ICEBOX CAKE

Steps:

  • In the bowl of an electric mixer using a whisk attachment, whisk the heavy cream and powdered sugar until stiff.
  • Crush one-third of the wafers by hand or with a rolling pin inside a resalable plastic bag until they become coarse crumbs. Set aside.
  • In a round 9-inch springform pan, layer in one-third of the whipped cream, smoothing evenly with a spatula. Then layer half of the remaining flat whole wafers close to each other, then one-third more of the whipped cream, then the remaining whole wafers and finally top with the rest of the whipped cream. Garnish the top of cake with the crushed wafers.
  • Cover and refrigerate for at least 6 hours.
  • Run a paring knife around the springform pan and release the wall of the pan from around the cake. Leave the cake on the bottom of the pan and transfer to a serving dish or cake stand, then slice and serve.

  • In bowl, cream butter with sugar until light; then add vanilla and egg, mixing well.
  • In a small bowl, combine flour, baking powder and salt; stir this mixture into the butter mixture.
  • Stir in cherries and nuts.
  • Shape into a 2-inch diameter roll; wrap with plastic wrap or wax paper and chill thoroughly, overnight if you wish.
  • When ready to bake, preheat oven to 400F degrees.
  • Cut chilled cookie dough into 1/4-inch slices and place on a lightly-greased cookie sheet, leaving a little bit of room between each cookie.
  • Bake for 5 to 8 minutes, or until almost firm.
  • Remove to a rack to cool.

Steps:

  • Melt the chocolate in the top of a double boiler over barely simmering water; set aside to cool slightly.
  • In a small bowl, whisk together the flour, salt, and baking powder; set aside.
  • In a medium bowl, cream the butter and sugar together.
  • Mix in the egg and vanilla. On low speed, slowly add the flour mixture to the butter mixture and combine well.
  • Place one half of the dough on a sheet of waxed paper.
  • Stir the cooled melted chocolate into the remaining half of the dough.
  • Put the chocolate dough onto the waxed paper alongside the vanilla dough and press the two together to form a ball.
  • Knead just long enough to achieve a marbleized effect.
  • Shape the dough into a 1 by 12-inch log.
  • Wrap tightly in waxed paper or plastic wrap and twist the ends closed.
  • Chill for 2 to 3 hours or until firm.
  • Preheat the oven to 375°F
  • Lightly grease the baking sheets.
  • Cut the chilled dough into 1/4-inch-thick slices and place 1 inch apart on the prepared baking sheets.
  • Bake for about 8 to 9 minutes, or until the cookies are set but not browned.
  • Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

Steps:

  • Beat butter at medium speed of an electric mixer until creamy. Gradually add 1 cup sugar, beating well. Add egg and vanilla, beating well.
  • Combine flour, baking powder, and salt; add to butter mixture, beating well. Pat cherries between paper towels to remove excess moisture. Stir cherries and pecans into dough; cover and chill 2 hours.

  • Beat butter and both sugars with an electric mixer until fluffy.
  • Add eggs, one at a time, and beat well after each addition.
  • Add grated peel and lemon juice and bleat until well blended.

  • Divide into 3 equal pieces and roll each piece, on wax or parchment paper, into a 12 inch log.
