PUMPKIN APPLE BREAD
My grandsons think this seasonal loaf is pretty special-so much so they took it with them to college when they knew they wouldn't be home for the holidays. It's destined to become a family tradition in your home, too. -Victoria Cooklin, Massillon, Ohio

Steps:
- In a large bowl, combine the first seven ingredients. In another large bowl, whisk the eggs, sugar, pumpkin and oil. Stir into dry ingredients just until moistened. Fold in apples and raisins. Transfer to two greased 9x5-in. loaf pans., For topping, in a small bowl, combine the sugar, flour and cinnamon. Cut in butter until mixture resembles coarse crumbs; sprinkle over each loaf., Bake at 350° for 50-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

HARVEST PUMPKIN APPLE BREAD
All the flavors of Autumn combined into one scrumptious bread. This tastes great with coffee or tea! I make this using Egg Beaters and unsweetened applesauce in place of half the oil to make it healthier. Prep time includes cooling time.

Steps:
- Preheat oven to 350 degrees.
- Grease and flour two 9 x 5-inch loaf pans.
- Combine flour, cinnamon, baking soda and salt in large bowl.
- Combine sugar, pumpkin, eggs, vegetable oil and apple juice in large mixer bowl; beat until just blended.
- Add pumpkin mixture to flour mixture; stir just until moistened.
- Fold in apples.
- Spoon batter into prepared loaf pans.
- Bake for 65 to 70 minutes or until wooden pick inserted in center comes out clean.
- Cool in pans on wire racks for 10 minutes; remove to wire racks to cool completely.
- To make using three 8 X 4-inch loaf pans: Prepare as above and bake for 60 to 65 minutes.
- To make using five or six 5 X 3-inch mini-loaf pans: Prepare as above and bake for 55 to 60 minutes.

CHUNKY APPLE PUMPKIN BREAD

Bake at 325° for 1-1/2 to 1-3/4 hours or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool.

THE BEST PUMPKIN BREAD
This pumpkin bread is perfectly moist, not-too-sweet and couldn't be easier. It's perfect for toasting and slathering with butter or cream cheese, and maybe a drizzle of honey or maple syrup.

- Preheat oven to 350 degrees F. Butter and flour two 9-by-5-inch loaf pans.
- Whisk together the sugar and oil in a large bowl until well combined. Whisk in the eggs and pumpkin until combined.
- Combine the flour, salt, baking soda, baking powder, nutmeg, allspice, cinnamon and cloves in a medium bowl and whisk until well combined. Add half the dry ingredients to the pumpkin mixture and stir to combine. Add half the water and stir to combine. Repeat with the remaining flour and water.
- Divide the batter between the prepared loaf pans. Bake until cake tester comes out clean and the loaves are golden brown, about 1 hour. Let the loaves cool in the pans on a wire rack for 10 minutes. Remove from the pans and let cool completely, about 1 hour.
PUMPKIN APPLE BREAD
This recipe is apparently from Gourmet Cookbook, but I found it online awhile ago. It is so good, and a departure from the usual pumpkin bread, with the addition of apples and a cinnamon sugar topping. The perfect way to start autumn. Enjoy!

- TOPPING:
- Blend together flour, sugar, cinnamon, and butter in a small bowl with your fingertips until mixture resembles coarse meal.
- BREAD:
- Put a rack in the middle of oven and preheat oven to 350°F Butter two 9 X 5 inch loaf pans.
- Sift together flour, salt, baking soda, cinnamon, nutmeg, cloves and allspice into a medium bowl.
- Whisk together pumpkin, oil, sugar, and eggs in a large bowl. Add flour mixture, stirring until well combined. Fold in apples.
- Divide batter between buttered loaf pans. Sprinkle half of topping evenly over each loaf.
- Bake until a wooden pick or skewer inserted in center of bread comes out clean, 50 to 60 minutes.
- Cool loves in pans on a rack for 45 minutes, then turn out onto rack and cool completely, about 1 hour.

- Preheat oven to 350 degrees F (175 degrees C). Grease 2 loaf pans with cooking spray.
- Mix flour, cinnamon, nutmeg, cloves, ginger, baking soda, salt, and baking powder together in a large bowl.
- Combine brown sugar, white sugar, applesauce, and eggs in a large bowl. Add pumpkin and mix well. Add flour mixture alternately with water, mixing well between additions. Divide between the prepared loaf pans.
- Bake loaves in the preheated oven until a toothpick inserted into the center comes out clean, 60 to 65 minutes. Cool in pans for 10 minutes. Invert onto a wire rack to cool completely.

PUMPKIN BREAD PUDDING WITH SPICY CARAMEL APPLE SAUCE

- 1. Preheat the oven to 325°F. Butter a 10-inch glass baking dish.
- 2. Spread the bread cubes on a large baking sheet and bake in the oven, turning once, until lightly toasted, about 15 minutes. Let cool.
- 3. Combine the cream, milk, and vanilla bean and seeds in a small saucepan over medium heat and bring to a simmer.
- 4. Whisk together the yolks, sugar, maple syrup, and pumpkin puree in a large bowl. Slowly whisk in the hot cream mixture until combined. Discard the vanilla bean and whisk in the bourbon.
- 5. Scatter the pumpkin bread cubes in the prepared baking dish. Pour the custard over the bread, pressing down on the bread to totally submerge it in the custard. Let sit for 15 minutes to allow the bread to soak up some of the custard.
- 6. Place the dish in a larger roasting pan and pour hot water into the roasting pan until it comes halfway up the sides of the glass dish. Bake until the sides are slightly puffed and the center jiggles slightly, about 1 hour. Remove from the oven and the water bath and cool on a wire rack for at least 30 minutes before serving.
- 7. Serve the warm bread pudding topped with whipped cream and drizzled with spicy caramel apple sauce . Sprinkle with pumpkin seeds if desired.
DENSE AND HEARTY APPLE PUMPKIN BREAD
My own recipe, made for a filling, healthy breakfast or anytime you need a quick, healthy snack. Dice the apples according to how you like them, make them small if you don't like tasting big pieces of apple in your breads. Use 2 large eggs if you like the bread moister and melty. Otherwise 1 large egg will get you a very dense bread.

- Preheat oven to 350 degrees.
- Grease one 9x5 loaf pan.
- Combine cinnamon, baking soda, flour and salt in a bowl, set aside.
- Combine egg, pumpkin, sugar, water, applesauce and oil in another bowl, beat until blended (but don't blend too finely).
- Add the wet mixture to the dry mixture, stir in until just blended.
- Fold in the diced apples gently.
- Carefully spoon mixture into loaf pan.
- Bake for 35 minutes or until toothpick inserted into the middle comes out clean. (I have a small oven so it takes a shorter time to bake).
- Cool and enjoy. I like my bread sliced and hot, with melted honey spooned onto it or with fat free cream cheese spread.
