RITZ MINT COOKIES

These taste very much like Girl Scout Thin Mint cookies! I made this and they are VERY good! This recipe was posted by a wonderful cook name Marky90...but the photo is mine!

Steps:

  • 1. Melt Chocolate Chips in microwave. (About 1 -1/2 minutes)
  • 2. Stir till creamy
  • 3. Dip crackers in chocolate.
  • 4. Put cookies on wax paper.
  • 5. Freeze till set.

2 sleeves of ritz crackers
1 1/2 lb mint chocolate chips chips
**note- if you can't find the mint chips use semi sweet chips with 1 tsp. of mint extract. i used that and it worked fine.

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter, sugars and vanilla until light and fluffy, 5-7 minutes. Beat in eggs. In another bowl, whisk flour, baking powder, baking soda and salt; gradually beat into creamed mixture. Stir in baking chips., Drop dough by rounded tablespoonfuls 3 in. apart onto greased baking sheets. Bake 10-12 minutes or until light brown. Remove from pans to wire racks to cool.

Mint Thins (Ritz Cracker Cookies) image

Steps:

  • 1. MIX chocolate and extract.
  • 2. DIP crackers in chocolate mixture, turning to completely coat each cracker. Carefully scrape off excess chocolate. Place crackers in single layer on waxed paper-covered baking sheets; sprinkle with crushed candy.
  • 3. REFRIGERATE 30 min. or until chocolate is firm.
  • 4. kraft kitchens tips : CHOCOLATE-PEANUT BUTTER "COOKIES" Omit peppermint extract and candy cane. Spread each cracker with thin layer of peanut butter before dipping in the melted chocolate

1 pkg (8 squares) baker's semi-sweet chocolate, melted, slightly cooled
1/4 tsp peppermint extract
1 sleeve ritz crackers (36 crackers)
1 candy cane (6 inch), crushed

Thin Mint Crackers image

Steps:

  • Using a double boiler method, melt the chocolate coatings over hot tap water for 15 - 20 minutes. Stir . Do not cook or get water into the chocolate.
  • After it is melted, stir in a couple drops of peppermint flavor into the chocolate.
  • Dip crackers into the melted chocolate and then place onto a cold cookie sheet and put into the refrigerator to set. (A freezing tray to rest the dipped cookies will keep the bottoms neat looking.)
  • In a few minutes take them out and package in candy cups. The cookies are best kept at room temperature or a cool dry place away from any odors.

Steps:

  • Line baking sheets with parchment paper and set aside.
  • In a heatproof bowl, set over (but not touching) simmering water, melt chocolate wafers. Stir with a slotted spoon. Dip each cracker into melted wafers, using tweezers or your fingers, until fully coated. Transfer to prepared baking sheets.
  • Let stand until coating has set and is no longer glossy, 20 to 30 minutes. Tip: Dark Cocoa Mint-flavored Melting Wafers can be purchased atwilton.com or your local baking/craft specialty store.

Copycat Thin Mint Cookies image

Steps:

  • Line baking sheets with parchment paper.
  • Combine dark chocolate chips, semisweet chocolate chips, and coconut oil in a large microwave-safe bowl. Heat in a microwave oven for 1 minute and stir. Continue heating 30 seconds at a time, stirring after each heating, until chips are melted and smooth. Add peppermint extract and stir.
  • Drop 1 cracker into melted chocolate. Use a spoon to push cracker into chocolate mixture until evenly coated. Transfer coated cracker to a prepared baking sheet. Repeat with remaining crackers and chocolate mixture, reheating mixture in 20-second intervals if it becomes too thick.
  • Refrigerate cookies until chocolate hardens, about 10 minutes. Store cookies covered in the refrigerator.
