QUESO
A smooth and creamy queso is quintessential game-day food, so we took the classic recipe and kicked-it up a notch with jack and Cheddar cheeses. Enjoy it with tortilla chips or any of your favorite dippers for serving.

Steps:
- Add the processed cheese, Monterey Jack, Cheddar and canned tomatoes (along with the juice) to a medium saucepan or 10-inch cast-iron skillet (see Cook's Note) and turn the heat to medium. Cook, stirring frequently with a rubber spatula, until all the cheese has melted and the queso is smooth, about 5 minutes. Serve immediately with tortilla chips.
- To make the queso spicy, use hot diced tomatoes and green chiles, such as RoTel Hot, instead of the Original.
- Processed block cheese is crucial due to its meltability and what it adds to the queso's texture. Do not try to substitute other cheeses.
WHITE QUESO DIP
This creamy white queso dip uses only a handful of ingredients and is ready to party in just ten minutes.

Steps:
- Whisk together the cornstarch, garlic powder, onion powder and cumin in a medium saucepan. Add the cheese and whisk to combine. Pour in the evaporated milk and whisk to combine. Set over medium-low heat and cook, whisking constantly, until the cheese is melted and the mixture is thick enough to coat the back of a spoon, about 5 minutes.
- Transfer the queso dip to a warm serving dish. Top with cilantro, jalapeno and red onions. Serve with tortilla chips.
DON'S QUESO DIP
My dad started this recipe in our family. I grew up making it with my dad and after his death I have continued to make it. I have tweaked it to suit my family. Great to make for the Superbowl or a casual get together. All the spices are to taste. The measurements below are estimates, I rarely measure. Feel free to cut back on the Jalepeno if you don't like your food spicy. Also, instead of just plain ground beef, I have made it using left-over chili, just cut back on the spices then.Use more or less Milk to make cheese as thin/thick as you like, keep in mind the salsa will thin it out. You can use Pepper jack Velveeta if you cannot find the Mexican style. Also, leftover chili or 1/2 lb ground beef and 1/2 lb Chorizo instead of ground beef has had awesome results in my household, just cut back on seasonings. My mother likes to put this into a Crockpot to cook while she makes dinner.

Steps:
- In a small saute pan, saute jalapeño until softened.
- In a large pot, heat cheese and milk on medium-low heat, stirring constantly.
- Once cheese is melted, slowly mix in salsa, jalapeño, green chilies and ground beef.
- Mix in seasonings.
- Enjoy with Chips.
- I usually use a slice of Fresh lime to spice up the chips a little. Try it on one chip to make sure you like it.
- If you are making it in the Crockpot, just through it all in and stir occasionally. Cook on Low.
QUESO SAUCE
Steps:
- Melt the butter in a small saucepan over medium heat. Whisk in the flour and cook for 1 minute. Add the milk, increase the heat to high, and cook, whisking constantly, until slightly thickened, about 5 minutes. Remove from the heat and whisk in the Chihuahua cheese until melted. Stir in the Parmesan and season with salt and pepper. Thin with additional milk if needed. Keep warm.
QUESO
My cousin and I created this recipe by accident when we wanted queso but did not have any of the "traditional" Velveeta. We went rummaging and this ended up being my favorite queso ever, and I have not made Velveeta based queso since. It is important to use American cheese to get the right flavor. Notes: 1. Although I assume black pepper can be used instead of white, white pepper does taste different. 2. You should be able to find Goya products in the Mexican section of your grocery store. 3. If you do not like it very hot, use the mild salsa and use less pepper.

Steps:
- Cube cheese. (I usually break a stack of several slices into quarters.).
- Combine salsa, cheese, and milk in a microwave safe container.
- Microwave on high for two minutes.
- Stir to blend. Then stir in spices.
- Microwave on high until heated thoroughly, about ten minutes, stirring ever minute or so.
- Serve hot with tortilla chips.

QUESO
Queso, a popular Tex-Mex dip made with processed American cheese and canned tomatoes, was inspired by chile con queso, a Mexican dip of melted cheese and chiles that made its way to the United States in the 1930s and '40s. As the two-ingredient Americanized adaptation gained popularity, supermarkets began placing Ro-tel canned tomatoes near shelf-stable Velveeta cheese, and queso became mainstream. Purists will argue that any ingredient beyond American cheese and spicy diced tomatoes is unnecessary, but you can customize this recipe by adding any combination of black beans, scallions, cilantro, garlic, cumin, red-pepper flakes, oregano, lime zest or juice.

- Roughly chop the processed cheese into 1-inch cubes, then add to a medium saucepan. Stir in the tomatoes and their juices, plus 2/3 cup water, then heat over medium-low, stirring frequently, until cheese is melted and mixture is creamy, 5 to 7 minutes. You can stop here, and serve immediately with chips, or proceed to Step 2, if you're feeling extra.
- Stir in any combination of desired additions: black beans, scallions, cilantro, garlic, cumin, red-pepper flakes, oregano, and lime zest and juice. Heat over low, stirring occasionally, until warmed and flavors meld, about 5 minutes. If you like some extra heat, stir in chipotle chiles en adobo. Season to taste with salt, and additional red-pepper flakes, if desired, and serve immediately. (You could also keep your queso in a slow-cooker on a low setting, stirring occasionally, to keep it molten.) Mixture will keep refrigerated for up to 1 week.
SEAFOOD QUESO DIP
This Tex-Mex classic features a unique twist on the original recipe. Adding seafood kicks flavors to a whole new level.
