QING CHAO CAI HUA (CHINESE STIR-FRIED CAULIFLOWER)
Taken from Ji Pin Su Shi (Best Vegetable Dishes), a 30-cent, 5-in-square, paperback cookbook from Wal-Mart in China. Simple, home-style Chinese fare. Chinese cooks are expected to determine the proportions of condiments and seasonings. Everything is "ge shi liang"--to taste. I've suggested amounts, but if they don't seem right, just trust your own tastebuds.

Steps:
- Divide cauliflower into florets, wash, blanch briefly in boiling water, and drain.
- Wash bell pepper, remove stem and seeds, and cut into thin slivers.
- Over highest heat, heat the empty wok, then add oil and swirl to heat. Add cauliflower and stir-fry briefly. Add bell pepper, sugar, salt, and MSG, tossing after each addition.
- Transfer to serving platter, and serve as part of a Chinese meal: rice, soup, and a balanced variety of dishes--one per person.

ROASTED CAULIFLOWER AND CHICKPEAS
Steps:
- Preheat the oven to 400 degrees F.
- Toast the coriander, turmeric, cumin seeds, fennel seeds and cayenne in a dry skillet over high heat until fragrant, 2 to 3 minutes. Pour the oil into a large mixing bowl, and then add the toasted spices. Add the ginger, cauliflower, chickpeas and onions, and toss to coat everything evenly. Place on a sheet tray and season with salt and pepper. Roast in the oven until browned and the cauliflower is tender, 30 to 35 minutes. Serve with cilantro sprigs and finish with a squeeze of the fresh lime juice.
GINGER STIR FRIED CAULIFLOWER WITH OYSTER SAUCE
This is a delicious way to cook cauliflower. I like mine crisp so I do not steam it before stir frying however if you like it cooked more steam for 5 minutes before stir frying it

Steps:
- Mix cauliflower with 1 tbsp soy sauce & have the sugar stirred into the soy.
- Turn wok or large skillet to high heat, add oil, and when it starts smoking add ginger and garlic for about 15 seconds Turn heat down a little bit but still high.
- Add cauliflower and scallions, stir and cook for about 2 minutes.
- Add stock, water, oyster sauce and remaining soy sauce Cook for 1 minute.
- If you like a thicker sauce add corn starch stir and cook for no more than 1 minute.

Steps:
- Soak mushrooms in boiling water. Reserving water, squeeze excess moisture from mushrooms, remove stems, wash, and quarter.
- Cut cauliflower (and broccoli if using?into florets and wash.
- Mince green onion.
- Heat empty wok over highest heat. Add oil and swirl to heat. Add minced green onion, minced ginger, and minced garlic, and toss a moment until fragrant but not burned. Add cauliflower (and broccoli) and stir-fry. Add mushrooms and continue to stir-fry.
- Season with salt, rice wine, msg, and some of the mushroom water, tossing after each addition.
- Transfer to platter and serve as part of a Chinese meal: rice, soup, and a balanced variety of dishes--one per person.

- Heat a large pot of water in a saucepan. The hot water will be used to blanch the cauliflower. While waiting for the water to boil, prepare the other ingredients.
- Cut the cauliflower head with a knife or break it with your hands into smaller florets. Do not include the thick stem parts. Rinse the florets with water. Cut the garlic gloves into thin slices. Remove the skin of the tomatoes by first making a cross cut at the bottom of each tomato then immersing them in boiling or very hot water. The skins will be readily peel off after 1-2 minutes. If you need more detail and pictures, follow the instructions in step 2 from my Tomato Fish Fillet Tofu Stew recipe.
- When the water is boiling, add the cauliflower florets. Add a few drops of oil and maintain the heat at medium-high. Blanch the cauliflower for 2 minutes only in the hot water. After 2 minutes, take the cauliflower out and rinse under cold water immediately. Thoroughly drain the water out and set the blanched cauliflower florets aside.
- Heat a large skillet under medium-high heat. Once the skillet is getting hot, add the 2 tablespoons of vegetable oil, then add the garlic and the red pepper flakes or dried chili. After the garlic releases its aroma, which is usually within 30 seconds to 1 minute, add the tomato wedges and ½ teaspoon of kosher salt, stirring to mix.
