SUNDAY STARTUP PORK AND BEANS
Steps:
- Set soaked beans in saucepot and cover with water (4 quarts). Bring water to a boil, reduce heat and simmer, partially covered for 1 hour or until the beans are just tender, but not mushy. Drain, reserving cooking liquid. Mix precooked beans with molasses and mustard and season lightly with salt and pepper. While beans are cooking, parboil sausages and salt pork for 10 minutes. Drain. Dice the salt pork into small cubes and slice the sausages. Preheat the oven to 350 degrees. In a shallow gratin or baking dish layer 1/3 of the beans. Top the beans with half of minced garlic, onion, diced salt pork and sliced sausages; season with salt and pepper. Repeat with a layer of beans, remaining salt pork, sausages, onions and garlic and finish with layer of beans. Add about 1 cup of reserved bean cooking liquid to the baking pan, cover the top with strips of bacon and bake for 1 1/2 to 2 hours or until the liquid is almost entirely absorbed. (Add more liquid if it evaporates too quickly.)
- Serve with Corn Bread (recipe follows)
- Preheat oven to 350 degrees. Grease a 13 by 9-inch baking pan. With a whisk combine the flour, cornmeal, baking powder, salt and sugar. Beat eggs with buttermilk and combine with corn and corn oil. Swiftly blend dry ingredients with wet ingredients and transfer to baking pan. Bake for 30 minutes or until bread pulls away from edges and a toothpick when inserted in the middle of the bread comes out dry.

SLOW-COOKER PULLED PORK

- Place the pork on a large plate or cutting board. Mix together the sugar, garlic powder, onion powder, Italian seasoning, paprika, 1 tablespoon salt and 2 teaspoons pepper in a small bowl. Rub the spice mix all over the pork.
- Add the pork to an 8-quart slow cooker. Pour in the pickle brine and chicken broth and cook on high until the pork is very tender and easy to shred with two forks, 8 to 10 hours.
- Shred the pork and mix with the cooking liquid.
- Serve the pork on buns with coleslaw, baked beans, pickle slices and BBQ sauce!
- For an easy leftover idea, add the pork to tortilla chips, top with cheese and broil until bubbly. Top with your favorite nacho toppings like pickled jalapenos, sour cream, salsa, scallions and lime juice. Easy lunch or snack!
SESAME PORK MILANESE

- Pound the pork chops with a meat mallet or heavy skillet until about 1/4 inch thick; season with salt and pepper. Put the flour in a shallow baking dish. Whisk the eggs, 1/2 teaspoon sesame oil and a pinch each of salt and pepper in a second dish. Put the panko in a third dish. Working with 1 chop at a time, coat in the flour and then dip in the egg, shaking off any excess; firmly press both sides in the panko.
- Heat about 1/2 cup vegetable oil in a large nonstick skillet over medium-high heat until very hot (a breadcrumb should instantly sizzle in the oil). Working in batches, fry the chops, turning once, until browned and cooked through, 4 to 5 minutes. Transfer to a paper towel-lined plate to drain; season with salt. (Add more oil to the skillet between batches if needed to maintain a thin layer.)
- While the chops cook, whisk the vinegar, miso, 2 teaspoons vegetable oil and the remaining 1 1/2 teaspoons sesame oil in a large bowl until smooth. Add the greens, carrots and tomatoes and toss; season with salt and pepper. Serve with the pork chops.

ROSEMARY-MUSTARD PORK WITH PEACHES

- Preheat a grill to high. Pat the pork dry and season with salt and pepper. Lightly oil the grill, then grill the pork, turning, until marked, about 10 minutes.
- Meanwhile, combine the peaches, wine, brown sugar, and 1/2 cup water in a saucepan. Remove strips of zest from the lemon with a vegetable peeler and add to the pan; squeeze in the lemon juice. Cover and cook over medium-high heat until the peaches are just tender, 5 to 7 minutes. Transfer to a bowl with a slotted spoon.
- Add the mustard, 1/2 teaspoon salt and 1/4 teaspoon pepper to the juices in the pan. Transfer 1/3 cup of the liquid to a small bowl and stir in the chopped rosemary; brush onto the pork and continue grilling until a thermometer inserted into the thickest part registers 145 degrees F, 10 to 15 more minutes. Transfer to a cutting board.
- Meanwhile, simmer the remaining liquid in the saucepan until syrupy, about 3 minutes. Remove from the heat and season with salt. Return the peaches to the pan along with the rosemary sprigs. Slice the pork and serve with the peaches.

PORK GUISANTES (FILIPINO PORK AND PEAS)

- Heat oil in large skillet. Saute garlic, onions and pork until browned. Add soy sauce, patis, water and bay leaf. Bring to a boil, reduce heat and simmer until pork is tender, about 5-7 minutes. Add tomato paste, peas and pimientos. Simmer for 5 more minutes. Salt to taste.
OLD FASHIONED BAKED BEANS
Comfort food at its finest! This has been a staple in Nova Scotia homes for generations. Serve with brown bread and butter, and a good cup of tea! Prep time includes soaking the beans overnight.

Steps:
- Soak beans overnight, well covered with cold water.
- Pour off soaking water and pick over beans to remove any bad ones, or debris.
- Put beans in a pot.
- Cover with fresh cold water and add 1 tsp. baking soda.
- Bring to a boil and cook until skins of beans crack when you take one out on a spoon and blow on it.
- Cut onion in quarters and put in bottom of a bean crock or large casserole.
- Add the partially cooked beans.
- Put cut up salt pork on top.
- (Some people use the salt pork fat. I don't like fat, so I prefer to use the salt pork meat.) Combine brown sugar, molasses, mustard and salt with 1 1/2 cups boiling water.
- Pour over the beans.
- Add more boiling water, if needed, to come just to the top of the beans.
- Also, if needed during baking tme, add more boiling water.
- Bake, covered, at 300 degrees F for 6 hours, or until beans are tender.
EASY SIDE PORK
This is an easy way to make side pork in the oven. No mess, easy clean-up and the results are great. A teacher friend told me this is how her grandmother made it. Definately not for the calorie counters.

- Take an old cookie sheet. Spray it with Pam, In a bag, combine all ingredients except the side pork.
- Then add one strip at a time, coat evenly.
- Lay on baking sheet.
- Do this until they are all coated.
- About half way through the baking time, check and turn over with a tong.

BRAISED PORK SHANK

- For the brine: Bring the water to a simmer in a large non-reactive pot. Turn off the heat and add salt, sugar, coriander, peppercorns, rosemary, bay leaf and garlic and bring to a simmer. Whisk until the salt and sugar is dissolved, and then let it cool in the fridge or an ice bath until the brine hits a temperature of 35 degrees F.
- Add the shanks to the cooled brine and weigh down with a plate to ensure that the shanks are completely submerged. Refrigerate for 8 to 12 hours.
- After brining, remove the shanks from the brining liquid to a baking sheet lined with a clean kitchen towel to dry off a bit. Discard the brining liquid.
- For the braise: Preheat the oven to 300 degrees F.
- Heat a large Dutch oven or roasting pan over medium-high heat. Pour in enough oil so that it covers the bottom of the Dutch oven or roasting pan completely. Put some flour in a shallow dish. Add a heavy pinch of salt and a few grinds of pepper to the flour and whisk to combine. Dredge the shanks in the flour, shaking off the excess, and add them to the pan. In order to get a nice even golden-brown sear, you don't want to overcrowd the pan. (Do this step in two batches if necessary.) Brown the shanks on all sides, a few minutes per side, then remove to a plate while you sear the rest.
- Add the celery, onions, carrots, garlic, rosemary and thyme with a large pinch of salt. Sweat the vegetables until tender, about 5 minutes. Deglaze with the white wine and reduce by three-quarters. Add the apple cider and reduce by half. Add half the chicken stock and bring the braising liquid up to a simmer. Taste it for seasoning, adding additional salt and pepper if necessary. Place the shanks back into the pan; the liquid should go about halfway up the shanks. If it does not, add the rest of the liquid until it reaches the desired half. Put the pan in the oven and cook until the meat is tender, about 200 degrees F when checked with a meat thermometer, 4 to 5 hours.
- Remove the shanks from the oven and carefully transfer the shanks to another large pan. Then strain the braising liquid over the shanks. Cool them in the liquid overnight in the refrigerator.
- The next day, reheat the shanks in their liquid. Then remove them to a large serving platter. Spoon some of the braising liquid over the meat.
PORK AND BEAN CASSEROLE
Every once in a while I crave pork and beans and when I do I love to make this recipe. It has a slightly sweet filling and is topped with flaky biscuits and cheese for a nice flavor contrast making it almost like a pie.

- Brown ground beef; drain fat.
- Heat pork and beans in a medium saucepan. Add brown sugar and ketchup. (Start off with 1/2 tablespoon brown sugar and 1/2 tablespoon ketchup, gradually adding more until it suits your taste. I like mine a little on the sweet side.)
- Preheat oven to 375 degrees (the oven tempurature may vary depending on the brand of biscuits you use).
- Combine ground beef and pork and beans in a 2 1/2 quart casserole.
- Place biscuits on a baking sheet, baking them 4 minutes (just long enough so that the bottoms of the biscuits start to cook).
- Place the slightly baked biscuits on top of the pork and bean mixture. Sprinkle with cheese. Bake covered at 350 degrees for 20-30 minutes.

- Prepare white sauce by heating 1 tablespoon butter in a pan.
- Add flour. Fry lightly.
- Add milk.
- Stir till it becomes like sauce.
- Add chopped onion, tomato, potatoes, green chillies, boiled corn, half cheese, salt and pepper.
- Lightly toast the bread slices. Apply butter on one side only.
- Spread the white sauce and vegetable mixture on the buttered side.
- Put the remaining grated cheese on top.

- Cook the onion and celery in the oil for 10 minute.
- Stir in pork and cook until browned.
