BARBEQUE RANCH MEATLOAF

A delicious, juicy meatloaf that uses ranch dressing for flavoring. I used my stand mixer to blend everything together, and the loaf does not fall apart when slicing!

Barbeque Ranch Meatloaf image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix sausage and ground sirloin in a large bowl until thoroughly combined; add eggs, bread crumbs, onion, and ranch dressing; mix well. Form into a loaf and place into the center of a 9x13-inch baking dish.
  • Arrange fingerling potatoes and baby carrots around meatloaf and cover dish with foil.
  • Bake in the preheated oven for 1 hour; remove foil and brush meatloaf with barbeque sauce. Bake uncovered until an instant-read meat thermometer inserted into the center of the loaf reads at least 160 degrees F (70 degrees C), about 30 more minutes. Let meatloaf rest 5 to 10 minutes before slicing.

Steps:

  • Preheat the oven to 400 degrees F. Grease two 2-quart rectangular baking dishes with some sesame oil.
  • In a small bowl, add the panko and milk and sprinkle with salt and pepper so all the panko has a chance at absorbing. In another bowl, add the meat, eggs, soy sauce, sesame seeds, mirin, fish sauce, 1 cup teriyaki sauce and 1 tablespoon sesame oil. Add the panko mixture and gently fold everything together. This is where a lot of folks mess up. DO NOT OVERMIX. Just combine gently. Split the meat mixture between the 2 prepared baking dishes, spreading evenly from edge to edge. Bake for 45 minutes.
  • Top the meatloaves with the furikake and set aside to cool slightly. Meanwhile, add the butter to a small saucepan and heat until browned, about 2 minutes. Stir in the remaining 2 tablespoons teriyaki. Slice the meatloaves and top each slice with the teriyaki butter sauce.

  • In a bowl, beat eggs, and add salsa, dressing,3/4 of the tortilla chip crumbs, and spices.
  • Combine chicken and garlic and slowly add in egg mixture.

I wanted a different twist to my meatloaf, so I added a package of dry Hidden Valley Ranch Dressing Mix. Instead of using ketchup for the sauce, I use V8 to add a different taste. Use the spicy if you want more of a kick to your sauce. My kids went back for seconds when normally I have to beg them to just eat meatloaf.

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Combine the vegetable juice, brown sugar, and Worcestershire sauce in a saucepan over medium heat; cook until the sauce thickens, about 10 minutes.
  • Mix the ground beef, garlic powder, onion powder, ranch dressing mix, sage, salt, and pepper together in a large bowl. Gradually sprinkle the bread crumbs into the meat while mixing so the crumbs are distributed evenly throughout; add the egg and milk and continue mixing. Shape the mixture into a loaf and transfer to a loaf pan. Pour about half the sauce over the meatloaf.

  • Mix all the meat loaf ingredients together.
  • Pack into a 5 x 9 loaf pan.
  • Bake at 325f degrees for 1 1/4 hours.
  • Remove from oven, turn out of pan and place on an ovenproof serving dish.

SLOW COOKER BBQ RANCH MEATLOAF - CHEF IN TRAINING
In a large bowl, mix beef, sausage, bread crumbs, eggs, ranch packet, ¼ cup of BBQ sauce, onion, salt and garlic together by hand in large bowl. Add to slow cooker and form into a loaf shape. Add desired amount of BBQ sauce on top of loaf to glaze and cook on LOW for 6 hours. Once cooked and ready to serve, top with more BBQ sauce if needed.
