Pretzel Nutella Ice Cream Bites Recipes

Yield makes about 700 g (1 quart )

Steps:
- 1. Heat the oven to 300°F.
- 2. Spread the pretzels on a sheet pan and toast for 15 minutes, until the pretzels have slightly darkened in color and your kitchen smells pretzely. Cool completely.
- 3. Put the pretzels in a large bowl, pour the milk over them, and stir while steeping for 2 minutes.
- 4. Strain the milk mixture through a fine-mesh sieve and discard the soggy pieces of pretzel.
- 5. Bloom the gelatin (see note below).
- 6. Warm a little bit of the pretzel milk and whisk in the gelatin to dissolve. Add the remaining pretzel milk, glucose, brown sugar, cream cheese, salt, and baking soda and whisk until all of the ingredients are fully dissolved and incorporated.
- 7. Pour the mixture into your ice cream machine and freeze according to the manufacturer's instructions. The ice cream is best spun just before serving or using, but it will keep in an airtight container in the freezer for up to 2 weeks.

- 3. Roll dough into about 30 balls. Dough will be sticky, but you can add more powdered sugar if too sticky to work with. Place the balls on parchment paper as you make them. The balls will be kind of soft, but will firm up nicely in the refrigerator.

- In a large mixing bowl, beat together the butter, brown sugar and sugar until combined. Add the eggs and vanilla, beat until combined and creamy. Add the flour, baking soda and salt and beat until combined. Stir in the chocolate chips and crushed pretzels.
- Scoop the dough out into tablespoon size balls and place 2 inches apart on the prepared baking sheet. Press a pretzel gently onto the top of each dough ball and sprinkle LIGHTLY with flaky sea salt. Place the cookie sheets in the freezer and freeze 10 minutes. Alternately you can place the cookie sheets in the fridge and chill for 1-2 hours or up to 3 days.
- Bake the cookies on the center rack of the oven for 9-10 minutes. The cookies with not look completely done, but they will continue to cook on the baking sheet. Allow the cookies to cool 3-5 minutes on the baking sheet and then transfer to a cooling wrack.
