RED ICED TEA
Iced tea with orange and lemon slices is one of Martha's favorite summer drinks.

Steps:
- Bring 4 cups water to a boil. Add tea bags and steep for 4 to 6 minutes. Remove and discard tea bags. Add remaining 2 cups water. Refrigerate until cold, at least 1 hour.
- Fill a large pitcher with ice. Add orange and lemon slices and chilled tea. Pour into glasses with ice, and garnish with mint.
THAI ICED TEA
Thai red tea leaves are blended with star anise, cinnamon and vanilla. The steeped tea then is flavored with sugar and, after being cooled, is mixed with cream and often condensed milk for a refreshing creamy drink

Steps:
- In a kettle, bring the water to a boil. Place the tea in a teapot or glass container. Pour the water over the tea and let steep until bright orange in color, 3 to 5 minutes. Strain into a clean container, such as a pitcher (or, if in tea bags, remove the bags). Add sugar and stir to dissolve. Let cool to room temperature, then cover and refrigerate until ready to serve.
- Fill 6 tall glasses with crushed ice and add tea to 3/4 full. Add 1 tablespoon cream and 1 tablespoon condensed milk to each glass.
- Serve with iced-tea spoon so guests can swirl the mixture themselves.
PERFECT ICED TEA

- Hot-Brewed:
- Bring 8 cups water to a simmer; remove from the heat and add 3 tablespoons loose tea or 6 tea bags. Let steep about 4 minutes, until it's the strength you like. Strain loose tea with a fine-mesh sieve or remove the tea bags. Let cool, then transfer to a pitcher, cover and refrigerate.
- Cold-Brewed:
- Combine 8 cups cold water and 6 tablespoons loose tea or 10 tea bags in a pitcher. Cover and refrigerate 15 to 36 hours, until it's the strength you like. Strain loose tea with a fine-mesh sieve or remove the tea bags.
- Sweet Teas:
- Combine 3/4 cup each sugar and water in a saucepan and add 1 infuser, if desired. Bring to a simmer over medium heat, stirring until the sugar dissolves, then remove from the heat and let cool. Strain the infused syrup through a fine-mesh sieve (you'll get about 1 cup).
- Orange Add 6 strips zest
- Blackberries 1 cup
- Cinnamon 2 sticks
- Lavender 3 tablespoons dried
- Vanilla 1 halved bean
- Mint 3 sprigs
- Ginger 1 cup sliced
- Lemon 8 strips zest
- Nectarine 1 cup chopped
- Cucumber 2 cups chopped
VANILLA RED TEA
This is actually a knock-off of Celestial Seasonings Madagascar Vanilla Red Tea. Some time ago I decided to buy all my own loose leaf tea ingredients and make my own tea blends (it's actually cheaper that way!). I used to buy Madagascar Vanilla Red and really enjoyed it, so of course I set out to make my own knock-off version. I looked up the ingredient list, and it's literally just vanilla and red rooibos. So, after some experimentation, I've got a ratio that tastes just like the original! This tea is best hot, but would probably make a nice iced tea too. Note: I've listed things in teaspoons because this website won't let me list it in parts, but it's technically in a ratio, so you can make whatever quantity you want.

- Assemble all the ingredients and place in a tea ball. Make sure you chop the vanilla bean into little pieces first. Note: Food.com made me list the rooibos under "rooibos tea bags", but I used loose-leaf red rooibos tea.
- Place tea ball in hot water and steep for 10 minutes.

This is a recipe that I saw on an episode of the Barefoot Conestessa that looked like it would be very refreshing.

- Steep the 4 tea bags of lemon zinger and red zinger together in 4 cups of hot water. Allow them to steep for awhile.
- Remove tea bags and add 4 cups of apple juice to the tea.
- Chill and serve with ice if desired. Garnish with lemon slices for an extra touch.
