Steps:

  • Heat the oil in a large soup pot over a medium-high heat. Add the Canadian bacon, onions and celery. Cook, stirring occasionally, until the vegetables begin to soften, about 6 minutes. Add the potatoes, clams, clam juice, thyme and water, to cover. Bring to a boil, and simmer until potatoes are soft, about 30 minutes. Season with salt and pepper.

2 tablespoons olive oil

1 large onion, chopped (about 2 cups)
1 cup chopped celery (about 3 stalks)
4 cups red bliss potatoes (about 1 1/4 pounds), cut into 1/2-inch dice

Steps:

  • Rinse the clams several times under cold running water. Transfer to a large pot and add 3 1/2 cups water. Bring to a simmer over medium heat, then cover and cook until the clams open, about 8 minutes. Remove the clams with a slotted spoon and transfer to a deep bowl as they open; cover with plastic wrap so they don't dry out. Strain the broth through a fine-mesh sieve into a large bowl. Wipe out the pot, then pour the strained broth back into the pot.
  • Meanwhile, put the bacon in a large skillet and cover with about 2 inches of water. Bring to a simmer over medium heat and cook 10 minutes; drain, then return the bacon to the skillet. Add 1 tablespoon butter and cook until the bacon starts to brown, about 5 minutes. Transfer the bacon to the pot with the broth. Wipe out the skillet. Add the remaining 1 tablespoon butter, the onion and celery to the skillet and cook over medium heat until the onion is translucent, about 6 minutes.
  • Add the onion and celery mixture to the broth along with the potatoes. Bring to a simmer over medium heat and cook until the potatoes are tender, 10 to 12 minutes. Remove from the heat. Stir in the Worcestershire sauce and 1/2 teaspoon white pepper.
  • While the potatoes are cooking, remove the clams from their shells and roughly chop.
  • Add the clams to the soup and cook until heated through, about 1 minute. Ladle the soup into bowls and top with chopped parsley.

  • Bring the shucked clams, clam juice, and chicken stock to a simmer in a large pot over medium-high heat. Reduce heat to medium-low and simmer 15 minutes. Meanwhile, melt the butter in a large skillet over medium heat. Stir in the onion and celery; cook and stir until the vegetables are tender. Stir the onion mixture and potatoes into the clams. Steps:

  • Scrub quahaugs to clean well.
  • Place into a large kettle with the 6 cups water, cover and cook over medium until shells open (approximately 5 minutes).
  • Remove quahaugs from water and throw out quahaugs any that haven't opened up.
  • Remove the meat from the opened shells and chop into fine pieces.
  • Discard shells, but save all of the cooking liquid.
  • In a large pot, render the salt pork until brown.
  • Add the onions and saute a few minutes.
  • Measure reserved cooking water and add additional water to make a full 8 cups liquid.
  • Pour this liquid into the pot with the salt pork and onions.
  • Add potatoes, salt and pepper.
  • Simmer until the potatoes are very tender (aapproximately 5-10 minutes).
  • Add the chopped quahaug meat and bring to a slow boil for 2-3 minutes.
  • If you like, you may set a small pitcher of milk or cream on the table for guests to add a splash to individual portions, for those who prefer it that way.

  • In large stock pot, cover potatoes with water by 2 inches. Add salt and pepper, and bring to boil then reduce to a simmer.
  • In large skillet, heat the salt pork. Add the onion and saute. When onions are translucent, add to the simmering potatoes.
  • Add quahogs, quahog juice, and thyme to the potatoes. Simmer for 30 minutes or until potatoes are cooked through.

The clam that Rhode Islanders call a quahog possesses an impressive variety of names, and even the word "quahog" has more than one spelling and a number of pronunciations: KO-hog, KWO-hog, and KWA-hog. Indians used quahog shells to make beads that were used as money (called wampum). Although quahogs can be found along the North American Atlantic coast from Canada's Gulf of Saint Lawrence to Florida, these clams are particularly abundant between Cape Cod and New Jersey. Steps:

  • Mince the clams.
  • Place bacon or salt pork in the bottom of a large kettle and fry for five minutes.
  • Add onion and cook until golden.
  • Cover potatoes in boiling water; parboil for five minutes.
  • Drain and reserve water.
  • Place a layer of potatoes and a layer of minced clams in the kettle with onion; sprinkle with flour and salt/pepper.
  • Add remaining potatoes, dredge remaining flour and salt/pepper.
  • Cover with 3 cups of boiling water (including the potato water) and simmer for 15 minutes or until potatoes are soft.
  • Add milk and bring up to boiling point.
  • Blend butter or bacon fat with the tablespoon of flour; add clam juice and stir until thickened.
  • Add slowly to chowder just before serving.
  • Serve hot with crackers.

  • In a 3-quart saucepan, saute onion and celery in 2 tbls butter until transparent.
  • Add liquid from clams, clam juice, chicken broth and potatoes and simmer until potatoes are tender.
  • Melt butter in a saucepan, stir in flour and cook on low heat 1 minute, add milk and cream and cook on medium high until bubbly and thickened.

Quahogs as we call them in RI are actually large chowder clams. These are delicious but take a little time to prepare. You can make these ahead and freeze them until you are ready to bake and eat. I'm Italian and this is a favorite for our Christmas Eve fish dinner - but we also enjoy them during the summer! YUM!

Baked Stuffed Quahogs or Clams (Rhode Island Style) image

Steps:

  • Preheat oven 350 degrees.
  • Shuck quahogs/clams. Chop quahog meat into bite size chunks and set aside. Save shells and juice. You should have 24 shells for 24 "stuffies". Scrub the shells clean before stuffing.
  • Melt 1/2 stick of butter and saute celery and onion on medium low heat for about 5 minutes. Add white wine, remaining butter and clam juice and continue to simmer for another 5 minutes to reduce liquid just a bit and butter is melted. Add chopped quahogs and remove from heat. Strain and separate liquid from solids - do not toss anything!
  • In a large bowl add stuffing, pour liquid on stuffing. If stuffing is dry add more of the clam juice. Stuffing should have a sloppy soupy consistency.
  • Add clam and veggie mixture to stuffing. Remember stuffing must be soupy because when it cooks the liquid will dry up.
  • Add 1 T Old Bay at a time, mix and taste - if you need more flavor add a little more. Be careful - Old Bay is salty.
  • Place shells on a large pizza/cookie sheet. Spray each with a little oil spray to prevent stuffing from sticking.
  • Scoop a large amount of stuffing in each of the quahogs - you may be able to use all 24 shells.
  • A few things to remember - do not over cook quahogs in pan w/veggies, stuffing must be soupy - if it's dry add a little more clam juice, be careful with the Old Bay. This a an easy recipe, but it took me a couple of times before I perfected it.
  • I put 35-40 minutes for cooking - but when the stuffing is set and the top is crunchy and brown - they are done!
  • Enjoy!

Steps:

  • Open quahogs, placing meat and juice in separate bowls. Save shells.
  • In a large bowl, break bread into small pieces and add enough quahog juice (clam juice) so bread is well moistened, but not soggy.
  • Add chopped quahogs (clams).
  • In a frying pan, add oil and sauté onion, green pepper and garlic until soft, but not brown.
  • Add sautéed onion, green pepper, garlic, and crushed red pepper to bread mixture; mix well.
  • Wash shells and separate.
  • Mound shell halves with stuffing.
  • Sprinkle top with paprika and parsley.
  • Dot tops with a small amount of margarine.
  • Set in a pan and bake in preheated 375°F oven for about 25 minutes or until heated through.
