CARROTS & POTATOES ROASTED W/ ONION AND GARLIC
I came up with this recipe after having done a search on Zaar and came up empty handed. It is a simple recipe and turned out exactly as I had hoped. I hope it will work for you as well as it did for me!

Steps:
- Preheat oven to 425 degrees.
- Combine carrots, potatoes, onion and garlic with melted butter in 8x8" square glass pan.
- Season generously with salt and pepper, toss.
- Cover pan with aluminum foil and bake for 45 minutes.
- Uncover, stir and continue baking for another 30 minutes (or until browned to your satisfaction), stirring occasionally to lift bottom portions to top to allow to brown and crisp.

- In a large bowl mix together potatoes, spring onions, red onion, parsley and cheese.
- Add pepper and taste, only add a little salt if required, the cheese adds salt.
- Add mayonnaise and mix thoroughly.
- Spoon into serving dish; sprinkle with cayenne and garnish with parsley sprigs.
- Refrigerate for at least an hour.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Line a sheet pan with aluminum foil.
- Shape the ground beef into patties and place in pan. Layer the vegetables on top of the beef patties, starting with the potatoes, then carrots and finally onions. Season with salt, pepper and garlic salt to taste.
- Cover with aluminum foil and seal edges. Bake in the preheated oven until beef is no longer pink and vegetables are tender, about 1 hour.

- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and let cool enough to handle, about 10 minutes. Dice into 3/4-inch pieces.
- Cut ginger into 4 pieces and place in a food processor. Add green chile and 1/4 cup water; process into a grainy paste.
- Heat oil in a pot over medium heat. Sprinkle in asafoetida, then mustard seeds. When mustard seeds pop, put in onions, reduce heat to medium-low, and saute until translucent, 5 to 7 minutes. Add paste from blender and turmeric; cook for 1 minute.
- Add diced potatoes, remaining 1 cup water, and salt. Reduce heat to low, cover, and cook for 5 minutes. Lift cover and break potatoes into 1/2-inch cubes with a slotted spoon. Cover and cook until sauce thickens, about 3 minutes more.

POTATO AND CARROT DOSA
This is from the Weekend magazine. Did you know that there is a dosa known as "Kal dosa" that is cooked only on one side with a hood placed over it to obtain the steaming effect. In olden days, this particular crepe(dosa) was made with very little oil mainly for taking as a packed snack for journeys. Kal dosa is softer and plumper quite unlike the so-called paper-thin commercial variey.

CARROT AND POTATO AU GRATIN

- In 3-quart saucepan, melt margarine and olive oil over low heat. Remove 2 1/2 tablespoons and mix with KELLOGG'S CORN FLAKES cereal.
- Set aside for topping. Add onion and garlic to remaining margarine in pan.
- Cook, stirring frequently, until onion is softened but not browned.
- Stir flour, salt and pepper into onion mixture. Add milk and half-and-half, stirring until smooth. Increase heat to medium and cook until mixture boils and thickens, stirring constantly.
- Add cheese and continue cooking, stirring 1 minute longer. Remove from heat.
- Stir in carrots, potatoes and parsley flakes.
- Spread mixture into 10 x 6 x 2-inch (1 1/2-qt.) glass baking dish coated with cooking spray.
- Sprinkle cereal mixture evenly over top.
- Bake at 350° F about 20 minutes or until thoroughly heated. Remove from oven. Let stand about 5 minutes before serving.
- Serve hot.

- Heat the oil in a large skillet over medium-high heat. Add the onion, and season with cumin, turmeric, coriander, chili powder and salt. Cook and stir until onion is browned.

- Peel the rutabaga and cut it in thin slices.
- Put it in a large pot with plenty of water and bring it to a boil.
- Meanwhile, peel the carrots and cut them in thick slices.
- When the rutabaga has been cooking for about 10 minutes, add the carrots.
- Meanwhile, peel the potatoes, and cut them into large chunks.
- When the rutabaga has been cooking for 20 minutes (total) add the potatoes, and cook for about another 20 minutes.
- When all the vegetables are tender, drain them and mash them with the butter, salt and pepper.
- These are delicious mashed somewhat coarsely and served as-is.
- You can also purée them very well, beat in the egg, and turn them into a buttered casserole dish, then bake them until lightly toasted on top.

- Melt butter in heavy large pot over medium-high heat. Add onions and sauté until golden, about 15 minutes. Add carrots and parsnips and cook 10 minutes. Add 2 cans of broth, potatoes, parsley and thyme. Cover and simmer until potatoes are tender, stirring occasionally, about 30 minutes.
- Puree half of soup in processor. Mix puree into remaining soup in pot. Stir in half and half and Sherry. Season to taste with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate.)
- Bring soup to simmer, thinning with additional broth, if desired. Ladle into bowls and serve.
