CAULIFLOWER "POTATO" SALAD

Steps:
- Bring a pot of salted water to a boil. Add the cauliflower florets to the boiling water and cook until tender, 5 to 7 minutes. Drain well and cool to room temperature.
- Add the mayonnaise, mustard, vinegar, 1/2 teaspoon salt and 1/2 teaspoon pepper to a large mixing bowl and whisk to combine. Then add the cooled cauliflower, pickles, dill, eggs, celery and shallot. Mix until thoroughly combined. Serve at room temperature or cover and store in the refrigerator until ready to serve.

- Place potatoes and cauliflower in a large microwave-safe bowl. Cover with wax paper; microwave on HIGH 8-14 minutes or until tender. Drain and rinse with cold water; drain. While vegetable mixture cooks, combine celery, green pepper and next 7 ingredients in a large bowl. Add potato and cauliflower; stir to combine. Let stand 15 minutes before serving.

- Place potatoes in a dutch oven; cover with water, and bring to a boil. Cook 8 minutes or until tender. Drain; place in a large bowl. Add onion and next 4 ingredients; toss gently.
- Combine sour cream and next 5 ingredients in a bowl; stir well. Pour over potato salad; toss gently to coat. Cover and chill.
- Yield 9 servings @ 1 cup = 4 ww pts.

- Fill a pot with water and bring to a boil. Add the cauliflower, reduce heat and simmer until tender- about 5 minutes. You want it to be tender enough to slide a fork through, but not mushy. Alternately, you can steam the cauliflower. Drain, and let cool. Cut into bite-sized pieces and put in a large bowl.
- In a small bowl, whisk together the mayonnaise, mustard, apple cider vinegar, salt, pepper and garlic powder. Add the dressing to the bowl, and toss to combine.
