- Meanwhile, prepare the chops by cutting through outside fat strip every 1 inch to prevent curling being careful not to cut into the meat, and seasoning chops with salt and pepper.
- Sauté chops in olive oil, in a skillet over medium-high heat until browned, flip and brown other side (approx 3-4 minutes per side). Remove chops from pan and rest on a platter while you make the compote.
- Deglaze the skillet with chicken broth being sure to scrape up brown bits from the bottom of the pan.
- When you have reduce the broth by about 1/2, add the apple mixture and juices release from the rested pork chops and stir until well combine. Season to taste and serve over the pork chops. If wish, you can return the pork chops to the pan to coat before serving.

I found this recipe in a book from Hearts and Tummies Cookbook Co. called "Adaptable Apple." It can almost be a one-dish meal, and the flavors all go well together. My suggestion is to first season the pork chops however you like. The first time I made this I forgot to do that.

PORK CHOPS WITH APPLES
These moist tender chops get delicious flavor from Dijon mustard, onions and apple slices. Or try replacing the apples with pineapple rings for an appealing variation. I like to serve mashed sweet potatoes with this main course, along with a simple salad.

SKILLET APPLE PORK CHOPS
With fresh sage and apple, this dish is tasty, easy and done in a flash. The recipe says garlic butter, but I keep a jar with three cloves of garlic covered in olive oil and use that instead. The garlic oil is delicious for salads also. -Lorraine Caland, Shuniah, Ontario

SMOKED PORK CHOPS WITH APPLES
I was looking for something new to do with some smoked pork chops and I found a recipe on cooks.com that I altered slightly. The original called for cranberry-apple drink rather than cider. The glaze never really thickened for me, but it the chops were still delicious. I used MacIntosh apples, unpeeled. My kids and husband cleaned their plates and my husband has already requested that I make it again.

SLOW COOKER APPLE PORK CHOPS
A sweet and tangy, affordable and easy recipe. Simple and loaded with veggies. Does not have an overpowering flavor, kid approved. Browning pork chops is an important step, don't skip! I add meat tenderizer to any slow cooker meat, you do not need to add salt, the tenderizer and broth add plenty. Use fresh ground nutmeg! Great with boiled potatoes alongside.
