SLOW-COOKER SHREDDED BEEF LETTUCE CUPS

The slow cooker is our summertime go-to for cool kitchen cooking. After swim lessons and outdoor activities, it's so nice to come back to a tasty, light dinner. If you can't find Bibb or Boston, green leaf lettuce is less sturdy but can work in a pinch. -Elisabeth Larsen, Pleasant Grove, Utah

Slow-Cooker Shredded Beef Lettuce Cups image

Steps:

  • In a 4- or 5-qt. slow cooker, combine roast, carrots, peppers and onion. Stir together next 6 ingredients in small bowl; pour over roast. Cook, covered, on low until roast is tender, 6-8 hours., Remove roast from slow cooker. Cool slightly; shred roast with 2 forks., Skim fat from cooking juices; transfer juices and vegetables to a small saucepan. Bring to a boil over high heat. In a small bowl, combine cornstarch and water. Gradually stir cornstarch mixture into juices; cook until sauce is thickened, 3-4 minutes. Return beef, sauce and vegetables to slow cooker; cook until heated through, 10-15 minutes., Serve beef in lettuce leaves. If desired, sprinkle with green onions.

3 medium carrots, peeled and chopped
2 medium sweet red peppers, chopped
1 medium onion, chopped
1 can (8 ounces) unsweetened crushed pineapple, undrained
1/2 cup reduced-sodium soy sauce
2 tablespoons packed brown sugar
2 tablespoons white vinegar
1 garlic clove, minced
1/2 teaspoon pepper
3 tablespoons cornstarch
3 tablespoons water
24 Bibb or Boston lettuce leaves
Sliced green onions, optional

Steps:

  • Season roast with chili powder, cumin and salt. Select saute setting on a 6-qt. electric pressure cooker; adjust for high heat. Add oil; brown roast on all sides. Place onions, peppers and garlic on meat. Top with crushed tomatoes, salsa verde and beef broth. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 40 minutes. , Allow pressure to naturally release for 10 minutes, then quick-release any remaining pressure. Remove roast; shred with 2 forks. Skim fat from cooking juices. Return meat to pressure cooker; heat through. Using tongs, serve on tortillas for burritos or tacos; add toppings as desired., Freeze option: Freeze cooled meat mixture in freezer containers. To use, thaw in refrigerator overnight. Steps:

  • Select saute setting on a 6-qt. electric pressure cooker and adjust for medium heat. Add 2 teaspoons oil. Sprinkle beef with salt and pepper. Brown meat in batches, adding oil as needed. Transfer meat to a bowl. , Add wine to cooker, stirring to loosen browned bits. Press cancel. Return beef to cooker; add the mushrooms, onion, broth and Worcestershire sauce. Lock lid; close the pressure-release valve. Adjust to pressure-cook on high for 15 minutes. Quick-release pressure. , Select saute setting and adjust for low heat; bring liquid to a boil.   • In a small bowl, mix together all the seasoning: from the chili powder to the salt and pepper. Sprinkle over the boneless beef chuck roast pieces and gently press in, on both sides. Turn on your pressure cooker to the sauté setting and add the oil. Wait for a few minutes and let your pressure cooker pre-heat. When hot, add the seasoned beef chuck roast pieces and brown and sear on all sides.

  • Remove 1/4 cup of the liquid from the jar of sweet peppers and add to your electric pressure cooker. Drain the remaining liquid and seed and chop the peppers. Add the peppers to the pressure cooker along with the onions, garlic, beef broth and Worcestershire sauce.
  • Rub the beef roast with garlic salt and add to the pot. Cook on high for 65 minutes. Using a 10 minute slow release, open the pressure cooker.
  • Remove 3/4 cup of the liquid and discard or refrigerate for another use. Remove the roast from the pot and place on a large cutting board. Using two forks, shred the beef into small pieces. Return the shredded beef to the pressure cooker and stir into the liquid. Serve immediately or allow to cool and store refrigerated in an airtight container.
