CRISPY RANCH FRIED CHICKEN

It's almost impossible to improve crispy fried chicken. A sprinkling of ranch dressing mix in the coating makes it happen, though. The empty-in-seconds serving platter is proof. -Taste of Home Test Kitchen

Crispy Ranch Fried Chicken image

Steps:

  • In a large shallow dish, combine 2-2/3 cups flour and Hidden Valley® Original Ranch® Seasoning & Salad Dressing Mix Shaker. In another shallow dish, beat eggs and 1-1/2 cups water; add 1 teaspoon salt and the remaining 1-1/3 cup flour and 1/2 teaspoon pepper. Dip chicken in egg mixture, then place in the flour mixture, a few pieces at a time. Turn to coat., In a deep-fat fryer, heat oil to 375°. Working in batches, fry chicken, several pieces at a time, until golden brown and a thermometer inserted into chicken reads 165°, 7-8 minutes on each side. Drain on paper towels.

Steps:

  • Preheat the oven to 400 degrees F. In a shallow bowl, mix the mayonnaise with the Ranch Dressing Mix. In a second shallow bowl, place the breadcrumbs. Dip each chicken breast in the ranch dressing mixture, removing any excess, and then dip in breadcrumbs. Place them on a parchment-lined baking sheet until chicken is cooked through, about 25 minutes.;

3/4 cup seasoned breadcrumbs

Steps:

  • Preheat the oven to 375 degrees F. Combine seasoning dressing mix with bread crumbs in a gallon-size Glad® Food Storage Bag. Add chicken pieces and seal bag. Shake the bag to evenly coat chicken. Bake chicken on ungreased baking pan at 375 degrees F for 50 minutes or until juices run clear or an internal temperature of 165 degrees F.

1 medium roasting chicken, about 3 pounds, cut into 8 pieces

1 cup unseasoned dry bread crumbs or cornflake crumbs

My kids love this recipe. It's flavorful and yet easy to make. I place baked potatoes in oven at the same time. Then use the rest of the dry ranch to make topping for the potatoes or salad.

Easy Ranch Chicken image

Steps:

  • Mix ranch dressing, salt, pepper and dry bread crumbs in 1 quart storage bag.
  • Beat 2 eggs in bowl.
  • Rinse and dredge chicken through egg then place in bag and shake until completely covered.
  • Place in buttered 13x9-inch glass baking dish.
  • Place a pat of butter on top of chicken.
  • Cook at 375°F for 1 hour.
  • Note: Can use already prepared ranch dressing.
  • Omit eggs and dredge through dressing and then trough dry bread crumbs or crackers.
  • Also can put crackers in dry bread crumbs to make crispier coating.
  • Time may vary depending on the size of the breasts.
