A wonderful overnight marinade makes the pork so flavorful - serve with the delicious, creamy mustard sauce. A super dish for buffets and potlucks, as it doesn't need to be piping hot. I never cease to get many recipe requests for this one!

Steps:
- Combine wine, soy sauce, and brown sugar in a large resealable plastic bag. Place tenderloin in bag, and refrigerate overnight, or at least 8 hours.
- In a small bowl, combine mayonnaise, sour cream, mustard powder; mix well. Mix in minced chives if you wish. Chill until ready to serve.
- Preheat oven to 325 degrees F (165 degrees C). Place meat and marinade in a shallow baking dish, and roast for 1 hour, basting occasionally. Temperature of meat should register 145 degrees F (63 degrees C). Let rest for a few minutes, then cut into 1/2 inch thick slices. Serve with mustard sauce.

PORK LOIN SANDWICH

Steps:
- In a large bowl, dissolve the salt and sugar in 8 cups of cold water. Add the black peppercorns and squeeze in 2 of the halved lemons. Submerge the pork in the brine for 6 hours.
- Preheat the oven to 450 degrees F. Remove the pork from the brine and dry off. Heat a large oven-safe skillet (preferably cast iron) over medium-high heat. Add the oil and sear each side of the loin until golden, about 8 minutes total -- keep turning until it's golden all over. Add the sliced onions to the pan alongside the pork, and stir around to coat the onions in fat. Transfer the skillet to the oven and roast the pork until it reaches an internal temperature of 140 to 145 degrees F, about 30 minutes. For even cooking, be sure to stir the onions once or twice during roasting.
- For the sandwich build: Butter the pretzel bun halves and griddle them until golden brown. With a sharp knife, slice the loin into thin shavings. Spread some mustard on the bottom half of each bun, then top with some sliced pork. Sprinkle the pork with a little salt and squeeze the remaining lemon halves over the top. Top with the roasted onions and some Pickled Fresno Peppers. Eat while standing.
- Bring the vinegar, 1/4 cup water, the sugar, salt, bay leaf and garlic to a boil in a small saucepan and simmer for 5 minutes. Pour the hot liquid over the peppers in a bowl or container. Cool to room temperature and refrigerate.

- Place pork pieces between two sheets of wax paper and flatten with a meat mallet.
- Sprinkle each piece with lemon pepper.
- Heat butter in a skillet and cook pork for 3 to 4 minutes on each side.
- Place pork on heated platter and cover with alumunium foil; set aside.
- Add lemon juice, Worcestershire sauce and mustard in skillet.
- Cook until sauce is heated and pour over pork.
- Serve immediately.

OVEN-ROASTED PORK LOIN WITH CHANTERELLE-MUSTARD SAUCE

- Preheat the oven to 425 degrees F. Prepare the pork: Whisk the thyme, rosemary, garlic, mustard and vegetable oil until emulsified. Season with salt and pepper.
- Rub the pork liberally with the herb-mustard mixture, then place fat-side up on a rack set inside a heavy-bottomed roasting pan. Roast until the pork is caramelized and a thermometer inserted into the center registers 145 degrees F, 55 to 60 minutes. Transfer to a cutting board and let rest 10 minutes.
- Meanwhile, make the sauce: Pour off all but 2 tablespoons drippings from the roasting pan, then heat on the stove over medium heat. Add the mushrooms and cook until caramelized, 6 to 8 minutes. Add the shallots and cook until translucent, about 2 more minutes. Remove the pan from the heat and add the cognac, then return to the heat and scrape up any browned bits from the bottom of the pan with a wooden spoon. Simmer until almost all of the liquid has evaporated. Whisk in the stock, mustard and thyme. Bring to a boil and cook until reduced by half, 8 to 10 minutes. Add the cream and butter and gently boil until thickened. Add the parsley and salt and pepper to taste.
- Slice the pork into 12 pieces and drizzle with the sauce.
- Make the mayonnaise: Whisk the egg yolks, lemon juice and1 teaspoon salt in a bowl until frothy. Slowly drizzle in the vegetable oil, whisking constantly until completely emulsified.
- Make the potato salad: Cook the bacon in a skillet until crisp. Transfer to a paper towel-lined plate to cool, then chop into small bits.
- Slice the potatoes 1/4 inch thick; transfer to a pot, cover with water and lightly season with salt. Bring to a simmer over medium heat and cook until just fork tender, 8 to 10 minutes. Drain well.
- Combine the bacon, capers, vinegar and chives in a large bowl. Add 1/4 cup mayonnaise (reserve the rest for another use). Gently fold in the warm potatoes and season with salt and pepper.
- Cook the bacon in a Dutch oven over medium heat until just crisp. Add the onion and garlic and sweat until translucent, 8 to 10 minutes. Add the cabbage and stir to coat in the rendered bacon fat. Add the vinegar, reduce the heat to low and simmer until the liquid is reduced by three-quarters and the cabbage is tender, about 12 minutes. Add the orange juice and cook until reduced by half, about 5 more minutes.
- Remove the cabbage from the heat and fold in the apple. Season with salt and pepper. Serve hot.

- In a large skillet, saute carrot and onion in butter for 2 minutes. Add the pork; brown on all sides. Stir in the broth, lemon juice, lemon zest, thyme, pepper and bay leaf. Bring to a boil. Reduce heat; cover and simmer for 16-18 minutes or until a thermometer reads 160° and juices run clear. Remove meat and keep warm., Strain pan juices, discarding vegetables and bay leaf. - Preheat oven to 350 degrees F.
- Generously season tenderloin with salt and pepper. Set aside. In a small mixing bowl, whisk together mustard, brown sugar and thyme.
- Place a large sheet of Reynolds Wrap® Aluminum Foil onto a baking sheet. Place onion slices in the center of the foil, in a single layer. Place pork over the onions and brush with 1/2 of the mustard mixture.

- Heat oil in a large skillet over high heat. Season pork with salt and pepper; transfer to skillet and cook, turning, until browned all over, 5 to 10 minutes. - Wash Pork thoroughly under cold running water.
- Pat dry with clean cloth or Paper towels.
- Starting from top of Pork make 6-8 deep slivers along top of tenderloin towards center of Pork. You will stuff the garlic cloves in these slivers (Do not make cuts all the way down to bottom for Pork_.
- Wash Garlic under warm water for easy peeling, and stuff the garlic in each Sliver cut you made. (You can make as many cuts as you like for stuffing).
- Push ends of Pork together to conceal cuts.
- Rub Olive oil on entire pork tenderloin top and bottom. This will seal pores in the meat to lock in juices, also helps for the seasonings to adhere to the meat.
- Sprinkle Sea salt on Pork,Thyme and Sage on the Top and Sides of Pork (Set aside for now).
- Cut Onions and bell-pepper in slivers (Not Diced) and lay on the bottom of Baking Dish (Glass Dish Preferably) Make a bed because you want to keep them directly under the meat. This is used for the juices that run off to collect in the dish to make a sauce if you prefer. I myself do not like let my meat touch the bottom of dish as this will make your pork cook to fast from the bottom resulting in overcooking the Pork. Pork cooks just a little slower then chicken. Just keep that thought in mind when allowing cooking time.
- Place tenderloin in Dish on top of you onion and pepper bed.
- Now Sprinkle peppercorn on top of meat. Cut carrots/Celery and place on all sides of Meat. (Or what ever Vegetables you Perfer).
- Drizzle half the honey on top of the pork tenderloi,n the other half you will use when Pork is almost done or after its done your choice.
- Now Generously sprinkle the McCormick Smokehouse Maple seasoning on top and sides of meat, you can cuff you hands as you sprinlke the sides to catch excess seasonings and pat the sides with the excess seasonings that fall. (Completely cover the top and sides of meat the more the better).
- Sprinkle the rosemary on tip and sides as well.(If using fresh rosemary you can lay leafs on top if using day spread evenly on top and sides of meat).
- Pour Chicken broth in the Dish from one of the corners of dish( Don't pour on top of Meat). Since the meat is on a bed of vegetables the broth will flow under the meat.
- Cover the Dish with Aluminum foil foil (Shinny side up). Try to seal the edges of the dish by using your index finger and thumb and go around the rim of the dish.
- Place in a 325 degree oven and bake for 30 minutes. Remove foil and drizzle the rest of the honey you used on top eariler and bake an additional 15-25 minutes with out foil on top for excellent browning.
- Cut into 1/4 inch slices and add you favorite sauce on top of slices. I took the drippings from the meat and some maraschino cherry's/Cinnamon and some fresh mint and cornstarch and made a Glaze for the topping, If you want the sauce ingredients just let me know.
