- In a large nonstick skillet, saute onion and garlic in butter until tender. add pork chops; brown on both sides. In a small bowl, combine the tomato sauce, wine or broth, oregano and pepper; pour over chops. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until tender.

PORK CHOPS IN TOMATO SAGE SAUCE
This is a recipe I adapted from a 1991 Cooking Light recipe that I have continued to make for the past 15 years. It is a favorite!

Steps:
- Heat 4 T. oil and 2 T. butter in heavy medium skillet over medium high heat.
- Add tomatoes, reserving juice and dried sage. Cook until thickened to saucelike consistency, stirring frequently, about 15 minutes. Add Set aside.
- Divide remaining 2 T. oil, 2 T. butter and whole sage leaves between 2 heavy large skillets.
- Cook mixture over medium-high heat until butter melts.
- Add 2 chops to each skillet. Cover and cook until brown, turning frequently, about 10 minutes.
- Add 1/4 cup wine to each skillet. Boil uncovered until reduced to a glaze, about 5 minutes.
- Divide tomato sauce between pans, spreading over chops.
- Reduce heat, cover and simmer until chops are tender, about 30 minutes longer.
- Degrease sauce; adding reserved tomato juice if you like a thinner sauce.
- Season with salt and pepper.
- Transfer chops to a platter, and spoon sauce over.
- Sprinkle with mnced sage and reserve.

- Heat the oil in a heavy large skillet over medium heat. Sprinkle the pork chops with salt and pepper. Add the pork chops to the skillet and cook until they are brown and an instant-read meat thermometer inserted horizontally into the pork registers 160 degrees F, about 3 minutes per side. Transfer the pork chops to a plate and tent with foil to keep them warm.
- Add the onion to the same skillet and saute over medium heat until crisp-tender, about 4 minutes. Add the tomatoes with their juices, herbes de Provence, and 1/4 teaspoon red pepper flakes. Cover and simmer until the flavors blend and the juices thicken slightly, stirring occasionally, about 15 minutes. Season the sauce, to taste, with salt and more red pepper flakes. Return the pork chops and any accumulated juices from the plate to the skillet and turn the pork chops to coat with the sauce.
- Place 1 pork chop on each plate. Spoon the sauce over the pork chops. Sprinkle with the parsley and serve.
JAPANESE BREADED PORK CUTLET WITH SWEET TOMATO SOY SAUCE

- For the sweet tomato soy sauce: Stir together the ketchup, soy sauce, Worcestershire and brown sugar in a small bowl and refrigerate until ready to use.
- For the pork cutlets: Put the flour in a wide, shallow bowl; the eggs in another; and the panko in a third.
- Poke the pork with a fork a few times to tenderize it, then sprinkle the pork with salt and pepper. Heat about 1/4 inch oil in a large skillet over medium-high heat until shimmering. Meanwhile, working in batches, dredge the pork in flour. Shake off the excess and dip in the eggs, letting the excess drip off before coating in the panko. Fry in the oil, turning once, until golden brown on both sides and just cooked through, about 2 minutes per side. Transfer to a paper towel-lined plate to drain. Repeat with the remaining pork.

- Place potatoes and garlic in a medium saucepan and pour over enough water to cover. Set pan over high heat and bring to a boil. Cook 8 minutes, until potatoes are fork-tender. Drain and return potatoes and garlic to pan. Add sour cream and mash until almost smooth (or lumpy if desired). Stir in parsley and season, to taste, with salt and black pepper.

- Dry pork chops on paper towels; season with salt and pepper to taste.
- Heat olive oil in large skillet over med-high heat.
- Add chops and brown first side until golden, 3-4 minutes.
- Stand on fat edge to crisp, 1 minute.
- Add lemon peel then lay chops on second side to lightly brown, 1-2 minutes.
- Decrease heat to low and add wine and tomatoes.

PORK CHOPS WITH TOMATO & FENNEL SAUCE
Came across this one in my current quest to change up the menu a bit and have fallen for fennel. With a distinctive licorice flavor, fennel has many natural pairings including both pork and tomatoes. In this recipe, grilled or pan cooked chops are given a zippy finish with a Italian inspired sauce. For those of us who don't always have time to marinade and do a lot of prep work, this seems like lovely dish to serve to family or friends.

- In a large non-stick skillet over medium-high heat, add the tablespoon of oil. Add onions and fennel and saute for 4 to 5 minutes.
- Add the minced garlic and cook an additional minute. Add tomatoes, rosemary, oregano, thyme, and salt and pepper and simmer for ten to fifteen minutes.
- Whilst the sauce is cooking, about five minutes into simmering time, take the garlic clove and rub both sides of the chops. Season to taste with salt and pepper. Cook chops about 3-4 minutes on each side on grill, grill pan, or skillet. (I used a George Foreman and find 3 minutes per side perfect.) Allow meat to rest a minute before serving.

PARMESAN BREADED PORK CHOPS WITH CHUNKY TOMATO SAUCE
This recipe is for 4 thick-cut pork chops you can double the amounts if desired. This is a very good pork chop recipe that I developed recently! A large electric frypan works perfectly for this! Use a thicker-cut of pork chops for this 1/2 to 3/4-inch thickness. - In a small shallow bowl mix together the breadcrumbs with Parmesan cheese, seasoned salt and black pepper.
- In another bowl slightly beat the egg.
- Dip the pork chop/s firstly in the egg then coat in the breadcrumb mixture.
- Heat oil and butter in a large skillet over medium heat.
- Brown the chops on both sides then remove to a plate.
- Add in more oil if needed to the skillet and add in onions, garlic, green bell pepper, oregano, basil and dryed chili flakes (if using) saute for about 3-4 minutes.

- Add in the browned pork chops and cook uncovered over medium-low heat for about another 25 minutes, or until the chops are cooked to desired tenderness.
- Season with salt and pepper to taste.
- Serve on cooked spaghetti and top with Parmesan cheese.
PORK CHOPS IN TOMATO & CHORIZO

- Pour tinned tomatoes into saucepan and chop small. (I use scissors for a more rustic look once cooked)
- Peel and half a small onion and add place into saucepan. Peel garlic cloves and add to saucepan whole. Season with a pinch of salt and pepper.
- Leave to simmer gently for 20 minutes before beginning on pork.
- Roast pork chops in oven at 200c for around 25-30 minutes.
- Pan fry the chorizo in 10g of butter for 3-5 minutes. Remove the garlic and onion from the sauce and add the chorizo + pan juices. Add the remaining butter and simmer for 5 minutes.
- Spoon thick sauce over the pork chops and serve with potatoes or veg of your choice.

- Trim fat from chops. Coat 12-inch skillet with cooking spray; heat over medium-high heat. Brown chops on both sides in hot skillet. Set aside.
- In a 3-1/2- or 4-quart slow cooker, combine onion, tapioca, garlic, Italian seasoning, black pepper, Worcestershire sauce, salt and crushed red pepper. Add chops. Pour tomatoes over chops.
- Cover and cook on low-heat setting for 7 to 8 hours or on high-heat setting for 3-1/2 to 4 hours.
- To serve, transfer chops to serving platter. Spoon tomatoes atop chops using a slotted spoon. If desired, pour some of the cooking liquid atop chops and tomatoes.
