ELECTRIC PRESSURE COOKER FRENCH ONION SOUP

Steps:
- Melt butter in electric pressure cooker using SAUTÉ setting. Add onions and baking soda; cook 3 min. or until slightly softened, stirring frequently. Stir in Worcestershire sauce and thyme. Close and lock lid. Turn Pressure Release Valve to Sealing position.
- Cook 20 min. using HIGH PRESSURE COOK setting. When timer goes off, use Quick Pressure Release to carefully release pressure before opening lid. Add broth; cook 5 min. using SAUTÉ setting on medium heat.
- Meanwhile, heat broiler. Place bread slices in single layer on baking sheet; top evenly with 1/4 cup cheese. Broil, 6 inches from heat; 3 to 5 min. or until cheese is lightly browned.
- Turn off pressure cooker. Stir vinegar and remaining cheese into soup. Serve with bread slices.

- Select saute setting on a 6-qt. electric pressure cooker and adjust for medium heat; add butter. Add onion; cook and stir until tender, 6-8 minutes. Add garlic and sugar; cook 6 minutes longer. Stir in stocks, wine and salt. Press cancel. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 8 minutes. , Let pressure release naturally for 3 minutes; quick-release any remaining pressure. If desired, serve with croutons and Parmesan cheese.

- Press saute function on a large multi-cooker; select vegetables setting. Press timer; set to 30 minutes. Start. Melt butter in inner pot. Add onions; cook and stir until tender and golden, 25-30 minutes. Press cancel., Stir in broth, garlic, thyme, Worcestershire sauce and salt. Lock pressure lid. Press pressure function; select vegetables setting. Set to long cook time (12 minutes). Start. , Quick-release pressure. If desired, stir in brandy. Ladle soup into individual serving crocks. Place wire rack into inner pot. Arrange buttered toast on rack. Top with cheese. Cover with air frying lid. Press air fry function; select custom setting. Press timer; set to 2 minutes. Start. Cook until cheese is melted. Serve toasts over soup.

EXTRA CHEESY FRENCH ONION SOUP
Better than restaurant onion soup. Make the entire quantity and place in freezer in heavy duty freezer bags. When vidalias are in season, I double and triple the recipe to have the soup on hand.

Steps:
- Make stock by bringing 10 cups water to boil.
- Add beef and chicken bouillon pastes (or heat canned beef and chicken broth).
- Lower heat to simmer and let simmer while preparing onions.
- Melt butter slowly (so it does not brown) in large soup pot over low heat.
- Add thinly sliced onions.
- Stir, cover, and cook on low heat until lightly brown, stirring occasionally, about 30 mins.
- Add wine, bring to boil, scraping up browed bits.
- Cook about 5 mins.
- stirring occasionally.
- Add about 5 good shakes of worcestershire sauce.
- Add stock to onions.
- Bring to boil, turn heat down to simmer and simmer uncovered about 1 1/2 hrs.
- Season to taste with salt and pepper.
- BREAD SLICES- BRUSH OLIVE OIL ON SLICES.
- SPRINKLE WITH PARMESAN AND PLACE IN OVEN ON COOKIE SHEET AT 375f UNTIL LIGHTLY BROWN.
- Ladle soup into ovenproof bowls.
- Float bread on top of soup.
- Top with 2 or 3 cheese slices.
- Place in oven or microwave until cheese melts.

- Pressure Cook Onions: Heat up Instant Pot using Sauté More function. Wait until it says HOT (~8 mins). Melt 6 tbsp (64g) unsalted butter in Instant Pot. Add in ⅓ lb (151g) sliced shallot + 3 lbs (1361g) sliced yellow onions. *Note: we’re reserving ⅓ lb (151g) sliced yellow onions for later. Add in ½ tsp (2g) baking soda (NOT baking powder!), then mix well. Sauté until onions begin to release moisture (~5 mins). Pressure cook at High Pressure for 20 minutes, then Quick Release. *Note: Onions are full of liquid, so they will generate enough steam for the Instant Pot to get up to pressure.
- Caramelize Onions: There will be a lot of liquid in Instant Pot. To speed up the process, pour the onion liquid in a large glass measuring cup and reserve it for later. Caramelize onions by using the "Saute More" function. Stir occasionally. Once all the liquid has evaporated, turn the heat down to "Saute Normal". *Pro Tip: At this point, you will want to stir the onions more frequently to avoid burning. Saute onions until they are deep golden brown. *Note: The whole caramelizing process will take roughly 20 - 28 minutes.
- Deglaze Instant Pot: Pour in ¼ cup (63ml) Sauvignon Blanc or dry white wine, then completely deglaze the bottom of the pot with wooden spoon.
- Pressure Cook French Onion Soup: Add minced garlic cloves, 1 tbsp (15ml) regular soy sauce, 1 tbsp (15ml) fish sauce, 1 bay leaf, thyme, reserved onions, reserved onion juice, 4 cups (1L) unsalted beef stock, and 4 cups (1L) unsalted chicken stock in Instant Pot. Give it a quick mix and close lid. Pressure Cook at High Pressure for 0 (zero) minute + 20 minutes Natural Release.
