This is a recipe that my Grandmother would always make using leftover ham. Its great for small or large families.

Steps:
- HEAT oven to 350 degrees.
- COOK onion and green pepper in margarine until tender.
- STIR in flour and pepper.
- ADD milk and bring to a boil, stirring constantly.
- REDUCE heat and add cheese and mayo; stir until cheese melts.
- ADD potatoes and ham; put into casserole dish.
- BAKE for 30 minutes.

HAM AND POTATO CASSEROLE
My wife had a craving for ham and potatoes and we had several items we wanted to use up. We didn't cook the celery with the onion and green pepper to add some additional crunch, but they could be cooked together. We used reduced-fat ingredients throughout and had great success. We found that there were no spices needed as the vegetables were a great flavor combination! This recipe ended up being a winner with everyone in the family!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Spray a skillet with cooking spray. Cook and stir onion and green pepper over medium heat until onions are translucent, 5 to 7 minutes.
- Spray a 9x13-inch baking dish with cooking spray.
- Combine cooked onion, green pepper, potatoes, broccoli, ham, mushrooms, and celery in the prepared baking dish, stirring to distribute the vegetables and ham.
- Stir cream of mushroom soup, sour cream, and cream cheese together in the same skillet used for onion and green pepper; mix until combined and smooth.
- Stir soup mixture into vegetable and ham mixture until combined. Mix in the Monterey Jack cheese.
- Bake in preheated oven until vegetables are tender and sauce is bubbling, about 35 minutes.
- Sprinkle with cracker crumbs and return to oven until topping is lightly browned, about 5 minutes.

HAM AND POTATO CASSEROLE
I got this recipe from my MIL- it's easy, filling and delicious- great for cool nights. Can be made with leftover ham or with a thick chunk of deli ham. Feel free to experiment with the amount of cheese (I often add more) and the type- I've been meaning to try it with swiss.

- Place the ham and potatoes into a 1.5 qt baking dish. Set aside.
- Melt 3 tbs butter in pan, add onion and cook till clear.
- Blend in flour and milk and stir until thickened.

Steps:
- Preheat oven to 350 degrees.
- Spray 1 1/2 quart casserole dish with non-stick spray or lightly butter.
- Arrange half of potatoes, green pepper and onion, and ham in dish.
- Sprinkle with freshly ground black pepper.
- Repeat with remaining half potatoes, peppers, onions and ham.
- Mix soup and milk in seperate container until fairly smooth.
- Pour over casserole.
- Gently move ingredients around so mixture can seep inches.
- Cover and cook for one hour.
- Heat the 1 tablespoons butter in saucepan or microwave until just melted.
- Add bread crumbs and toss to coat.
- Remove lid from casserole and sprinkle with crumbs.
- Continue to cook uncovered for 15 minutes.
- Remove from oven and allow to stand for 10 minutes.

- Cook potatoes whole in boiling, salted water until tender. Drain. Slice about 1/4 inch thick.
- Preheat oven to 350°F Combine sour cream, potato soup, salt and pepper.

- Preheat the oven to 375 degrees F.
- Add the butter and onions to a large skillet over medium heat and saute until starting to soften, 3 to 4 minutes. Sprinkle the flour over the onions and whisk them together. Continue cooking the onion/flour mixture until golden brown, about 2 minutes. Stir in the half-and-half and milk and whisk around, allowing the mixture to thicken; this will take 3 to 4 minutes. Add some pepper, stir the sauce, reduce the heat and keep warm.
- Slice the potatoes really thin using a mandolin or a really sharp knife, the thinner the better. Generously butter a 2-quart baking dish, then add half the sliced potatoes and half the diced ham. Sprinkle on half the cheese then pour on half the sauce from the skillet. Repeat with the rest of the ingredients, ending with a layer of cheese and sauce. Sprinkle extra pepper on top.
- Cover the dish with foil and bake it for 40 minutes, then remove the foil and bake until the cheese is golden brown and the sauce is bubbling, an additional 20 to 30 minutes. Sprinkle with chopped parsley if desired and serve it up.

- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.

Picked this up some years back at the state fair from the California Sweet Potato Council. This dish is very rich and filling and was the only way DS would eat sweet potatoes when he was young.

- Wash sweet potatoes. Cook unpeeled sweet potatoes, covered, in small amount of boiling salt water untill tender, about 20 to 30 minutes. Cool. Peel and slice 1/4 inch thick; set aside.
- Melt butter in medium saucepan. Add onion, cook until tender. Remove from heat; stir in flour, salt, basil, mustard and pepper. Cook over low heat until bubbly, 2 to 3 minutes. Remove from heat; stir in milk all at once. Cook over medium heat, stirring constantly, until mixture comes to a boil. Boil and stir one minute. Remove from heat. Stir in 3/4 cup of cheese and the ham.
