PIZZA DOUGH FOR PIZZA OR CALZONES (BREAD MACHINE)
A bread machine makes having homemade pizza as easy as using a storebought pizza! I use this for pizzas and calzones. Prep and cook time do not include time in dough cycle. My dough cycle is 1 hour and 30 minutes long. This recipe makes a ton of dough if you like a thinner crust like me, it makes 1 large thick crust pizza, it also makes six 6-inch calzones. It is crispy and flavorful, I like to sub some whole wheat flour for real artisan taste!

- Place all ingredients except cornmeal into your bread machine according to your manufacturer's directions. For my bread machine it is in the order listed above.
- Once dough cycle has finished, turn dough out onto a floured surface. Preheat oven to 400°F and roll or stretch dough out into a 12 inch round (medium crust) or several small rounds or a large rectangle. Place pizza on a greased cookie sheet.
- Sprinkle cornmeal over top of dough. Bake pizza for 10 minutes at 400ºF.
- Remove from oven and cover with toppings. Reduce oven temp to 350ºF and bake 10 minutes or until cheese is bubbly and browned.
CALZONE
This recipe can be split in half for 2 regular calzones. We fill them with anything. They are delicious!

- Place water, salt, bread flour, dry milk, sugar, and yeast in the pan of the bread machine in the order suggested by the manufacturer. Select Dough cycle.
- After cycle ends, roll out dough on a lightly floured surface; shape into a 16 x 10 inch rectangle. Transfer to a lightly greased cookie sheet. In a small bowl, mix together chopped pepperoni and mozzarella. Spoon pizza sauce in a stripe down the center of dough lengthwise; add sausage and cheese filling. Make diagonal cuts 1 1/2 inches apart down each side, cutting within a 1/2 inch of the filling. Criss cross strips over filling, sealing with water. Brush top with melted butter.
- Bake at 350 degrees F (175 degrees C) for 35 to 45 minutes.

WORLD'S EASIEST BREAD MACHINE PIZZA DOUGH
Borrowed from a handful of other pizza dough recipes and tweaked to yield a tasty, thick crust using a bread machine. If you use a pizza stone, sprinkle it with cornmeal before placing the pizza on it to help keep it from sticking. Feel free to try different spices if you don't like any of the ones in this recipe.

BREAD MACHINE PIZZA DOUGH
I found this recipe on mealsforyou.com and tweaked it a little bit to suit our tastes. I love the addition of the olive oil to the dough. Highly reccommend this one! I hope you like it, too!(prep time does not include time in bread machine)

Steps:
- Add ingredients in the order reccommended for your bread machine and set to dough cycle.
- After it's finished, transfer dough to lightly oiled pan.
- For a thick crust, cover and allow to rise for about 20 minutes; for thin, bake right away.
- Heap with toppings of your choice and bake in 450F oven for about 20 minutes (I sometimes put the crust in for about 5 minutes before adding toppings to speed it up a little bit and to prevent a soggy crust).

- Mix 1/2 cup lukewarm water and yeast together in a bowl. Let stand until yeast softens and begins to form a creamy foam, about 5 minutes.
- Combine 1/2 cup water, olive oil, honey, and salt in a separate bowl; add 1 cup flour and mix well. Mix yeast mixture into flour mixture. Add remaining flour, 1 cup at a time, until dough is well combined.

EASY PIZZA DOUGH FOR BREAD MACHINE
This is basically an amalgam of several basic bread recipes, simplified and adapted for use as a pizza crust. The bread machine just makes it easier. Makes a 10-14" inch pie.

- Add ingredients to pan in order listed, set bread machine on"dough" and walk away.
- After the cycle is completed, lightly coat dough ball in flour and roll or slap out to desired size.
- Top with desired sauce, cheeses, meats and/or veggies and bake at 450° until cheese is golden brown.
- Will make a 9-10" pizza of average thickness, or a 13-14" thin crust pizza.
- For best results, bake on a preheated baking stone sprinkled with corn meal.
- Notes: You may substitute beer for all or part of the water. I've used 3/4 cup flat beer and 1/4 water with excellent results. A teaspoon of semolina may be added as well -- it provides a nice crunchiness to the dough when baked. Corn meal can be substituted for the semolina (and likewise, semolina can be used to dust the pizza peel and/or baking stone).
BREAD MACHINE THIN CRUST PIZZA DOUGH

- Pour the warm water into the pan of the bread machine, and add the flour on top of the water. Sprinkle with salt and sugar, and top with the yeast. Set the machine on the dough setting, and push the start button. When the machine signals that the dough is finished, transfer to a well-floured work surface.
- Preheat oven to 425 degrees F (220 degrees C).
- Roll or stretch the dough out into thin crust about 14 inches across. Leave dough thick at the edge. Place the dough onto a 14-inch pizza baking sheet, and brush the dough with the olive oil.

- Put beer, butter, sugar, salt, flour, and yeast in a bread machine in the order recommended by the manufacturer. Select Dough setting, and press Start.

- Place ingredients in exact order listed above into the bread machines pan. IMPORTANT - Do not mix ingredients!

BASIC PIZZA DOUGH - PROCESSOR METHOD

- Add the yeast and water to a bowl and stir with a wooden spoon. Allow the yeast to dissolve until it is incorporated into the water, about 5 minutes. Add the olive oil, salt and 1 1/2 cups of the flour. Stir the mixture with a spoon until until the dough forms a ball, or place all the ingredients in a food processor until the dough forms a ball. After a few seconds of mixing or processing, add the remaining 1 1/2 cups flour. The dough should be soft but not sticky. If it is too sticky, add a bit more flour and process for another minute.
- Transfer dough to a lightly floured work surface and knead dough for 2 to 3 minutes, adding enough additional flour if necessary to form a smooth and elastic dough. Dough should not be sticky. Transfer dough to a lightly oiled 2 or 3 quart bowl and turn to coat dough with oil. Cover with a damp towel and let rise in a warm place until doubled in size, usually at least 1 hour.
- Preheat oven to 500 degrees F and if you have one, place a pizza stone on the bottom rack of the oven.
- Divide dough into 2 portions (for 2 (12-inch) pizzas) and form into balls. (See note below for calzones.) Place on a lightly oiled baking sheet and cover with a damp towel. Let rest for 15 minutes, then transfer to a lightly floured surface, shape as desired and roll out to a thickness of 1/2-inch. Transfer dough to a pizza peel and top with toppings of choice. Transfer to the preheated pizza stone and bake until crispy and golden brown, usually 12 to 18 minutes (depending on the toppings). Remove from the oven with a metal peel or spatula and serve immediately.
- Note: For calzones, divide the dough into 4 equal portions and form into 4 balls. Place on a lightly oiled baking sheet and cover with a damp towel. Let rest for 15 minutes, then transfer to a lightly floured surface and roll out into 4 6-inch circles. Place filling of choice in the center of one side of each circle, then fold dough over filling to meet edges of filled side. Crimp edges with a fork or your fingers, then cut a small slit in the top of the calzone to allow steam to escape while cooking. Cook on a preheated pizza stone in a preheated 475 degree oven for about 8 to 10 minutes, or until well-browned. Remove from the oven with a metal peel or spatula and serve immediately.
PIZZA DOUGH BREAD MACHINE
I used sparkling water just because I ran out of bottled water and I'm not a fan of tap. Give this a try. The optional ingredients can be skipped or changed to which spices you enjoy for a little something extra. Of course you would use the garlic for savory pies and cinnamon for dessert or curry type pies. But if using real garlic and not powdered do add after rising. Because garlic does kill yeast. I have made the dough with powdered garlic with no problems. Pizza is a great way to get your children into cooking.

PIZZA DOUGH FOR CALZONES (OR PIZZA )
This is a really delicious basic pizza dough. The mixture of cornmeal with white, semolina and whole wheat flours gives a great taste and texture. I mostly use it to make my Spinach & Cheese Calzones, but it also works well as a pizza base. If you want more flavor add 2 tsp of oregano.

- In a large mixing bowl, mix together the white, semolina, whole wheat flour, 1/4 cup of the cornmeal, salt & yeast.
- Make a well in the center and pour in the water and oil. Mix with the paddle of an electric mixer for about 5 minutes until dough forms. Or you can mix with a wooden spoon for 10 minutes.
- Knead by hand on lightly floured surface for 10 minutes, or in mixer bowl with a dough hook for 5 minutes. Alternatively, if you have a food processor you can mix the dry ingredients in the work bowl and then, with the motor running, add the water and oil. Process for about 45 seconds.
- Lightly spray a mixing bowl and a baking sheet with vegetable spray. Place the dough in the bowl and cover with a towel. Let rise at room temperature for about 30 minutes until dough has doubled in size.
- Punch down the dough. Then sprinkle the baking sheet with 2 tsp of cornmeal. Roll and stretch the dough on the baking sheet to form a 14-inch circle. After adding toppings, bake in a 450-degree oven until crisp, about 10-12 minutes.
- If you're making my Spinach & Cheese calzones follow this recipe until you punch down the dough. Then refer to the calzone recipe.
