RICH ITALIAN PASTA SAUCE

"I got this recipe 25 years ago from my boyfriend's Italian barber. I've adjusted it a little and now it's my specialty," writes Jeannie Peirce of Brentwood, California. Whip it up for dinner tonight and freeze any remaing sauce for later.

Rich Italian Pasta Sauce image

Steps:

  • In a large skillet, cook sausage over medium heat until meat is no longer pink; drain. Meanwhile, in a Dutch oven over medium heat, cook beef and onion until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. , Add the tomato sauce, stewed tomatoes, crushed tomatoes, tomato paste, sugar and pepper. Stir in sausage. Bring to a boil. Reduce heat; cover and simmer for 2 hours, stirring occasionally. , Stir in parsley and oregano. Serve desired amount with pasta. Cool remaining sauce; transfer to freezer containers. Freeze for up to 3 months., To use frozen sauce: Thaw in the refrigerator overnight. Place in a saucepan and heat through.

  • To roast the veg, preheat the oven to 200C/gas 6/fan 180C. Scatter the peppers, red onions, chillies and garlic in a large roasting tin. Sprinkle with sugar, drizzle over the oil and season well with salt and pepper. Roast for 15 minutes, toss in the tomatoes and roast for another 15 minutes until everything is starting to soften and look golden.
  • While the vegetables are roasting, cook the pasta in a large pan of salted boiling water according to packet instructions, until tender but still with a bit of bite. Drain well.
  • Remove the vegetables from the oven, tip in the pasta and toss lightly together. Tear the basil leaves on top and sprinkle with Parmesan to serve. If you have any leftovers it makes a great cold pasta salad - just moisten with extra olive oil if needed.

Steps:

  • Melt the butter in a large skillet over medium heat; cook the tomatoes in the melted butter until they begin to fall apart, 5 to 7 minutes. Steps:

  • use half the oil and gently fry garlic do not let it brown.
  • add the tomatoes, dried basil, bay leaf, mixed herbs, salt and pepper and sugar (this recipe needs between 1/2 - 1 tsp salt to bring out the flavours of the tomatoes.
  • bring to the boil and gently simmer for 20 mins, add the tomato puree and the rest of the oil and simmer for a further 15 mins until the mixture has reduced.
  • If using fresh basil roughly chop and add now.
  • Serve with pasta with grated parmasan cheese and freshly ground black pepper.

RICH BASIL PASTA SAUCE

  • Put garlic cloves and basil in food processor and process until smooth.
  • Add olive oil and paramsean to the mixture and process until smooth.
  • Set aside.

Steps:

  • Heat a large skillet over high heat until smoking hot. Reduce the heat to medium-high and add the oil. Add the ground beef and Italian sausage, breaking up the pieces with a wooden spoon, and cook until brown, about 10 minutes. Add the onions and garlic and saute for 3 minutes. Transfer the browned-meat mixture to a strainer and discard the fat.
  • Add the heavy cream to the drippings in the skillet and cook, scraping up the brown bits with the wooden spoon, until reduced by one quarter, 2 to 3 minutes. Reserve. Transfer the meat to a large pot. Add the Pasta Sauce and heavy cream mixture, bring to a simmer and cook until the flavors have melded, about 30 minutes.

Basil Fettuccini Pasta and Cream Sauce image

Steps:

  • In a food processor, mix flour, eggs, olive oil, and salt until mixture comes together and forms a dough.
  • Blanch the basil in boiling water. Remove from the water and shock in an ice bath. Chop roughly and knead into the dough. On a floured surface, knead the dough until the gluten has developed and the dough springs back when pushed with your finger.
  • Use a pasta machine to roll out pasta and cut fettuccini noodles.
  • In a small saucepan, add the white wine and garlic and reduce by half. Add cream and cook until slightly thickened. Adjust consistency by adding more cream or reducing longer. Season with white pepper and salt.
  • Add pasta to boiling, salted water and cook 3 to 5 minutes or until done. Drain. Toss with the Cream Sauce. The sauce should barely coat the noodles.

Steps:

  • Heat the oil in a frying pan, add the bacon and garlic, cook, stirring, until the bacon is crisp.
  • Add the wine and bring to the boil.

I had excess basil from a friend with an overgrown herb garden and used it for this amazingly rich, creamy sauce, thats very easy. Great with pasta, chicken, etc.

Rich Basil Cream Sauce image

Steps:

  • Heat light cream, salt and pepper over medium-low heat, allow to come to a simmer while working on the basil.
  • Place basil, garlic, nuts, and cheese in food processor and blend until almost smooth.
  • Add olive oil in thin stream until emulsifies, while scraping the sides down to blend (emulsify: turns a lighter shade of green).
  • By this time the cream will have come to a light simmer, add half of the cream to your basil mix and blend, until smooth, add this back to the remaining cream in the pan.
  • Bring to a light simmer for 5 minute.
  • Serve! :).

Steps:

  • Heat the olive oil in a large sauce pan. Lower to medium heat and add the chopped onion. Saute until it starts to brown, 5-10 minutes.
  • Add the minced garlic and cook for 2-3 more minutes.
  • Add the wine to deglaze the pan, making sure to scrape up all the browned onion and garlic. Cook on medium-high heat until almost all the liquid evaporates, about 5 minutes.
  • Stir in the tomatoes, basil, oregano, salt, and pepper. Cover, and simmer on low heat for 15 minutes.
