POLISH DOUGHNUTS - PACZKI

There are many recipes for Paczki. Some call for 10-20 egg yolks, grated orange or lemon rind, cream, rum or vodka. This is a simplified version flavored with mace. My Polish grandmother made her own plum jam from the trees in her yard but you can use your favorite. Posted by request. Prep time is estimated and includes rising time.

Polish Doughnuts - Paczki image

Steps:

  • Scald milk and allow to cool to lukewarm, add yeast and stir.
  • Beat sugar and butter until fluffy, add eggs, salt, vanilla and mace.
  • Add flour and yeast-milk gradually, beating well.
  • Cover and let rise in a warm place until doubled in bulk.
  • Punch down and let rise again.
  • Roll out dough, on a floured surface, 3/4 inch thick.
  • Cut out 1 1/2 inch circles.
  • Top half of the circles with 1 tsp jam, cover with the remaining circles and seal edges.
  • Heat oil mixed with 1 tbls water to 375°F.
  • Fry, turning once, to a medium golden brown.
  • Drain on paper towels and sprinkle with sugar.

Way back on Shrove Tuesday, the day preceding Ash Wednesday, the Poles celebrate the last day of parties & festivals by baking & serving "pontshki". This was My Polish Grandmothers recipe. Never Made it--it is very time consuming ! I like this recipe because the doughnuts you get now are nothing like these! The old way is the best way & Taste a whole lot better! Never made these so have no Idea on cooking time or Prep time may be around 60 to 65 because of the yeast & dough rising time?

Pulaski's Favorite Pontshki ( Polish Doughnuts) image

Steps:

  • Mix crumbled yeast cake in lukewarm milk. Add the smaller amount of flour & set to rise in a warm place, covered with warm cloth, 20-25 minutes.
  • Stir butter, lemon rind (optional) sugar, mace or nutmeg & salt together.
  • Add the warm flour & egg yolks.
  • Mix this with yeast sponge & add enough lukewarm milk to make a dough as thick as bread dough.
  • Add butter, melted & cooled, & beat thoroughly for 10-15 minutes or until bubbles appear on surface of dough.
  • Cover& allow to rise about 20 minutes, then mix it lightly again.
  • Flour a board & take out small portions at a time.
  • Roll out to 1/3-inch thickness & cut in 2 to 2- 1/2 inch rounds.
  • For filling, use prune jam, marmalade or jelly.
  • Place filling in center of each dough round, leaving enough space around filling to press down & top round.
  • Wet edges before doing this.
  • Close edges tightly but do not spread dough out too large, trim edges again with cutter.
  • Lay on floured board to rise for about 1 hour or more.
  • They must be about twice their thickness.
  • Cover with warm cloth.
  • FRY in deep hot fat (360-370°F )& when golden brown on both sides, drain & sprinkle with powdered sugar.

Ukrainian Pampushky Christmas Doughnuts image

Steps:

  • POPPY SEED FILLING: The night before, cover poppy seeds with boiling water and let them soak until the following morning, or wash and parboil for 30 minutes just before grinding. Drain thoroughly and grind in a poppy-seed grinder, or put them through the finest blade of your meat chopper 3 or 4 times. I use a coffee grinder for this. (or buy ground poppy seeds if there is a store near you that prepares them, but be sure they are not rancid.).
  • Cream butter with honey. When well blended, combine with cream, poppy seeds and remaining filling ingredients. (Some people prefer to omit the butter and to cook the ground poppy seeds with 2 cups milk and the honey until the mixture is thick. The other ingredients are then stirred in.).
  • FOR THE DOUGHNUTS: Sprinkle yeast into warm water, add 1 tablespoon sugar, cover lightly and set aside in a warm place for 5 to 10 minutes, or until mixture. Scald milk and stir in butter, salt and sugar. When butter melts, cool milk to lukewarm. Combine with beaten eggs and yolks and yeast mixture, vanilla and lemon rind. Gradually beat in enough flour to make a medium firm dough that is still pliable. Knead until smooth and elastic-about 10 minutes. Place dough in a floured bowl, dust with flour and set to rise in a draft free corner until double in bulk-about 1 1/2 hours. Punch dough down and let it rise again until doubled.
  • Turn dough onto a floured board and roll out to 1/2 inch thickness. Cut into circles with a 3-inch round cookie cutter. Place a teaspoonful of filling on half of the circles. Top with unfilled circles and pinch edges closed, using a little cold water to seal them. Let rise, uncovered, on floured board until doubled in bulk.
  • Fry a few at a time in lard heated to 375°F Turn once so both sides become golden brown. Allow about 6 minutes for frying each batch. Drain on paper towel and sprinkle with sugar and cinnamon. Makes about 2 dozen doughnuts.

Steps:

  • Cook potatoes and drain well. Press through a ricer and place in a large bowl. Cool.
  • Combine flour and salt in a large bowl. Mixing well. Make a well in the center of flour and add eggs, one at a time, mixing well until all the eggs are mixed well.
  • Add the riced potatoes and mix until all ingredients are blended real well. If necessary add some water to make the dough pliable if too stiff, this will depend on how much flour you add. (I have found that 4 cups will make a very wet dough, so I add 1/4 cups of flour at a time until the dough feels just right. This is done by feel.****do not make the dough too stiff****.
  • Roll out dough in portions at a time onto floured surface, rolling out into a long log about 1-inch thick.
  • Cut logs into 3/4-inch pieces, rolling slightly to even out.
  • Drop into rolling salted boiling water and cook until paluski float to the top, allowing them to simmer a few minutes. Remove with a slotted spoon and place in a large bowl.
  • Have some melted butter ready to drizzle over the paluski to coat them.
  • You can sauté some onions in butter and toss in with them.
