups diced potatoes
1 small onion

1/2 jar pimiento strip
1/2 lb processed cheese spread
4 tablespoons butter or 4 tablespoons margarine, melted
3 tablespoons flour

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Place the potatoes into a large pot and fill with enough water to cover. Bring to a boil, and cook until tender enough to pierce with a fork; drain, and and cut into cubes.
  • Melt cheese and 1/4 cup butter in a large saucepan over medium low heat, stirring frequently. Remove the pan from the heat; stir in the sour cream, onion, salt, and pepper. Stir the potatoes into the cheese mixture, and transfer to a 2 quart casserole dish. Dot the top of the potatoes with the remaining 2 tablespoons of butter, and sprinkle with paprika.
  • Bake in preheated oven until hot, about 30 minutes. Cool before serving.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat butter in a pot over medium heat. Add onions and sauté with a pinch of salt until translucent, about 5 minutes. Add flour and cook, stirring, just to take off that starchy, raw edge, about 2 minutes. Pour in heavy cream and whisk to combine. Whisk in milk. Cook, stirring, over medium-high heat until it just starts to simmer and thicken up. Add 1 teaspoon salt, pepper, and cayenne. Grate in nutmeg.
  • Turn off heat. Stir in Worcestershire and fresh thyme leaves. Reserve until needed.
  • Cover the bottom of a deep 10x15-inch casserole dish with about 25% of the reserved sauce. Add a layer of sliced potatoes, seasoning the tops with some of the remaining salt as desired; ladle over 1/3 of the sauce and sprinkle over 1/3 of the grated Cheddar cheese. Layer in ½ of the sliced ham.
  • Place another layer of sliced potatoes on top and season with salt. Ladle over ½ of the remaining sauce; repeat layering with Cheddar cheese and ham.
  • Place last layer of potatoes on top. Ladle over remaining sauce and spread out with a spatula. Sprinkle over remaining Cheddar cheese.
  • Bake uncovered in the preheated oven until browned, bubbling, and potatoes are very tender, about 1 ½ hours. Let cool for 15 to 20 minutes before serving.

Steps:

  • Melt the butter in a large, nonstick skillet over medium heat. Stir in the onion, and cook until very tender, about 10 minutes. Stir in as much cabbage as will fit in the pan, and cook until the cabbage is very tender, about 15 minutes. Stir in the remaining cabbage as the mixture cooks down.
  • Meanwhile, fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the egg noodles, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 5 minutes. Drain well in a colander set in the sink.
  • Stir the kielbasa into the cabbage mixture and cook a few minutes to warm. Fold in the egg noodles, then gently fold in the pierogis. Cover, and cook until the pierogis are hot in the center, about 10 minutes more. Season to taste with salt and pepper before serving.
