POTATO PUFF GRATIN

- Bake half a 28-ounce bag frozen potato puffs in a 2-quart baking dish at 425˚ until crisp, 30 minutes. Meanwhile, cook 1 tablespoon each butter and flour in a small saucepan over medium heat, whisking, until melted. Whisk in 1 1/4 cups milk, 1 small grated garlic clove, 1/2 teaspoon chopped thyme, 1/4 teaspoon kosher salt and a pinch of cayenne. Simmer until thickened, 10 minutes. Off the heat, stir in 1/2 cup grated gruyère. Pour over the potato puffs. Broil until browned, 3 to 4 minutes. Top with chopped chives.

Steps:
- Spread 1 teaspoon peanut butter on a cracker and top with another cracker.
- Place chocolate in top of double boiler; stir frequently over medium heat until melted.
- Place cracker sandwiches onto a fork and dip into the chocolate. Drain excess chocolate and cool on waxed paper. Store in refrigerator or cover and freeze until ready to serve.

POTATO PUCKS
Crispy on the outside, tender and moist inside, and the preparation and appearance are conversation starters! Can be prepped ahead, so these are great for entertaining (but they are one of my family's favorites for any dinner). Recipe is an amalgam of Crash Hot Potatoes from Jill Dupleix and Smashed Potatoes published around Easter in the Seattle Times.

- Leave potatoes whole. Place in steamer basket over water in a dutch oven. Cover and bring to a boil. Steam over low boil for about 25 minutes, or until just tender.
- Remove potatoes from steamer and let cool. If doing ahead, cover and refrigerate at this point.
- Preheat oven to 425°F
- Put potatoes in large bowl and toss with seasonings and olive oil. transfer to a baking sheet (I use a jelly roll pan). Place a piece of plastic wrap loosely over potatoes. Using a small heavy saucepan, gently smash each potato under the plastic wrap to flatten to about 1/2" thick. Remove plastic wrap and arrange potatoes uniformly in the pan. Scrape any remaining seasoned oil out of the bowl and drizzle over the potatoes. Sprinkle lightly with additional kosher salt.
- Roast in oven for 20-25 minutes. If using parmesan, sprinkle on for last 5 minutes of baking.

- Divide the potatoes, carrots and onion equally among four pieces of heavy-duty aluminum foil (about 18 in. x 12 in.). Top with butter; sprinkle with salt if desired and pepper. Bring opposite short ends of foil together over vegetables and fold down several times. Fold unsealed ends toward vegetables and crimp tightly. , Grill, covered, over medium heat for 10-15 minutes on each side or until potatoes are tender. Remove from grill. Open foil and sprinkle with cheese; reseal Let stand for 5 minutes or until the cheese melts.

HOCKEY PUCK POTATOES
Hockey puck potatoes are delicious roasted potatoes that resemble hockey pucks in appearance, hence the name. Our family loves them! Well I had been giving my FIL credit for these, however I just found out that my DH (George) was the originator, so now I'm giving him credit. My contribution to the recipe was add the rosemary and basil. Please enjoy!

Steps:
- Preheat oven to 350°F.
- Wash potatoes and pat dry.
- Use roasting pan and melt 1/4 cup of butter or margarine in oven.
- When melted remove from oven.
- Cut potatoes in half or thirds depending on size of potato.
- Spread melted butter around on pan and sprinkle salt all over pan.
- Place potatoes with the flat side down on to pan.
- Melt remaining butter. (I use the microwave).
- Drizzle remaining butter or margarine over potato halves.
- Sprinkle rosemary & basil over potatoes.
- Place in oven for 1.5 hours or until potatoes are tender.
- Use a metal spatula to remove the potatoes from the pan!
- Enjoy.

- Preheat oven to 425°. Place potatoes in a large pot and pour in water to cover by 2". Season water generously with salt and bring to a simmer over medium-high heat. Reduce heat and simmer gently until potatoes are tender on the outside but still very firm in the center, 8–10 minutes.
- Pour off all of the water in pot, holding potatoes back (make sure there's no liquid left!). Let potatoes sit, uncovered, for a few minutes to steam off any excess liquid they've absorbed. Toss potatoes just enough to rough up their outsides and give them a floury starchy coating (do not toss so vigorously that they fall apart); season with salt.
- Carefully remove pan from oven; add potatoes, turning each one to coat and moisten exterior. Make sure they're in a single layer and leave a bit of space between them. Return pan to oven and roast potatoes, turning every 10 minutes, for 30 minutes (if they aren't browning after 15 minutes, increase oven temperature to 450°).
