AWESOME RICE-A-RONI SALAD
I have been making this delicious rice salad for years. The pages to my little community cookbook where I found this recipe is starting to fall apart from so much use. Anyway, this recipe is one of my favorites. I hope you enjoy it, too.

Steps:
- 1. Drain artichokes, saving marinade. Add artichokes to cooked rice. Mix the mayonnaise and curry powder. Add to marinade and mix well. Add remaining ingredients. Toss together. Chill.
ARTICHOKE SALAD I
A flavorful Italian-style rice and artichoke salad.

Steps:
- Prepare rice as package directs, omitting butter, instead spray pan with non-stick vegetable oil. Cool mixture in refrigerator.
- In a mixing bowl, combine artichokes, green onions, green olives and bell pepper.
- Prepare the dressing by whisking together the mayonnaise, Worcestershire sauce, lemon juice, curry powder and hot pepper sauce. Pour dressing over combined rice and vegetable mix, stir well and chill.

RICE-A-RONI SALAD WITH ARTICHOKES AND SHRIMP!
This is a delicious salad, that can be served warm or cold. It would be great for a luncheon, but also great as a supper/dinner meal. I adapted it from a Paula Deen TV Show.

Steps:
- Prepare RICE-A-RONI as box directs.
- Remoce from heat and place in a large bowl to cool off. Lift with a large spoon a few times to help speed up the cooling process.
- Get all your vegetables prepared.
- Make the dressing by combining the Mayo with the marinade, lemon juice, curry powder, pepper.
- Add everything to the bowl. Pour over the dressing last, and combine well.
- Serve right away. or refrigerate and serve at another time. This is a wonderful lunch treat or a supper worthy of company! :-).
- (I used frozen salad shrimp from SAM'S Club).

RICE-AH-RONI
Here's my version of what's often called 'the San Francisco treat,' although the next time I see this served here will be the first time. I used real chicken broth and a variety of seasonings.

Steps:
- Mix together salt, pepper, coriander, mustard powder, celery salt, paprika, turmeric, and cayenne pepper in a small bowl.
- Melt butter in a large skillet over medium-high heat. Add diced onion and pasta. Cook and stir until onions soften and pasta turns golden brown, 4 to 6 minutes. Stir in spice blend; cook and stir about 30 seconds. Add rice and stir until rice is coated with butter, about 1 minute.
- Pour in chicken broth. Bring to a simmer. Stir; reduce heat to low. Cover with a tight-fitting lid; cook for 17 minutes. Remove from heat; let covered skillet sit for 5 minutes. Remove lid and stir in parsley, fluffing rice and breaking up any clumps.

RICE-A-RONI SALAD
I certainly don't remember where I found this recipe. Think it was a magazine. I tried it and it has been a treat for my family since. My 38 year old son, is still stealing bites.

- 1. Cook the Chicken-Rice-a-Roni according to package directions. Let cool.
- 2. While rice is cooking, drain the artichoke hearts and green olives.
- 3. Even though the hearts say they are quartered, I always quarter them and cut them into halves or thirds. This lets me find any tough leaves and remove them.
- 4. Put all ingredients together in a bowl. Add the three heaping tablespoons of mayo onto the salad. Mix well and enjoy! To double or even triple the recipe, just add extra boxes of the rice, artichoke hearts and green olives.
