POTATO SALAD SEASONING
Originally developed as a substitute for a commercial potato salad seasoning, this is great on salads as well as beef roast, among other things. The beauty of making your own seasonings is that you can adjust the ingredients to suit your taste.

- Creole Potato Salad. Too many Creole potato salad recipes lack seasonings that are representative of Creole cooking. To avoid that, we looked to rémoulade—the spicy and assertive version served throughout Louisiana—for our sauce inspiration.
- Texas Potato Salad. Crank up the flavor of classic potato salad with yellow mustard and chopped jalapeños, and you've got “Texas potato salad.” The Yukon Gold potatoes in this dish have a rich, earthy flavor that stands up to the mustard and other bold ingredients in this dish.
- Smashed Potato Salad. Close your eyes and imagine creamy mashed potatoes crossed with tangy, chunky potato salad. If you’re from certain corners of the South, where mashing (or smashing) the potatoes in potato salad is business as usual, this isn’t anything new to you.
- Chipotle Potato Salad. Many potato salads fall victim to one of two cooking crimes: under seasoning or improperly cooked potatoes. We tackle both of those issues with our recipe for potato salad by using Yukon Golds and ingredients that give off the perfect balance of smoky and spicy flavors.
- Tuscan Potato Salad. Many American recipes for Tuscan potato salad start with bottled Italian salad dressing, which makes the salad taste bitter due to too much vinegar.
- All-American Potato Salad. Although this “traditional style” recipe is easy to execute, we’ve eaten sloppy, boring potato salads and came to the realization that there was room for improvement.
- Grilled Sweet Potato Salad. Summer is the season of potato salads and grilling. We decided to combine these two traditions, with a little twist—sweet potatoes.
- Dilly Garden Potato Salad. Extra-virgin olive oil, white wine vinegar, and minced shallots produce the winning combination for this summertime salad. Test Kitchen Tip: Dress the green beans and potatoes while they are still warm; they'll easily soak up the flavorful vinaigrette.
- Thousand Island Potato Salad. We doctor up this potato salad with some ketchup and brown sugar as our ode to Thousand Island dressing. Don’t forget to refrigerate this salad for at least 30 minutes before serving to help meld the flavors.
- Green Goddess Potato Salad. With a little garlic and a generous helping of herbs like chives, parsley, and tarragon, we bring this potato salad into green goddess territory.

- Picking the right potatoes. The potatoes you use will make all the difference in the texture of your salad. Some cooks prefer waxy potatoes such as Yellow Finn, Yukon Gold, and red potatoes because they hold their shape when they're cooked and keep their firm texture in the salad when they're chopped up and tossed with dressing.
- Prepping and cooking potatoes. To peel or not to peel? If you'd like to add a little extra color and texture to your salad, leave the skins on. Just be sure to scrub them thoroughly with a vegetable brush before you cook them.
- Adding ingredients. Some people like to let the potatoes take the lead with just a few additions for flavor and texture, while others pack as many extras as they can into the mix.
- Choosing a dressing. Are you a creamy potato salad person? Or do you prefer tangy vinegar-based dressings? Time to choose! Creamy potato salads almost always have a mayonnaise-based dressing, but can also include sour cream, yogurt, and creamy-style salad dressings.
- Mixing it all ip. Once you've chosen your dressing ingredients, mix well and take a taste. Need more salt? Vinegar? Spice? Adjust seasonings before you start coating the potatoes with the dressing; the less you stir, the prettier your salad will look.
