BALLYMALOE APPLE CAKE
Thick cakelike crust enveloping apples, rhubarb or gooseberries is always served with whipped cream and brown sugar. As common as this cake is, it varies from house to house in Ireland, all are made with Bramley apples, whick break down into a foamy mass when cooked.

Steps:
- FILLING- peel apples, and cut into 1/2 inch pieces.
- (you should have about 3 cups) In bowl, toss with lemon juice.
- Add raisins, cinnamon, allspice, cloves and nutmeg; Stir well.
- Add honey and mix throughly; set aside.
- In large bowl, sift together flour, baking powder.
- Cut in butter until mixture resembles coarse meal.
- Stir in sugar.
- Make well in center; pour in egg and milk.
- Using fork, stir briskly to make a sticky dough; divide in half.
- Roll out one half between 2 sheets of waxed paper to 1/4 inch thickness.
- Fit into lightly greased 9 inch pie plate.
- Spoon filling over dough; place other half of rolled dough on top of filling.
- Press edges together.
- Using sharp knife, cut small slit in centre of pastry top to allow steam to escape.
- Bake in 350F oven for 45 minutes or until cake is golden brown and firm to touch and tester inserted in centre comes out clean.
- Cut into 8 wedges while hot.
- Serve warm and pass whipped cream and brown sugar separately.

BALLYMALOE BROWN BREAD

Steps:
- Grease an 8in x 2 1/2in (20cm x 10cm x 6cm) loaf pan and warm it in a preheated oven 250¿F/120¿C, for 10 minutes.
- Sprinkle the yeast into 2/3 cup (150ml) of the water in a bowl. Leave for 5 minutes; stir to dissolve. Add the molasses. Leave for 10 minutes, until frothy. Add the remaining water and stir.
- Mix the flour and salt in a large bowl. Make a well in the center and pour in the dissolved yeast. Stir in the flour to form a thick batter.
- Use your hands to mix the batter gently in the bowl for 1 minute, until it begins to leave the sides of the bowl clean and forms a soft, sticky dough.
- Place the dough in the prepared pan and cover with a dish towel. Proof until the dough is 1/2in (1 cm) above the top of the pan, about 25-30 minutes.
- Bake in the preheated oven at 425¿F/220¿C for 30 minutes, then lower the oven to 400¿F/200¿C and bake for 15 minutes.
- Turn the loaf out of the pan and onto a baking sheet. Return the bread, bottom side up, to the oven. Bake for a further 10 minutes, until golden and hollow sounding when tapped underneath. Let cool on a wire rack.
- Proofing: 25-30 minutes. Oven temperature: 425¿F/220¿C. Baking: 55 minutes Yeast alternative: 1oz (30g) cake yeast
APPLE CAKE
This recipe from Margaret Haen, of Sheboygan, Wisconsin, uses a pound and a half of apples, making the cake dense and moist.

- Preheat oven to 350 degrees. Butter a 9-by-13-inch baking pan; set aside. In a large bowl, whisk together flour, sugars, baking soda, salt, cinnamon, ginger, and nutmeg. Add the apples, walnuts, butter, and eggs; stir just until combined.
- Spoon into pan; smooth with a spatula. Bake 40 to 45 minutes, or until a toothpick inserted in center comes out clean. Cool in pan. Dust with confectioners' sugar to serve.
RAW BROWN SUGAR APPLE CAKE
This is an family recipe from my husband's family, from his great-grandmother. They were from the South and there is a note on the recipe card "Civil War Recipe". It's a little different from the others posted, and very good.

Steps:
- Cream the brown sugar, eggs and shortening.
- Add the cold coffee and mix well.
- Sift dry ingredients together.
- Add to to the creamed mixture. Mix well.
- Add the apples and nuts, combining well.
- Pour into a large baking pan, 11x15 works for me. You could also use a jelly roll pan and bake it for less time.
- Bake in a slow oven, 325 degrees for at least 1 hour.
