POTATO FETA FRITTERS

Steps:
- In a medium bowl, place the potato, feta, egg, green onions, dill lemon juice, zest, salt and pepper.
- Mix until well combined.
- Cover and refrigerate for 1-2 hours until firm.
- Using hands, roll the mixture into golf-ball-size fritters, and flatten slightly.
- Dredge lightly in flour, using a small sieve.
- Heat olive oil in a large frying pan.
- Cook fritters in batches for about 3-5 minutes until golden brown on both sides.
- Drain on paper towel and serve immediately.
- Garnish with extra dill and lemon.

FETA ROASTED POTATOES
This is a Greek-ish, lemony take on roasted potatoes that are simple to make and fancy enough for company!

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Combine olive oil, balsamic vinegar, lemon juice, Greek seasoning, salt, pepper, garlic powder, oregano, and thyme in a large plastic bag or bowl. Add potatoes and shake until potatoes are coated.
- Place into a baking dish that's large enough to accommodate potatoes in a single, snug layer.
- Bake in the preheated oven for 40 minutes, stirring every 10 minutes. Top with feta cheese. Return to the oven and bake for another 5 minutes. Serve.

- Peel and grate the carrots, potatoes, onion and sweet potatoes. Put in a colander over the sink with a big pinch of salt to drain for 30 minutes.
- In a large bowl, combine the eggs, feta, flour, coriander and cumin seeds, then beat with a fork until mixed.
- Squeeze as much liquid from the veg as you can, pressing down hard into the colander for 1-2 minutes, then add to the egg mixture. Stir to combine and season well. Heat the oven to 150°C/fan130°C/gas 2.
- Heat the oil in a wok or saucepan to 180°C or until a cube of bread sizzles. Put a small handful of the mix in a slotted spoon and lower into the oil. Cook 2-3 at a time: fry for 1-2 minutes, then turn and repeat until golden. Put on a plate and keep warm in a low oven.
