- Whisk egg yolks, lemon juice, milk, salt, and black pepper together in a microwave-safe bowl. Whisk melted butter, a bit at a time, into egg yolk mixture until sauce is smooth.
- Cook sauce in the microwave on medium, whisking at 15-second intervals, until sauce is hot and thick, about 1 minute.

- 1. Melt the butter (I use 'I can't believe it's not butter' light) in the microwave
- 2. Whisk in the mayonnaise (I use Hellmann's light) and the lemon juice
- 3. Let sit at room temperature until veggies are cooked, then pour sauce directly onto them. The heat from the veggies heats the sauce.
- 4. This is a great quickie sauce for broccoli, asparagus or quick eggs benedict.

Quick and easy hollandaise sauce. Makes enough for 2 servings of eggs benedict or asparagus. I've tried several ways to make hollandaise sauce; this method works every time and is very quick. My kids love it. I put poached egg on toast or biscuit and top with sauce. I also add crumbled sausage with jalapeno and garlic.

- 1. In a small microwaveable bowl, melt the butter and let cool. Mix in mayonnaise (NOT Miracle Whip) and add a squeeze of fresh lemon juice to taste. Whisk together until smooth. If it is too thick, warm slightly or add a tiny bit of hot melted butter and rewhisk. Serve over anything savory. (My option)
- 2. If you like cauliflower or broccoli with lemon and butter, try it with this sauce, topped with some shredded cheddar. It is soooooo yummy. Or use it for any recipe calling for Hollandaise sauce.

- Create a double boiler by placing a heatproof bowl over a pot of simmering water. To make your sauce, add in the mayo, medium cheddar, dijon mustard and paprika. Using a balloon whisk, slowly stir the ingredients together.
- As the heat melts the cheese, keep whisking until there are no lumps and you have a smooth sauce. Then add the white wine vinegar, 1 tsp at a time. You want to make sure the sauce is smooth and slightly runny, but try as you add as the vinegar will change the taste profile. Take this off the heat (don’t toss the water!!) and cover and wrap in a clean towel to keep warm.
