- Spread oil in a 13-in. x 9-in. baking pan. Combine the next five ingredients in a large plastic bag. Cut each potato lengthwise into eight wedges. Place half of the potatoes in the bag; shake well to coat. Place in a single layer in pan. Repeat with remaining potatoes. , Bake, uncovered, at 350° for 40-45 minutes or until tender, turning once after 25 minutes.

Steps:
- Cut each potato in half, and each half in 3 and set aside.
- In a bowl mix all the ingredients together (except for the oil) to make your seasoning mix.
- Next lay the potatoes on a baking sheet and sprinkle with seasoning mixture on both sides.
- Place potatoes skin side down on a baking sheet and drizzle with olive oil.
- Bake at 400°F for 40 minutes and then at 450°F until desired crispiness.
- Serve as a snack or appetizer or even with eggs for breakfast. Part of any dinner or lunch from fried/baked chicken to even steak!

I believe this came from TOH a long time ago. I've been making these for several years now. My family likes them because they are thick. I like them because IF there are any leftovers...I like making hashbrowns with them the next morning. Yield is approximate.

- Place potatoes in large bowl. Cover with cold water. Let stand for 15 minutes.
- Preheat oven to 425 degrees.

- Preheat oven to 450 degrees F.
- Place the potato wedges in a saucepan with 2 quarts of cold salted water. Bring to a boil and then reduce to a simmer for approximately 5 minutes, or until a knife pierces through easily. Drain. In a large bowl, toss the wedges with olive oil. Place the BBQ spice and salt in a shallow dish and roll the wedges in it. Place the wedges on a sheet pan in single layer and roast for 15 to 20 minutes until crispy.
ROASTED POTATO WEDGES

- Place a rimmed sheet tray into the oven and preheat oven to 450 degrees F.
- Slice each potato into 6 wedges. Add the potato wedges to a pot of cold salted water. Bring to a boil, reduce heat, and simmer until the potatoes are barely tender, but a knife can be pushed through with just a slight resistance, about 6 minutes. Drain potatoes and add to a large mixing bowl. Drizzle potatoes with olive oil and toss with BBQ seasoning, salt, and pepper.
- Carefully remove the hot sheet tray from the oven and quickly add the seasoned potatoes to them. You want the pan to stay as hot as possible. This will help to crisp up the potatoes while they roast. Place the sheet pan back into the oven and roast until golden and crisp, 20 to 25 minutes, flipping 1/2 way through the cooking time.
- Remove from the oven and toss with fresh herbs.
ROASTED POTATO WEDGES

- Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper (or use a nonstick baking sheet).
- Cut the potatoes into 8 wedges each and arrange on the prepared baking sheet. Melt the butter over low heat, add the parsley and garlic and give the mixture a quick whisk. Brush the butter mixture over all sides of the potato wedges. Reserve the remaining butter mixture. Season all sides of the potato wedges with salt and pepper.

- Toss the potato wedges with the olive oil, garlic powder, salt and pepper in a bowl. Lay the potatoes on a baking sheet and cook until golden brown on each side, flipping halfway through, about 12 minutes per side. When both sides are golden and the potatoes can be pierced easily with a fork, the taters are done.
BAKED POTATO WEDGES

- Scrub the potatoes, cut them in half lengthwise, then cut each half in thirds lengthwise. You'll have 6 long wedges from each potato. - Heat the oven to 200C/180C fan/gas 6. Bring a large pan of lightly salted water to the boil. Cut the potatoes into chunky wedges, then boil in the water for 7 mins. Drain and leave to steam dry for 5 mins.

GARLIC POTATO WEDGES
This was a last-minute-what-can-I-do-with-some-potatoes recipe I threw together for a 4th of July picnic. I used Indiana Nurse's Baked Potato Wedges (#38183) as a starting point. I had no idea how they were going to turn out. However, there were no leftovers. LOL One change I'll make in the future is to add granulated garlic to the melted butter before coating the wedges. Note - "garlic granules," was inserted in place of granulated garlic/granulated garlic powder by Recipezaar in the list of ingredients. They are NOT the same thing. GRANULATED GARLIC is what to use.

- Dice, cube or chop the peeled potatoes into whatever shape you feel like making them.
- Rinse then thoroughly in cold water, drain well and transfer to a large bowl.
- Add oil and toss the potatoes around so they are evenly coated.
- Add all of the spices and the cheese and toss so they are evenly coated.
- Place on a baking pan in one layer (preferably lined) and bake for around 30-40 minutes, depending on person preference of potato texture.
- Suggestions! It's really really handy to line the pan before you bake them, or else you will have a sticky baked on mess on your pans that takes an awful lot of elbow grease to get rid of. You could add lemon juice to the potatoes to give them an extra fresh taste.
