POMEGRANATE AND ALMOND RICE

Simple, easy, tasty way to improve the flavour and colour of a rice dish. This adds a little sweetness to a curry, and when you bite into the pomegranate seeds they just burst with flavour.

Pomegranate and Almond Rice image

Steps:

  • In a large pot melt the butter, add the rice, and stir to coat the rice with the butter. Do not fry the rice.
  • Add the water, stock cube and salt. Bring to the boil, reduce the heat to minimum, cover the pot and cook for 10 minutes, or until all of the water has been absorbed by the rice. Let the rice stand covered for 10 minutes.
  • In the mean time remove the seeds from the pomegranate.
  • Stir the almonds and pomegranate seeds into the rice and serve.

  • Cook 1 each chopped celery stalk and onion in 2 tablespoons butter in a saucepan over medium heat, 5 minutes. Add 1 1/4 cups wild rice blend, 1 1/2 cups chicken broth, 3/4 cup apple cider, 1 teaspoon kosher salt, a few grinds of pepper and 2 bay leaves. Simmer, covered, until tender, 40 to 45 minutes; let sit 5 minutes. Drain any liquid. Stir in 2 sliced scallions and 1/4 cup pomegranate seeds.

Steps:

  • Heat oil in a saucepan over medium heat and cook onion until soft and translucent. Add rice and toast until fragrant, 2 to 3 minutes. Pour in hot vegetable broth and bring to a boil. Add saffron and allspice, reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed, about 20 minutes.
  • Toast pistachios in a skillet over medium heat until nuts start to turn golden brown and become fragrant, 5 to 10 minutes. Set aside.
  • Stir butter into the cooked rice. Remove from heat and mix in pistachios and pomegranate seeds. Fluff with fork and season with salt and pepper.

Pomegranate chicken with almond couscous image

Steps:

  • Boil the kettle and heat the oil in a large frying pan. Put the couscous in a bowl with some seasoning and crumble in half the stock cube. Add the onion to the pan and fry for a few mins to soften. Pour boiling water over the couscous to just cover, then cover the bowl with a tea towel and set aside.
  • Push the onion to one side of the pan, add the chicken fillets and brown on all sides. Stir in the tagine paste or harissa and the pomegranate juice, then crumble in the rest of the stock cube and season well. Simmer, uncovered, for 10 mins until the sauce has thickened and the chicken is cooked through. Stir through the pomegranate seeds, saving a few to scatter over before serving.
  • After 5 mins, fluff up the couscous with a fork and stir through the almonds and mint. Serve the chicken on the couscous with the sauce spooned over.

Pomegranate Jelly Almond Thumbprints image

Steps:

  • Preheat oven to 350 degrees.
  • Line baking sheets with parchment paper or leave ungreased.
  • Combine flour and salt in a bowl and set aside.
  • Combine almonds and 1/3 cup of sugar in a food processor fitted with a metal blade.
  • Pulse until finely ground. (Be careful not to grind to a paste).
  • Combine butter and remaining sugar in a medium bowl.
  • Cream together until light and fluffy.
  • Add ground almond and sugar mixture combine to mix.
  • Add vanilla and egg yolks combine to mix.
  • Mix in flour.
  • Roll dough into walnut-size balls and place 2 inches apart on baking sheets.
  • Dip your thumbs in flour and use to make a deep indentation in center of each cookie.
  • Whisk egg whites to loosen them and then brush outside of each cookie with egg white.
  • Scatter a few chopped almonds on outer edge of each cookie if desired.
  • Fill each center with 1/2 teaspoon of jelly.
  • Bake until edges are golden brown, 15 to 18 minutes.
  • Remove from oven.
  • If needed, immediately add another 1/4 teaspoon of jelly to each cookie.
  • Let stand for 3 to 4 minutes.
  • Transfer to cooling racks with a thin metal spatula.
  • Dust with confectioners' sugar if desired.

  • Place the rice in a bowl, cover with cold water and swish it around with your hands or a wooden spoon. The starch will release into the water and it will appear a bit cloudy. Drain and repeat with fresh water until the water remains clear. Drain rinsed rice in a colander. Shake dry, then pat dry with clean paper towels.
  • Heat oil in a large skillet over medium heat. Add scallions and sauté for a minute or two until softened, but not browned. Add the rice and sauté over medium heat for about 2 minutes, stirring often, until the edges of the rice grains appear translucent. Stir in turmeric, cumin and ginger and cook, continuing to stir, for about 30 seconds.
  • Add water or broth and salt. Bring to a boil, cover, then adjust the heat down and simmer on very low heat until water is absorbed, about 20 minutes. When all of the water is absorbed and the rice is tender, remove from heat and fluff it with a fork. Put cover back in place and allow rice to steam off of the burner for 5 minutes.
