This recipe was an accident. I was experimenting with flavors and wasn't expecting much out of it, but the apple cider addition yielded some of the best pork I've ever tasted (and the boyfriend agreed).

Steps:
- Preheat the oven to 300 degrees F (150 degrees C).
- Combine brown sugar, garlic powder, 1 teaspoon sage, rosemary, salt, and pepper in a bowl. Dredge pork chops in seasoning mixture until coated thoroughly.
- Heat olive oil and butter in an oven-safe skillet over medium heat until butter is frothy, 1 to 2 minutes. Brown pork chops in the hot skillet on each side, 7 to 10 minutes total. Add apple cider, remaining sage, and drizzle in honey. Reduce heat to low and simmer for 5 minutes.
- Transfer the skillet to the oven and bake until pork chops are no longer pink in the centers, 10 to 15 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).
- Remove the skillet from the oven and plate pork chops with sauce.

These pork chops are a fantastic way to take advantage of fall flavors. If you don't have pumpkin pie spice, you can substitute 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, and 1/4 teaspoon ground ginger. Or, you can just skip the spice mixture and add a second cinnamon stick.

- Set the Instant Pot to "sauté, medium heat." Once it reads "hot," add the oil and pork chops, sprinkle lightly with salt and pepper, and brown for 5 minutes, turning them over halfway through.
- Transfer the pork chops to a plate. Add the apples, cinnamon stick, sage, pumpkin pie spice, applesauce, and water to the pot. Mix to combine and return the pork chops to the pot.
- Cover and cook on high pressure for 10 minutes. Let the pressure release naturally for 10 minutes, then quick-release the remaining pressure.
- Remove the pork chops and half the apples to a plate to rest. Set the pot to "sauté, medium heat" and cook to boil down the sauce until thickened, about 10 minutes. Pour the sauce over the pork chops and apples and serve.

- Sprinkle chops with seasoned salt on both sides and let rest for 3 or 4 minutes.
- Heat the oil in the bottom of the pressure cooker over medium heat. Brown chops on both sides and then remove a plate.
- Place basket in pressure cooker. Press one or two dried apple slices on each chop and sprinkle each with a bit of the Aspen spice mix.
- Fit the chops into the basket, standing on edge, sandwiching the apple slice between the chops.
- Pour the cider over the chops and secure the pressure cooker lid onto the pot.
- Bring to high pressure (15 lbs) over medium heat, adjusting the heat to maintain the pressure (according to the cooker's manufacturer's instructions) and cook at that pressure for 17 minutes.
- Remove cooker from heat and let pressure drop naturally, which should take about 10 minutes.
- Remove chops carefully to serving platter and cover with foil to keep warm.
- Meanwhile, melt better in a 1-cup glass measure in the microwave (30 seconds on high) Stir in flour with a whisk and microwave 40 more seconds, whisking at the end of the time.
- Add a bit of the pot liquid to the roux in the glass measure and whisk smooth. Then add the roux to the pot and heat to boil, whisking until slightly thickened.
- Pour sauce over chops and serve.

APPLE CIDER PORK CHOPS WITH CARAMELIZED APPLES
From GoodLife Eats. Nice take on the apple & pork chop combination for autumn. It's both sweet and savory at the same time. We were honestly a bit worried the first time about the combination of garlic and sage with the sweetness of the apples and cider, but it works well. Our kids preferred to eat the apples separate from the meat as dessert and actually ate so many of them that doubling the apple portion would have been appropriate for us. Recipe calls for 2 Land O Lakes Saute Express Garlic Herb cubes. We did happen to have some of those on hand but if they weren't available, an equal blend of butter & olive oil, plus garlic and herbs to your preference would be a good substitution.

- Melt Saute Express cubes (or combination of butter, olive oil, and herbs) in a large pan. Cast iron skillet works great.
- Pat pork chops dry and then place in pan, browning for ~5 minutes per side.
- In a separate skillet, melt 3 tbsp butter over medium heat. Add brown sugar and cook about 1 minute until melted. Add apples and and saute for 10-15 minutes until apples are nicely browned.
- Add apple cider to the pork chops and cook over medium heat until liquid reduced by half (5-10 minutes). Flip chops once during this step.
- Add the cream to the pork chops and sprinkle with salt and pepper. Bring to a boil, then reduce heat and simmer for 3-5 minutes until sauce has thickened to desired consistency and pork is adequately cooked.
- Sprinkle sage over the pork chops.
- Serve immediately, spooning a little apple over each chop and drizzling with sauce.

- Combine pork chops, salt, thyme, rosemary, and pepper in a resealable plastic bag. Seal and shake until pork chops are coated with seasoning.
- Turn on a multi-functional pressure cooker (such as Fagor®) and select Brown function. Pour in oil. Add pork, with seasoning, and cook until browned, about 5 minutes per side. Transfer to a plate.
- Melt 1 tablespoon butter in the pot. Cook onions until soft and browned, 8 to 10 minutes. Add potatoes and garlic. Balance pork chops over potatoes.

- Fry bacon in small saucepan over medium heat, stirring occasionally, until lightly browned, 8 to 10 minutes.
- Using slotted spoon, transfer bacon to paper towel-lined plate, leaving fat in saucepan (you should have 2 tablespoons bacon fat; if not, supplement with vegetable oil).
