MAKOWKI ( POLISH POPPY SEED BREAD PUDDING)
This is a very traditional Polish dessert. This is a recipe my grandmother got when they lived in Poland for 10 years. We usually have this at Christmas and other special occasions. It's a fairly rich, potent dessert so if children will be eating this you can leave out the alcohol and use 1 tsp each of rum and almond extracts to give the flavor. It is similar to a tiramisu but we use stale or toasted raisin bread or egg loaf slices. You could probably substitute lady fingers.

- Prepare a day before because this needs to refridgerate over night.
- It is sometimes difficult to find ground poppy seeds so I use the poppy seeds, put them in a coffee filter and pour boiling water over the poppyseeds twice, to soften them up, then put them in the food processor, set aside.
- In a large pot over medium heat bring the milk, cream and butter almost to a boil.
- While constantly stirring with a wooden spoon, add the honey, rum, amaretto, cinnamon, raisins, walnuts, and almonds.
- Reduce heat to medium low and let this cook for 10 minutes, stirring occasionally.
- Turn the heat off and add the ground poppy seed, stir twice and let the mixture sit for 10-15 minute( its important to have the heat off because the poppy seeds can become bitter if heated too much).
- The mixture should be slightly thickened.
- In a large glass bowl alternate layers the poppy seed mixture and the bread slices, starting with a ladle of the poppy seed mixture and ending with poppy seed mixture.
- Should be 3 - 4 bread layers.
- Cover the top with chocolate shavings and almond slices.
- Cover and put in the fridge overnight.
- We just serve this out of the bowl like a trifle, it is fairly firm you could probably slice it.
- Can be served with whipped cream.
- ( It lasts in the fridge for at least a week).
- Enjoy.

CHOCOLATE BABKA BREAD PUDDING
Babka is part of the rich, sweet Eastern European baking tradition that Jewish cooks brought to the United States in the early 20th century. It is made with layers of rich yeast dough, covered with chocolate or cinnamon sugar, then twisted and folded into a loaf. And as if babka itself were not irresistible enough, in this recipe it is combined with challah and a milk-egg-cream mixture and baked into a golden, rich dessert. Once the Ashkenazi Jews arrived in the United States, luxuries like strudel, rugelach and babka became more accessible: a chocolate or cinnamon babka was a Sunday-morning treat in many households. But making babka at home became too time-consuming, and now it is easy to order online. Breads Bakery in the Flatiron district of Manhattan makes (and ships) an extraordinary dark-chocolate version.

- Heat oven to 350 degrees. Butter a deep 9-by-13-inch baking dish or disposable foil pan. Cut the challah and babka into cubes, about 1 inch square.
- In a very large bowl, whisk together eggs, sugar, milk, cream, cinnamon and salt. Add the cubed bread and gently mix together, using your hands or a rubber spatula, until the egg mixture is absorbed. Transfer to the prepared pan and distribute evenly, pressing gently to level the top. Bake for 45 minutes, or until firm and crusty on top.
- Let rest at least 15 minutes before serving. Cut into squares or scoop with a large spoon.

SIMPLE BREAD PUDDING
This recipe is proof-positive that leftover bread can easily be converted to dessert without much work. There's room for customization here: consider adding fresh or dried fruit or a combination of spices like cinnamon, nutmeg, allspice and cardamom. It makes a great brunch dish, served with fresh fruit compote. Or add a handful of chocolate chips before baking for a decidedly more decadent outcome.

- Heat oven to 350 degrees. In a small saucepan over low heat, warm milk, butter, vanilla, sugar and salt. Continue cooking just until butter melts; cool. Meanwhile, butter a 4-to-6-cup baking dish and fill it with cubed bread.
- Add eggs to cooled milk mixture and whisk; pour mixture over bread. Bake for 30 to 45 minutes, or until custard is set but still a little wobbly and edges of bread have browned. Serve warm or at room temperature.
