Steps:
- Melt butter with olive oil in a large skillet over medium heat. Cook and stir onion, celery, and garlic in the butter mixture until the onion is soft and translucent, 5 to 7 minutes.
- Stir tomato sauce and tomato paste into the onion mixture until smooth; add Parmesan cheese, fennel seeds, basil, oregano, salt, sugar, pepper, and bay leaf. Stir the sauce and bring to a slow simmer; cook at a slow simmer for 1 hour. Remove and discard bay leaf before use.

PIZZA SAUCE WITH FENNEL
One of my favorite pizzas has a sauce containing fennel seeds, so I decided to come up with my own recipe. The sauce is spicy, tangy and herby--enough for two or three 12" pizzas.

- Combine all ingredients except tomato paste.
- Cover and simmer over low heat for 20-30 minutes, stirring occasionally.
- Remove heat.
- Stir in tomato paste to thicken.
HOMEMADE PIZZA SAUCE

- Heat the oil in a medium saucepan over medium-high heat. Add the oregano, garlic and red pepper flakes and cook, stirring, until the garlic is golden brown, 1 to 2 minutes. Add the tomatoes, basil and 1/2 teaspoon salt and bring to a simmer. Reduce the heat to medium and simmer, with the saucepan loosely covered in foil to avoid splattering and stirring occasionally, until fairly thick, 5 to 10 minutes, depending on your tomatoes. Remove the basil.
ULTIMATE PIZZA SAUCE
This pizza sauce recipe was given to me as a wedding present, written on the inside cover of a pizza cookbook. It is thick, saucy, spicy and delicious. I'll never use anything else on my homemade pizzas. I like to double or triple it and put it in Ziploc bags in my freezer.

HOMEMADE PIZZA SAUCE
For years, I had trouble finding a pizza sauce recipe my family liked, so I started making my own. The evening I served it to company and they asked for my recipe, I knew I'd finally got it right! - In a large saucepan over medium heat, combine tomato sauce and paste. Add remaining ingredients; mix well. Bring to a boil, stirring constantly. FENNEL AND SAUSAGE PIZZA
I made this fennel and sausage pizza one night and it was the best pizza we have had in a long time. You can adjust the amount of toppings and sauce and cheese to your preference. For the dough, I like Jay's Signature Crust from this site.

- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with foil.
- Toss fennel and onion slices with olive oil; spread out on the baking sheet.
- Roast in the preheated oven until golden, 10 to 15 minutes. Remove from the oven. Increase oven temperature to 450 degrees F (230 degrees C).
- Cook and stir sausage in a skillet over medium heat until no longer pink, about 5 minutes.
- Roll out pizza dough on a lightly floured surface. Transfer to a pizza pan or clean baking sheet. Spread sauce on top and cover with mozzarella cheese. Top with fennel, onion, sausage, and garlic slices.
- Bake in the preheated oven until cheese is melted, 15 to 17 minutes. Garnish with chopped fennel fronds.

- Heat oven to 450°F. Spray cookie sheet with cooking spray.
- In 12-inch skillet, cook sausage over medium-high heat 6 to 8 minutes, stirring occasionally, until no longer pink; drain. With slotted spoon, remove sausage; set aside. Add oil to drippings in skillet; add onion and fennel. Cook over medium heat 15 minutes, stirring frequently, until golden brown. Remove from heat. Stir in pepper.
- Unroll dough on cookie sheet. Starting at center, press out dough to 16x13-inch rectangle. Prick crust generously with fork. Bake 5 minutes.
- Spread pasta sauce over partially baked crust. Top with onion mixture, sausage and cheeses. Bake on lower oven rack 10 to 12 minutes or until cheese is golden brown. Sprinkle with oregano.

- Place a rack in top-most position of oven; preheat to 475°F. Place dough on a work surface; drizzle with 1 Tbsp. oil, turning to coat. Stretch out to a 10" round and cover loosely with plastic wrap.
- Heat 1 Tbsp. oil in a large cast-iron skillet over medium. Cook sausage, breaking up into small pieces with a wooden spoon, until browned in spots and cooked though, 5-8 minutes. Transfer sausage to a small bowl.
- Remove skillet from heat and carefully lay dough inside (use spoon to help you extend dough all the way to the edges). Season with salt, then spread marinara over entire surface of dough. Top with mozzarella, then fennel, garlic, and cooked sausage. Drizzle with another 2 Tbsp. oil. Peek underneath the crust-the bottom should be golden brown and crisp from residual heat in the skillet. If it's not, set over medium-low and cook until crust is golden brown, about 3 minutes.
- Transfer skillet to oven and bake pizza on top rack until crust is golden brown around the edges and cheese is browned in spots and bubbling all over, 10-14 minutes. Let cool 5 minutes, then top with red pepper flakes and basil. Sprinkle with more salt and drizzle with remaining 1 Tbsp. oil.

- Saute the main ingredients. Slice the fennel and onion. Roughly chop the garlic. Heat the olive oil in a large pan over medium heat, then add the sliced fennel, sliced onion, and salt. Saute until translucent, stirring regularly, about 15 minutes. Add the garlic and cook until fragrant, stirring constantly, about 30 seconds.
- Deglaze and simmer. Deglaze the pan by pouring the white wine into it and scraping up any browned bits. Cover, turn to medium low, and simmer for 10 minutes.
- Finish the sauce. Add the goat cheese and stir until melted. Remove from the heat and stir in the lemon zest. Once the sauce has cooled enough, blend until smooth. If necessary, add milk or stock of your choice to reach the ideal sauce consistency (I used 1/2 cup of milk). Taste, add salt or lemon zest if necessary, and proceed with making your pizza!
