Steps:
- Heat the coconut oil in a 10-inch cast-iron skillet over medium heat. Add the onions and cook until softened, 3 to 4 minutes. Add the garlic, cumin, coriander and 1/2 teaspoon salt; cook until the spices are toasted and the garlic has softened, 1 minute. Add the pinto beans, chicken stock and chipotle puree and bring to a boil. Cook until the stock has reduced by about half and the mixture has thickened, 5 to 6 minutes.
- Off the heat, mash the beans to a smooth paste with a potato masher, leaving some beans partially mashed to add some texture. The beans should have the consistency of a thick sauce; if they're difficult to stir, they're too thick. If needed, thin the beans out with extra chicken stock, 1 tablespoon at a time.
- Finish by stirring in the lime juice and adding salt to taste. Garnish with queso fresco and cilantro, and serve with lime wedges.
REFRIED BEANS

- Reserve about a third of the beans. Mash the rest of the beans in a medium bowl with a large fork. Set aside.
- Heat the oil in a medium skillet over medium-high heat. Add the onion, and cook until lightly browned, about 4 minutes. Add the garlic and continue to cook, stirring, until lightly browned. Add the spices and cook until fragrant about 1 minute.
- Add the mashed beans and half the broth; cook, stirring frequently, until slightly thickened, about 5 minutes. Add the reserved beans and the enough of the remaining broth to loosen up the beans. Simmer until the beans are thick but not pasty, about 2 minutes more. Season with salt and pepper to taste. Stir in the fresh coriander, if desired, and serve.
REFRIED BEAN DIP
Mouth watering mixture for putting on crackers or chips. Very thick and very good. A family favorite that I'm sure you will enjoy.

- Flatten softened cream cheese in bottom of a pie plate or shallow dish.
- Spread the re-fried beans over top.
- Cover with salsa.
- Cover this with the cheese blend.
- Bake 350* for 10 minutes.
- You can actually use as much Salsa as you want, I found using the hot salsa made this sort of bitter.

I made this the first time for public use at a pot luck at Alcatraz. It went over so well, I've been making it ever since. I figure a piece of paper is easier to give to someone than having to make this. I hope you enjoy it.

- Mix together refried beans and 1/4 of salsa.
- Place mixture in bottom of 8 x 8 glass dish.
- Pour remaining salsa on top of bean mixture.
- sprinkle half of taco seasoning or to taste over salsa.
- Sprinkle chopped onions over salsa mixture.
- Spread sour cream over salsa mixture.
- Sprinkle cheese over top of sour cream.
- Cover and chill over night.
- Serve with Corn chips, crackers, dipping utensiles ect--.

- Combine refried beans, pinto beans, diced tomatoes and green chiles, and salt in a microwave-safe bowl. Microwave on high for 4 1/2 to 5 minutes.
- Remove from the microwave and stir until pinto beans are slightly mashed. Sprinkle Cheddar cheese on top and serve immediately.

- Rinse the beans thoroughly, then place them in a large pot with the bacon. Pour water over the top. Use enough water to cover the beans by 1 or 2 inches. Bring to a boil over medium-high heat, then reduce the heat to low and cover. Simmer for 2 to 3 hours. If the liquid seems to evaporate too quickly, add more water during the cooking process. The beans are done when they're fork tender, without much bite.
- Add the chili powder, salt and pepper. Stir and taste, adjusting the seasoning as necessary. Add in other seasonings as desired.
- Heat the fat in a large skillet and cook the onions until translucent. Add the beans to the skillet and mash them until they're the consistency you want. Stir and cook them until heated, then add the grated cheese. Top with the jalapenos.
HAMBURGER REFRIED BEAN DIP
I love this recipe, its more of an appetizer, but my family made it into a dinner! Its so easy to make, inexpensive and tastes wonderful!

- Brown hamburger as if you were making sloppy joes.
- In the meantime mix cheese and beans into a large pot and heat on low.
- Drain hamburger and add taco seasoning.
- After hamburger is seasoned, add it to the cheese and bean mix.
- Mix all ingredients well and heated thouroghly.
- Serve with tortilla chips or my family favorite is to serve with nacho cheese doritos.

LAYERED REFRIED BEAN DIP
This recipe was posted on athriftymom.com, and I doubled the recipe (except the quantity of cheese I left the same as posted). Some of the portions weren't listed exactly so feel free to adjust to your liking or add more cheese. I must confess, I added a litte sour cream, salsa, taco seasoning mix, and cheese to the refried beans. Then I did another layer of salsa. If you're not a salsa fan, you'll probably want to use less. I also used chives instead of green onions because that's what I had. This is good as a dip, but I also thought it was good inside taco shells for lunch or dinner. Tortillas would also work well. - Use the back of a spoon to spread cream cheese in bottom of 13x9" pan.
- Spread beans on top (or add anything to the beans you want for additional seasoning).
- Add a layer of salsa on top of beans.
- Layer 2 to 3 cups of shredded cheese on top.

BAKED REFRIED BEAN DIP
Warm layered bean dip, great for parties when served right out of the oven with tortilla chips. You can alter it to include the veggies that you prefer. It is also easy to make mild, medium or hot. My mom started making this when I was a kid and I requested it whenever there was a reason for a potluck! NOTE: I like to bake all of my vegetables so that they get melted into the cheese but others prefer to bake after the cheese layer and add the veggies after baking.

- Preheat oven to 350.
- Prepare by chopping small: onion, tomato, green pepper.
- Slice jalapenos removing seeds if you don't require the heat.
- Brown and crumble ground sirloin.
- Add onion and saute until onions are tender.
- Add 1/2 can of refried beans
- Spread the following layers in this order in 9X13 pan.
- 2nd 1/2 can of refried beans.
- Sirloin Mixture.
- Salsa.
- Cheese.
- Olives.
- Tomato.
- Green Pepper.

- Bake for about 20 minutes or until the cheese is melted.
