- Preheat the broiler. Heat the olive oil in a large nonstick skillet over medium-high heat. Add the sausage and cook, breaking it up with a wooden spoon, until browned and cooked through, about 7 minutes. Transfer to a paper towel?lined plate.
- Melt the butter in a small skillet with the garlic, oregano and red pepper flakes. Split the whole pack of attached dinner rolls in half horizontally. Place the top and bottom halves cut-side up on a baking sheet. Brush the cut sides with all but 2 tablespoons of the garlic butter; season with salt. Broil until toasted, 1 to 3 minutes. Remove from the oven and preheat to 400 degrees F.
- Scatter the cooked sausage and pepperoni on the bottom bread piece. Dollop with the marinara, then top evenly with the mozzarella. Cover with the top bread piece, then brush the roll tops with the reserved garlic butter and sprinkle with the parmesan. Bake until the bread is toasted and the cheese is melted, 12 to 15 minutes.

- On four slices of bread, layer one slice of mozzarella, two slices of tomato, 1 teaspoon Parmesan cheese, a dash of garlic salt and six slices pepperoni. Top with remaining mozzarella and bread. Spread outside of sandwiches with butter., On a hot griddle, toast sandwiches until golden brown, 3-4 minutes on each side. Serve with pizza sauce.

All amounts may be increased or decreased to suit taste, and if possible purchase the submarine style sandwich buns that are about 9-inches long --- these are delicious!

- Slice 6 buns (or how many you desire, just increase the ingredients).
- On the bottom half of the buns, layer sausage, then ham, then pizza sauce, then cheese, then onion, then banana peppers (seaon the peppers with black pepper) then pepperoni and lastly the salami.
- Replace the tops.
- Wrap each bun in heavy-duty foil that has been sprayed well with non-stick cooking spray.
- Place on baking sheet.
- Bake at a 400 degree oven for about 12-15 minutes, or until the cheese is melted.
- Serve immediately.
- **NOTE** banana peppers in a jar are usually found in the pickle section of any grocery store.
- Delicious!
PIZZADILLA (GRILLED PIZZA SANDWICH)
I was watching TV the other day, and I saw a commercial for something called a Papadilla. What follows is my attempt to make one of these things. What this relatively fast and easy procedure allows you to do is make a single portion of what's very, very close to pizza in a pan on top of the stove in just a few minutes, without ever having to turn on the oven. Serve your pizzadilla with a side salad topped with Parmigiano-Reggiano cheese.

- Divide dough into 4 equal pieces. Roll each piece into a 1/8-inch thick circle on a lightly floured surface.
- Heat a pan over medium-high heat and brush with oil. Add 1 piece of dough and reduce heat to medium. Cook for 2 minutes and flip. Spread 1/4 of the sauce over the dough. Sprinkle 1/4 of the mozzarella cheese and some sausage, mushrooms, and red onion on top, leaving about 1/2 inch of dough around the outside. Press gently into the middle of the dough with a spatula to make a crease; fold in half.
- Brush crust with a little more olive oil and flip over. Repeat on the other side and continue cooking until both sides of the pizzadilla are as browned and crisp as you like.
- Repeat with remaining pizza dough and toppings. Cut each pizzadilla in half and serve.

- Make the dough: Pour warm water into a large bowl; sprinkle with yeast, and let stand untilfoamy, about 5 minutes. Whisk oil, sugar, and 2 teaspoons salt into yeast mixture. Add flour,and stir until a sticky dough forms. Turn out dough onto a floured surface, and knead until smooth, about 8 minutes. Transfer to an oiled bowl, and turn to coat. Let stand, covered, in a warm place until doubled in volume, about 1 hour.
- Meanwhile, make the filling: Preheat oven to 400 degrees. Spread tomatoes on a rimmed baking sheet, drizzle with 3 tablespoons oil, and season with salt. Roast, flipping after 30 minutes, until shrunken and slightly dehydrated, 45 minutes to 1 hour. Let cool. Raise oven temperature to 500 degrees (with convection on if possible).
- Turn out dough onto a lightly floured surface, and divide into 8 pieces. Form each into a ball.Let rest, draped with plastic wrap, for 15 minutes.
- Place 1 dough ball on a lightly oiled baking sheet, and shape into a 7 1/2-inch round. Arrange a layer of tomatoes on half of the dough, and dot with 2 tablespoons goat cheese. Top with 4 slices soppressata. Tear off pieces of mozzarella, and place over top. Fold dough over to enclose filling, but do not seal. Repeat with remaining dough, tomatoes, goat cheese, soppressata, and mozzarella (arranging 4 sandwiches per baking sheet). Bake until golden and cooked through, about 10 minutes. Remove from oven. Let cool for at least 15 minutes before serving.
- Meanwhile, toss arugula and basil with lemon juice and remaining 1/4 cup plus 2 tablespoonsoil. Season with salt and pepper.
- Open each sandwich, and fill with arugula-basil mixture. Cut each in half.
PIZZA STONE GRILLED BREAKFAST SANDWICH
These breakfast sandwiches taste like they came straight off the griddle at the diner with the bonus of the smokiness from the grill. And since the entire sandwich is prepared on a pizza stone, there's barely any cleanup. If you need another reason to try it, the bacon gets really crispy in half the time it would take on the stove. Be sure to have the eggs cracked, bacon ready to go and English muffins buttered before starting to cook so the process moves smoothly.

- Place a grill-safe pizza stone (see Cook's Note) that is at least 14 inches in diameter on a grill. For gas grills with 3 or more burners: Turn all the burners to high heat and close the lid. Let the stone heat until the internal temperature of the grill is 500 degrees F, about 15 minutes. For charcoal grills: Fill a chimney starter with enough charcoal for high heat, then light it (be sure to consult the grill manufacturer's guide for the best results for high-heat cooking). Close the lid and let the stone heat until the internal temperature of the grill is 500 degrees F, about 30 minutes.
- Butter the cut side of all 4 English muffins halves. Place 1 slice of cheese on each of the 2 bottom halves. Crack the eggs into a small bowl and sprinkle the top with 1/4 teaspoon salt and a few grinds of pepper; don't beat the eggs.
- Place the bacon in the center of the stone, away from the edges to avoid too much fat running into the grill. Close the lid and cook until the bacon starts to shrink and crisp on the bottom, 3 to 4 minutes. Open the lid and flip the bacon.
- Place the 2 bottom muffin halves on the stone, cheese-side up. Place the 2 top muffin halves on the stone, buttered-side down. Carefully pour the eggs onto an empty part of the stone (it should be hot enough to seize the whites right away; if they run a little too much, use a rubber spatula to stop it). Close the lid and cook until the bacon is extra crispy, the cheese has melted, the egg whites are set, and the yolk is still runny, 3 to 5 minutes.
- If using a gas grill, turn it off. Transfer the 2 bottom muffin halves to plates. Break each slice of bacon in half and place 4 pieces on top of the cheese on each bottom half. Using a spatula, separate the eggs and place on top of the bacon. Drizzle with hot sauce, if desired. Cover the sandwiches with the 2 top muffin halves.
PIZZA PANINI SANDWICH RECIPE BY TASTY

- Heat a grill or campfire to medium heat.
- Make the garlic butter: Add the butter, oregano, garlic powder, and red pepper flakes to a small bowl and stir to combine.
- Slice the French loaf almost all the way in half lengthwise, leaving a long side still attached like a hot dog bun.
- Open the bread and spread the pizza sauce liberally over both sides. Lay the sliced mozzarella on both sides of the bread. Lay half of the pepperoni slices over the mozzarella on the bottom half. Sprinkle with the shredded mozzarella, then top with the remaining pepperoni. Sprinkle the Parmesan and basil over the pepperoni, then gently bring both sides of the bread up together to close.
- Brush to top and bottom of the loaf with the garlic butter, then double wrap the sandwich in aluminum foil.
- Set the sandwich on the grill or campfire over medium heat. Place a cast-iron or other heavy skillet on top to press down. Cook the sandwich for 5 minutes, then flip and cook for 5 minutes more, until the outside of the bread is crisp and the cheese is melted.
- Let sandwich cool for a few minutes before carefully unwrapping. Slice and serve.
