BIFANA (PORTUGUESE PORK CUTLETS)

My mom used to make these Portuguese sandwiches all the time. So yummy on fresh Portuguese buns and sauteed onions

Bifana (Portuguese Pork Cutlets) image

Steps:

  • 1. Place pork cutlets in a large heavy plastic ziptop bag and place in a large bowl.
  • 2. In a mixing bowl, combine one cup of the wine, vinegar, garlic, bay leaves, 1 tbsp pimento paste (1/2 tbsp if using hot), 1/4 tsp paprika and piri-piri sauce. Pour this mixture over pork, making sure all meat is covered and seal bag.
  • 3. Refrigerate for severl hours or overnight, turning bag frequently.
  • 4. Bring meat to room temperature before cooking; to cook, heat skillet over med-high heat and melt lard, cook pork in batches. When pork is sauteed, drain off the fat and add remaining wine (1/4 cup), remaining pimento paste (1 tbsp, 1/2 tbsp if using hot), remaining paprika (1/4 tsp) to the skillet, as well as salt and pepper to taste.
  • 5. Bring to a boil, stirring and scrapping up any brown bits. Return pork to the skillet, reduce heat to low and cook for a couple minutes.
  • 6. Serve pork on fresh Portuguese buns (Papo Secos) topped with sauteed onions and about a tsp of cooking sauce.

1 1/2 lb boneless pork cutlets, cut very thin
1 1/4 c dry white wine, divided
1/4 c white wine vinegar
3 clove garlic, minced
2 bay leaves
2 Tbsp pimento paste, divided (available at portuguese food stores) *only 1 tbsp if using the "hot"
1/2 tsp spanish paprikka
1/4 tsp piri-piri sauce (or tabasco if no piri-piri)
2 Tbsp lard

This is a simple recipe I learned to make for my husband. You can add a bay leaf to the marinating process but I usually forget to add it and it still tastes yummy!

Portuguese Pork Loin Sandwich (Bifes de porco) image

Steps:

  • 1. In a pyrex casserole, sprinkle half of the chopped garlic, pepper flakes, salt and a dash of vinegar.
  • 2. Layer with the fillets and alternate the ingredients between layers. Cover and place in the fridge over night or in an hour if to be made on same day.
  • 3. Heat up the oil in a heavy pan at medium heat. Lower if the first fillet starts splashing too much.
  • 4. Preheat the oven at 350 degrees.
  • 5. Place as many fillets in the pan and let cook about 4 minutes on each side or until lightly browned.
  • 6. When the first batch of fillets are cooked place in a casserole and put in the warm oven.
  • 7. Once all fillets are fried, place the sliced onion in the pan with the same oil used for the fillets on medium heat.
  • 8. Once onions are browned, add the tomato paste and stir until the oil has a red tinge. Pour about 2 tablespoons of red wine vinegar and let it burn off for about 2 minutes. Take off heat.
  • 9. Remove the fillets from the oven and pour the onion mixture over the fillets. You may put in the oven on BROIL for 2 minutes to caramelize the onion.
  • 10. Serve the fillets in a toasted and crusty bun.

1 1/2 kg pork loin fillets - thinly sliced by your butcher
2 large white onions, sliced in rings
4 clove garlic, finely chopped/crushed
1 Tbsp crushed chilis
1 Tbsp course sea salt
2 Tbsp tomato paste
1/2 c red wine vinegar + 2 tablespoons for cooking process
1/2 c sunflower oil (or vegatable oil will do)

Portuguese Pork Bifanas (Sandwiches) image

Steps:

  • Pound the pork cutlets until they are very thin (1/8"), being careful not to tear the meat.
  • Stir the wine, garlic, siracha, bay leaves, vinegar, paprika, and salt. Add the pork to a shallow pan and pour the marinade over top, and submerge the meat. Refrigerate for a minimum of 1-1/2 hours, tossing the meat several times.
  • Heat a large skillet until hot, then add the lard. Fry the cutlets (reserve the marinade) quickly just until cooked through, about a minute per side, adding more lard as needed. Transfer the cooked meat to plate, and set aside.
  • Slice the onions into 1/2 inch slices. Separate the rings then add them to the skillet and saute until softened, then add the peppers and saute several minutes. Discard the bay leaves, then pour the reserved marinade into the pan with the onions & peppers and heat for 5 minutes. Add the pork back into the skillet, reduce the heat to low, and simmer for 5 minutes.
  • Slice the buns and spoon some of the sauce & vegetables over half of each bun, then pile with meat.

  • Let’s start by tenderizing our pork cutlets. For that you can use a meat tenderizer or even a rolling pin to gently pound the pork cutlets one by one, both sides.
  • Place the cutlets in a bowl. Season it with salt and pepper and then add the remaining marinade ingredients rubbing it into the meat. Make sure that everything is in contact with the pork. Cover the bowl with cling film and put it in the fridge for at least 4 hours or ideally overnight.
  • Put a frying pan over medium heat and add the fat: lard, butter and olive oil. Once the mixture is hot, gently place in our pork meat, keeping the marinade aside. You may be thinking we are using too much fat but don’t worry, the idea here is to slowly ‘confit’ the pork instead of frying it like you would normally do with a steak.
  • Once the oils start bubbling (about 5-8 minutes) flip the pork and add to the frying pan its marinade, including the garlic.
