RISE AND SHINE MUFFINS

Breakfast ready in 35 minutes! Enjoy these orange flavored muffins made using Fiber One® cereal - a great start to your day!

Rise and Shine Muffins image

Steps:

  • Heat oven to 400°F. Spray bottoms only of 12 regular-size muffin cups with cooking spray or line with paper baking cups. In medium bowl, mix orange juice, honey, oil and egg.
  • In large bowl, stir Bisquick mix, cereal, baking soda and 1/2 cup of the nuts. Stir orange juice mixture into cereal mixture just until moistened. Spoon batter into muffin cups. Sprinkle with remaining nuts.
  • Bake about 20 minutes or until golden brown. Immediately remove from pan.
  • In small bowl, mix cream cheese and marmalade until well blended. Serve muffins with spread.

Steps:

  • Preheat oven to 350.
  • Mix the first 12 ingredients together.
  • Next add remaining 3 ingredients.
  • Mix well.
  • Using greased muffin cups or paper lined cups, fill 3/4 full of batter.
  • Bake at 350 for 20-25 minutes.

2 cups flour
1 1/4 cups sugar
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
1 apple, peeled and chopped
1/2 cup crushed pineapple, drained
2 cups grated carrots
1/2 cup chopped dates or 1/2 cup chopped raisins
1/2 cup chopped nuts
1/2 cup coconut flakes
1/2 cup chocolate chips (Optional)
2 eggs
3/4 cup oil
1 1/2 teaspoons vanilla

Steps:

  • 1. Heat oven to 400°. Grease bottoms only of 12 medium muffin cups, 2 ½ x 1 ¼ inches, with shortening, or line with paper baking cups.2. Place cereal in plastic bag or between sheets of waxed paper crush with rolling pin (or crush cereal in blender or food processor) set aside. Mix orange juice, honey, oil and egg set aside.3. Mix Bisquick®, cereal, baking soda and ½ cup of the nuts in medium bowl. Make a well in center of cereal mixture stir in orange juice mixture just until moistened. Divide batter evenly among muffin cups. Sprinkle with remaining 2 tablespoons nuts.4. Bake about 20 minutes or until golden brown. Immediately remove from pan to wire rack (place rack on waxed paper to catch glaze drips). Cool 5 minutes. Steps:

  • Mix milk, orange juice, sour cream, eggs and melted butter together. In a separate bowl mix together flour, sugar, bowing powder and salt. Then add to wet ingredients. Fold in orange zest. Place batter in greased or lined muffin pan. Bake in oven at 350 degrees for 15-20 min or until a toothpick inserted in the center comes out clean.
  • To make the glaze, combine orange juice, confectioners sugar, whipping cream, honey, almond extract and orange zest in a small bowl. Whisk together until smooth. Drizzle the glaze over the muffins while they are still warm.

Steps:
