RANCH PASTA

I came up with this ranch pasta after making recipes for a bridal shower. It was party day and I needed to take some shortcuts! Everyone loves the simple Parmesan ranch white sauce, and it's easy to throw in veggies you have on hand. -Merry Graham, Newhall, California

Steps:

  • Preheat oven to 350°. Cook pasta according to package directions. , In a large bowl, mix Italian cheese blend, 1 cup Parmesan cheese, sour cream and salad dressing. Drain pasta; add to cheese mixture. Fold in spinach. Transfer to a greased 13x9-in. baking dish., Tear French bread into pieces; place in a food processor. Cover and pulse until crumbs form. Toss bread crumbs with oil, lemon zest, parsley, garlic salt and remaining Parmesan cheese. Sprinkle over pasta mixture., Bake, covered, 25 minutes. Uncover; bake until golden brown and bubbly, 5-10 minutes.

This is a Summer Staple around our house. It goes great with anything grilled or with sandwiches. It's also great with cooked meat added and served as a cold meal. Prep. time does not include refrigeration.

Steps:

  • In a large container gently combine all ingredients mixing well.
  • Cover and refrigerate at least 30 minutes, the longer it mingles the better it tastes!

4 ounces cheddar cheese, grated or diced
1 tablespoon Bacos bacon bits
1 cup of your favorite bottled ranch dressing (I use Kraft Free Ranch)
1 tablespoon water, add to dressing if it very thick (optional)

Steps:

  • Mince the garlic with a knife and then sprinkle on the salt and mash it into a paste with a fork.
  • In a bowl, combine the garlic paste, mayonnaise, sour cream, parsley, dill, chives, Worcestershire sauce, black pepper, vinegar, paprika, cayenne and hot sauce. Add the buttermilk to desired consistency and mix to combine, tasting frequently and adjusting seasonings as needed. Chill for a couple of hours before serving, thinning with more buttermilk if needed.

Steps:

  • Cook the pasta in boiling salted water according to package directions; drain and run under cold water to cool.
  • Meanwhile, finely chop the garlic clove on a cutting board; sprinkle with salt. Using the blade of a chef's knife, press down onto garlic, smashing it to make a paste. Add the garlic paste to a large bowl with the sour cream, buttermilk, cider vinegar and scallion; season with salt and pepper. Whisk the dressing until smooth and reserve.
  • Cut the kernels from the corn (breaking sheets of kernels into about 2-inch pieces, if desired). Add the corn, tomatoes, onion and arugula to bowl with dressing; gently toss to coat. Sprinkle with the bacon.

CLASSIC RANCH DRESSING

The original dressing served in the 1950s at Hidden Valley Ranch, a guest ranch near Santa Barbara, Calif., was made mostly from dry herbs and aromatics. To recreate that taste, this recipe is made with garlic powder instead of garlic, dried parsley instead of fresh, and so on. It makes enough seasoning mix for about 4 cups dressing; you can mix it, store it, then add dairy as needed. If you don't like the zip of mustard, try hot sauce or Worcestershire sauce instead - or simply omit for a milder taste. Steps:

  • Bring a large pot of lightly salted water to a boil; cook rotini at a boil until tender yet firm to the bite, about 8 minutes; drain.
  • Place bacon in a skillet over medium-high heat and cook until evenly brown. Drain and chop.
  • In a large bowl, mix mayonnaise, ranch dressing mix, garlic powder, and garlic pepper. Stir in milk until smooth. Place rotini, bacon, tomato, black olives and cheese in bowl and toss to coat with dressing. Cover and chill at least 1 hour in the refrigerator. This is a good alternative to your regular pasta. I have used hidden valley ranch brand and others, all were great. I do like the fiesta ranch the best in this recipe. This is a recipe that comes together quickly. You could add warm cooked chicken chunks to this recipe for protein in the meal.

Steps:

  • Start a large pot of water on high, for the egg noodles.
  • Meanwhile in a mixing bowl, blend salad dressing mix and salsa.
  • Stir in tomatoes, oil and garlic.
  • Remove as much rind as possible from brie and discard. Cut Brie into bite sized pieces and stir into tomato mixture.
  • Cook noodles according to package directions, and drain. Return noodles to same pot that you cooked them in and over medium heat, pour tomato mixture over noodles, stirring just to heat and melt cheese.
  • Serve immediately.
