Steps:

  • Season chops with salt and pepper; coat with flour.
  • Heat oil, add chops, fry each side 3 minutes.
  • Add onions, cook 5 minutes turning chops once.
  • Pour in beer and broth.
  • Cover and simmer 15 minutes.
  • Remove chops to a 350 degree preheated oven.
  • Season sauce to taste.
  • Blend cornstarch with small amount of water, stir into sauce, cook until thick and bubbly.
  • Pour over pork chops and serve.

Very tasty sauce to place on your pork chops. The original recipe (from Cooking Pleasures magazine) calls for shallots and whole-grain Dijon mustard for the first mustard, and smooth Dijon for the second use. I'm not that fancy, and just used smooth. I'm also not that smart; the original recipe called for 2 T plus 2 tsp. mustard, but I misread, and used 2 T both times, and it came out very tasty. You may want to adjust according to your tastes.

Steps:

  • Sprinkle pork with 1/4 t. salt and 1/8 t. pepper. Heat large skillet over medium heat until hot. Add 1 T oil, heat until hot.
  • Add pork, cook 10-12 minutes or until slightly pink in center, turning once. Place on platter, cover loosely with foil.
  • Add onions to same skillet, adding additional oil if skillet is dry. Cook over medium heat 2-3 minutes, stirring frequently.
  • Reduce heat to low, stir in 5 T of vinegar, 2 T mustard, 1/2 t. salt, and 1/8 t. pepper. Simmer 30-60 seconds, or until vinegar evaporates.
  • Remove from heat, cool slightly. Whisk in 3 T oil, water, 2 T mustard (less if preferred), and 2 T vinegar. Serve sauce over pork.

  • Preheat oven to 375.
  • Pound the chops thin with a meat tenderizer.
  • Heat the oil in a large skillet over medium high heat and brown the chops lightly on each side.
  • Move the chops to a shallow baking dish. Scatter the sliced onions over the chops, sprinkle with brown sugar and pour the chili sauce over all.
  • Bake in preheated oven for 40 minutes (or until done, depending on the thickness of your chops). I usually flip them midway through so that they cook evenly in the sauce on both sides.

  • Dust the pork chops on both sides with the flour; season with salt and pepper. Heat 2 tablespoons olive oil in a large skillet over high heat. Add the pork chops and cook until golden brown, 4 minutes. Flip; cook until lightly golden on the other side, 2 more minutes. Remove to a plate.

  • Preheat a large skillet over medium-high heat, for about 1 minute or until the surface of the pan is uniformly hot. Pat the chops dry, and season the chops on one side with salt and pepper. Add the oil and heat until shimmering. Add the chops seasoned side down and cook until the chops are brown, about 3 to 4 minutes. Add the butter and cook for 1 minute more. Season the top side of the chops, and turn the chops over. Continue cooking until firm and an instant-read thermometer registers 140 degrees F, about 4 to 5 minutes more. Transfer the chops to a plate, tent with foil and set aside to rest.
  • Pour off any fat remaining in the skillet. Pull the pan from the heat and carefully add the bourbon. Return the pan to the heat and tip the pan slightly to ignite the alcohol. Cook until reduced by half then add the chicken broth and bring to a simmer, scraping up any browned bits on the bottom of the pan with a wooden spoon. Simmer for 3 minutes, then whisk in the mustard and the cream. Simmer the sauce until it coats the back of a spoon, about 1 to 2 minutes more. Buttermilk-Brined Pork Chops image

Steps:

  • For the pickled red cabbage slaw: In a small saucepan, add the vinegar, sugar, bay leaves, 1 teaspoon salt and 1/2 cup water and bring to a boil. Put the onions and cabbage in a large heatproof bowl or container and pour the boiling liquid over them. Toss to coat. Let the mixture sit for at least 30 minutes in the refrigerator and up to overnight. Right before serving, add the parsley.
  • For the pork chops: In a large bowl, combine the buttermilk, hot sauce, granulated garlic, 2 teaspoons salt and 1 teaspoon pepper. Add the brine and pork chops to a large ziptop bag, making sure the pork chops are evenly coated. Close tightly. Allow the chops to sit for 2 hours on the counter and up to 4 hours in the refrigerator.
  • Set up a breading station with one plate of the flour, one bowl of the eggs and one plate of the breadcrumbs.
  • Remove the pork chops from the brine and allow any excess to drip off. Bread the pork chops by evenly coating them in the flour, followed by the egg and finishing with the breadcrumbs.
  • Fit a rimmed baking sheet with a wire rack. Pour enough oil into a 12-inch cast-iron skillet to come halfway up the sides of the pork chops and heat over medium heat. Once the oil is shimmering, add the pork chops to the skillet in batches and shallow-fry until golden brown or a thermometer reads 135 degrees F, 3 to 5 minutes per side. (If the pork chop breading is getting too dark while cooking in the oil, finish the pork chops in the oven at 350 degrees F until an internal temperature of 135 to 140 degrees F is reached.) Remove the chops to the baking sheet and season with salt.

Steps:

  • For the apple compote: In a large saute pan over high heat, add the oil and allow to heat to the verge of smoking. Then add the onions and reduce the heat to medium. Allow the onions to cook, stirring throughout, until light brown in color, about 2 minutes. Then add the bacon and allow to cook until the bacon has begun to brown. Then add the apples. After adding the apples, allow all the ingredients to blend in flavor for a final 2 minutes. Add the wine to deglaze the pan and allow the alcohol to cook off. After reducing the wine, reduce the heat to low and whisk in the butter and optional spices, stirring for 1 to 2 minutes to create a sauce. Finish with the mint and hold warm until serving.
  • For the chops: In large a saute pan over medium-high heat, add the oil and allow to warm. Sprinkle the chops with salt and pepper equally on both sides and add to the warm oil. Allow the chops to brown on the first side for 3 to 4 minutes, and then flip and repeat cooking on the second side for a final 3 to 4 minutes. Once cooked, remove from the pan and serve with potatoes of choice. Finish with the apple compote.

Steps:

  • Season chops with flour, salt and pepper.
  • Heat 2 tablespoons olive oil in cast iron skillet over medium-high heat; sauté chops until golden brown.
  • Remove.

  • Remove.
  • Add 1 tablespoons unsalted butter; when melted, add mushrooms. Remove and de-glaze skillet with 1/3 cup beef broth or wine, if preferred.

In the Burgundy region of France, home of Dijon, pork chops are traditionally served in a sauce made with mustard, cream and white wine, and there are very few pairings that are better. Richard Olney, a prominent food writer and authority on French cooking, sautéed sliced apples and chops and then baked them all together with cream and mustard dribbled on top. I prefer the method here, but you could always fry up some apples and serve them on the side. (For a dish with roots closer to Normandy than Burgundy, make the same recipe but omit the mustard, deglaze the pan with Calvados instead of wine and stir sliced sautéed Granny Smiths into the sauce itself.)

Steps:

  • Melt butter in the oil in a large deep skillet over high heat. Season chops with salt and pepper and add them, browning well, about 2 or 3 minutes a side, reducing the heat slightly if chops brown too quickly.
  • Remove chops to a platter and pour off most of the fat. Add green onions or shallots and cook over medium-high heat until softened, about 1 minute.
