MOJITOS BY THE PITCHER
I have served this to people who have sworn that they dislike mojitos and they love it. I believe it is the fresh ingredients and the use of sugar, instead of simple syrup, muddled together that makes this cocktail refreshing and delicious. It takes a little bit of work but the results are well worth it. Serve over ice.

Steps:
- Muddle sugar and mint leaves together in pitcher until leaves are well broken down. Add limes and muddle until limes are juiced. Stir rum into sugar mixture; add club soda and stir until sugar is dissolved.

REFRESHING MOJITO BY THE PITCHER MOJITOS
This is a refreshing Cuban drink. It's hard to stop drinking these on a hot summers day. I made these for the fourth of July and we went on to 3 yes 3 pitchers! If you don't have a muddle stick try a mortar and pestle or the end of a wooden rolling pin. Please use fresh lime if you cannot go ahead and try the already bottled lime juice but if you do think about that when you rate this recipe! I did both and there's nothing like fresh! Same goes for the fresh mint if you need to you can use frozen but I DON'T recommend extract. And for the sugar real granular is what helps muddles the lime and extract the mint oils from the leaves.

- Place lime juice, mint and sugar into a pitcher.
- Using a muddle stick mash to release mint oils, and dissolve sugar into juice.
- Add rum and lots of ice topped with club soda. Adding more club soda to glasses if a lighter drink is desired.
- Garnish with fresh mint and lime slices.

- Chop each lime into six pieces and drop them into a two-litre jug. Add the sugar and squish the lime wedges with a muddler, or the end of a rolling pin. Keep crushing to get out all the juices.
- Pick the leaves off a mint spring and lay them on one of your hands. Clap the other hand on top to bruise the leaves ever so gently, then drop them into the jug. Repeat with the rest of the mint spring.
- Fill up the jug about three-quarters full with ice, then add the rum. Stir with a long-handled spoon to mix all the ingredients together gently and top up with the sparkling water. Stir once more, then serve poured into tall glasses with a few extra ice cubes and lime slices.Try these 3 twistsStrawberry mojitoMuddle 9-10 strawberries, 2 chopped limes and 2 tbsp granulated sugar in a large jug. Bruise the leaves from 2 mint sprigs and add to the jug with a pinch of black pepper. Add lots of ice and stir in 350ml white rum and 600ml sparkling water.Blueberry mojito Put 100g blueberries, 3 chopped lemons and 2 tbsp granulated sugar in a jug and muddle. COCONUT MOJITO

- Put the mint, lime juice and Simple Syrup in a pitcher. Muddle for a few seconds to release the flavor from the mint.
- Pour in the coconut water and rum. Add ice to fill a pitcher, and stir to combine and chill.
- Stir together the sugar and 1 cup water in a medium pot. Bring to a simmer over medium-high heat. Stir to make sure all the sugar is dissolved. Simmer for 1 minute, and then remove from the heat. Cool completely.

- Working in batches, puree mango, rum, lime juice, and sugar in a blender until smooth. Add mint leaves and blend just until mint is finely chopped. Stir in club soda. Serve over ice. Garnish with mango slices.
A PITCHER OF MOJITOS

- TO MAKE THE PITCHER OF MOJITOS: In a large pitcher, stir together the rum, lime juice, and syrup. Serve at once or refrigerate until needed. Do NOT add ice to the pitcher.
- TO MAKE THE SIMPLE SYRUP WITH MINT: In a saucepan, mix together the sugar and water and heat over medium-high heat. Let the syrup cook for a couple of minutes or until the sugar dissolves and the syrup looks clear. This will be about the time it takes for the syrup to begin to bubble. Remove from the heat and add the mint leaves. Cover and set aside for about 10 minutes, so the mint can infuse the syrup. Strain the syrup and use immediately or store in a lidded container for up to 1 week.
- TO SERVE: When ready to serve, squeeze a lime wedge over the ice in a rocks glass. Drop the lime wedge into the glass along with a few fresh mint leaves. Fill the glass two-thirds full of the mojito mixture and top off with club soda.

THE PERFECT MOJITO
Warning: if you try this recipe, you'll never again trust a bartender to mix your mojito. I was fed up with mediocre bar mojitos, and decided to learn to make a traditional one myself. After much research, I think I've arrived at perfection. Try it for yourself! Notes: Real sugar cane syrup really does make a difference. Any good liquor store will have it. Use mineral water with a high effervescence, like Perrier. You want a bit of texture to your mojito to balance the sweetness.

- Reserve 6 mint leaves for garnish. Place remaining mint leaves in medium bowl. Add sugar. Mash with wooden spoon until mint is aromatic and oils are released. Add rum and lime juice and stir until sugar dissolves. Strain mixture into pitcher. (Can be prepared 2 hours ahead; refreigerate.)

- Muddle 2-3 sprigs of mint with the sugar in the bottom of a 16 ounce glass.
- Stir in the rum.
- Squeeze the lime and add the juice to the glass, straining out any pulp.
