This is a quick and easy, basic quinoa recipe that we use in our house instead of rice as a great side.

Garlic Quinoa image

Steps:

  • Melt butter in a saucepan over medium heat. Cook and stir garlic in melted butter until just browned, about 5 minutes.
  • Pour chicken broth into the saucepan; add quinoa and stir. Bring the mixture to a boil, reduce heat to low, cover, and simmer until liquid is absorbed, about 15 minutes.
  • Remove saucepan from heat and rest mixture 5 minutes before fluffing with a fork.

Quinoa With Garlic, Pine Nuts and Raisins image

Steps:

  • Place the quinoa in a saucepan and cook over medium heat until toasted, about 2 minutes. Add 1 3/4 cups water (or use low-sodium chicken broth) and bring to a boil. Reduce the heat to medium-low and simmer, covered, until the liquid is absorbed, 10 to 15 minutes. Remove from the heat and let sit, covered, about 2 minutes.
  • Meanwhile, toast the pine nuts in a skillet over medium-high heat, stirring, until golden, about 3 minutes; transfer to a plate. Add the olive oil and garlic to the skillet and cook over medium heat, stirring, until golden, about 2 minutes. Transfer the garlic to the plate, reserving the oil.
  • Fluff the quinoa with a fork. Add the pine nuts, garlic, reserved oil, parsley, raisins and lemon juice. Season with salt and pepper and toss.

Mexican Quinoa with Creamy Chicken and Vegetables image

Steps:

  • Bring 2 cups water and quinoa to a boil in a saucepan over medium heat. Simmer until quinoa is tender, 15 to 20 minutes.
  • Meanwhile, heat olive oil in a large skillet over medium-high heat. Saute onion until lightly browned, 5 to 7 minutes. Stir in 3 garlic cloves, chili powder, salt, paprika, and red pepper flakes with a wooden spoon. Add chicken; cook and stir for about 5 minutes. Pour in remaining 1/4 cup water. Cover and cook for 15 minutes.
  • Stir corn, peas, peppers, and spinach into the skillet. Cover and cook for 5 minutes more. Mix milk and flour together and pour into the skillet; cook and stir for 2 minutes.
  • Divide quinoa among 4 serving plates. Scoop chicken and vegetable mixture on top. Whisk lime juice and remaining garlic together in a bowl; drizzle over each serving.

Steps:

  • Start by cooking the quinoa. Rinse it with water and drain, then add 2 cups water and a sprinkle of sea salt to the water. Bring this to a boil, then turn down to simmer for 20-30 minutes. When you see the swirl of the grains, with a translucent center, the quinoa is fully cooked. It should be fluffy if you don't stir the quinoa while it cooks.
  • Make the sauce while the quinoa is cooking by putting the rest of the ingredients in a blender or food processor. Blend the zucchini with enough coconut milk and/or water to get it smooth. Add the garlic and onion in stages to make sure the sauce stays smooth.
  • Serve the cooked quinoa topped with the sauce alone, or add some chopped vegetables, steamed or raw.

  • In sauce pan, sauté onion in oil until softened and lightly browned. Add garlic and stir for a few seconds. Add quinoa and stir constantly, toasting it for about a minute.

Today I added some chopped egg whites, chopped black olives, some scallions (green and white). I then tossed with one tbls each of EVOO and red wine vinegar. Realllllly good! 07/24/08 - ANOTHER UPDATE! Wow, instead of using the fresh garlic, use roasted! I had several bulbs roasting while I was making dinner. They smelled SOOO good and that is when I figured it could only make this dish better. Just leave out the minced garlic and when the dish is finished, stir in about five squeezed out chopped cloves and then serve. YUM! 07/29/08 - STILL ANOTHER UPDATE!   • Make sure you rinse the grain under cold running water several times to remove coating (not something you can see).
  • Spray medium size saucepan with vegetable oil.
