- Sift the flour, salt, baking powder and baking soda into a large bowl.
- Beat the butter and brown sugar in a large bowl with an electric mixer on medium-high speed until pale and fluffy, about 4 minutes, scraping down the sides of the bowl as needed. - Note: Start with 4 1/4 cups of flour and add more if needed.
- Sometimes this batter comes out quite stiff.
