This is my favorite recipe and has been since childhood. I especially love the potatoes!

- Preheat oven to 350 degrees F (175 degrees C).
- Place the sliced potatoes and sliced onion in a greased 9x13 inch baking dish; mix gently. Cover the potatoes and onions with cheese. Fill dish with milk halfway. Place butter in several places on top of the cheese. Place the pork chops on top. Salt and pepper to taste. Bake 60 minutes or until potatoes are tender. Turn pork chops over halfway through cooking.

- In a small saucepan, melt butter; stir in the flour, salt and pepper until smooth. Add broth. Bring to a boil; cook and stir for 1 minute or until thickened. Remove from the heat and set aside. , In a large skillet, brown the pork chops on both sides in oil; sprinkle with additional salt and pepper if desired., In a greased 13x9-in. baking dish, layer potatoes and onion. Pour broth mixture over layers. Place pork chops on top. , Cover and bake at 350° for 1 hour; uncover and bake 30 minutes longer or until meat and potatoes are tender. If desired, sprinkle with paprika and parsley.

- In a greased 13-in. x 9-in. baking dish, layer half of the potatoes and onion; sprinkle with salt and pepper. Repeat layers. Combine the soup and sour cream; pour over potato mixture. - 1. Preheat oven to 350 degrees. Peel potatoes and slice them. Place potatoes in a 9 by 13 inch casserole dish or baking pan. Add sliced onions and mix. Sprinkle pepper over potatoes and onions. Coat pork chops with flour and brown in hot skillet in a small amount of oil. Arrange pork chops on top of potatoes.
- 2. In a small saucepan heat soup with water. Mix well and pour over pork chops and potatoes. Sprinkle paprika over everything. Cover baking pan with foil and bake for about 1 hour and 15 minutes. Remove foil and return dish to oven for another 10-15 minutes to brown.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish with 1 tablespoon butter.
- Melt 1 tablespoon butter in a skillet over medium heat. Season pork chops with salt and pepper; cook in skillet until browned, 3 to 5 minutes per side.
- Melt remaining 3 tablespoons butter in a small saucepan over medium-high heat. Stir mustard and thyme into the butter; season with salt and pepper. CANADIAN PORK LOIN CHOPS
I came up with this recipe as I love maple and mustard. We wanted to add more flavor and not dry out the boneless loin chops. Spice rub marinade, lightly breaded with a maple-mustard glaze, and cooked in garlic-flavored oil - a great Canadian recipe! This is also great on the BBQ. Perfect with roasted potatoes and a coleslaw.

- Whisk brown sugar, sea salt, 1/2 teaspoon garlic powder, onion powder, 1/2 teaspoon paprika, 1/4 teaspoon black pepper, dry mustard, and fennel seeds together in a small bowl.
- Pat pork loin chops dry with a paper towel. Score the meat on both sides, 1/8-inch deep in cross-hatch lines spaced 1/2-inch apart, with a sharp knife; rub spice mixture onto all sides of pork chops and into scored lines. Cover chops; refrigerate for 4 to 6 hours.
- Whisk maple syrup, brown mustard, pinch of garlic powder, pinch of paprika, pinch of black pepper, and cayenne pepper together in a small bowl; set aside.
- Coat pork chops on all sides with seasoned bread crumbs.
- Heat olive oil and canola oil in a large skillet over medium-high heat. Stir garlic into pan, and cook until lightly browned and fragrant, about 1 minute; remove garlic from pan and discard.

- Melt butter in a 2 qt sauce pan over medium heat Whisk in flour and stir until smooth.

- Peel and slice potatoes.
- place potatoes in a 13x9 inch pan.
- pour milk over potatoes (reserving 1/3 cup).
- put oil in frying pan.
- salt and pepper chops with above measurements.
- as soon as oil is hot, sear chops on both sides for 4 minutes each.
- put remaining salt and pepper in milk and potatoes, stir (add more salt or pepper to taste if needed).
- once chops are browned place on top of potatoes and milk.
- pour remaining 1/4 cup of milk into frying pan, heat until mixture can be poured into milk and potato baking dish.
- give a slight stir.
- bake for approximately 35-40 minutes or until potatoes are tender and milk is golden brown.
- Let rest for 5 minutes and serve.
