Steps:

  • Place bananas in freezer and freeze overnight. Remove bananas from freezer and allow to thaw for 45 minutes to 1 hour. Peel bananas and place in bowl of food processor along with the lemon juice. Process for 10 to 15 seconds. Add corn syrup and vanilla bean seeds and turn processor on. Slowly pour in the heavy cream. Process until smooth. Chill mixture in refrigerator until it reaches 40 degrees. Transfer mixture to an ice cream maker and process according to manufacturer's instructions. Place mixture in an airtight container and freeze for 3 to 6 hours before serving.

Steps:

  • Peel the bananas, cut into 2 or 3 chunks, and freeze until solid.
  • Preheat oven to 350 degrees F (175 degrees C). Place the frozen banana pieces into a baking dish; drizzle with melted butter.
  • Roast the bananas in the preheated oven until browned, about 20 minutes. Mash the bananas in a bowl, and chill in refrigerator.
  • In a bowl, whisk together the egg, white sugar, brown sugar, and bourbon whiskey until smooth. Pour the cream into a heavy saucepan over medium-low heat, and bring to a simmer. Whisk about 1 cup of the hot cream into the egg mixture, 1 tablespoon at a time, incorporating each tablespoon before adding the next; pour the mixture back into the saucepan with remaining cream. Over medium-low heat, constantly whisk the cream mixture until thickened and almost boiling; stir in the mashed bananas. Transfer to a bowl and chill 4 hours to overnight.
  • Pour the ice cream base into an ice cream maker, and freeze according to manufacturer's instructions; pack soft ice cream into a lidded container and freeze until firm, at least 1 hour.

Vegan Roasted Banana Ice Cream image

Steps:

  • To make the cashew milk, place the cashews in a large bowl and add water to cover by a couple of inches. Soak cashews overnight.
  • In the morning, drain the cashews and place them in a blender with about 1 3/4 cups (375 grams) fresh water. Blend until smooth. If you use a Vitamix, there will be no need to strain - the milk will be perfectly smooth; for other blenders, check the consistency and, if necessary, strain the cashew milk through a fine-mesh strainer. Cashew milk will keep well, covered and refrigerated, for up to 4 days.
  • To roast the bananas, heat the oven to 400 degrees with a rack in the middle. Line a rimmed baking sheet with parchment paper. In a large bowl, toss the bananas, 2 tablespoons/27 grams coconut oil, brown sugar and pinch of salt. Spread on prepared baking sheet and bake until caramelized, about 15 to 25 minutes. Transfer to a cooling rack and let cool completely.
  • Put 1/4 cup water into a small saucepan over medium to low heat. Add sugar and cook, stirring frequently, until sugar has dissolved. Add cocoa butter, remaining 4 tablespoons plus 2 teaspoons/63 grams coconut oil and remaining salt. Stir until melted.
  • Pour the sugar mixture into in a food processor (or use a tall 2-quart container and an immersion blender), and add the coconut milk and 1 cup/212 grams cashew milk. Blend until smooth. Add roasted bananas and blend again to combine until very smooth. Cover and refrigerate the ice cream base until chilled, 1 to 2 hours.
  • Freeze in an ice cream maker according to the manufacturer's instructions. In the last minute of churning, add toasted walnuts, if desired, and churn until incorporated. Transfer the ice cream to a storage container and freeze up to 7 days. Alternatively, you can serve it immediately. It will be the consistency of soft-serve.

  • Preheat the oven to 400°F; position the rack in the middle. Line a shallow baking sheet with parchment paper. In a large bowl, toss the bananas, coconut oil, sugar, and salt. Spread the ingredients on the prepared baking sheet and bake for 10 to 15 minutes, or until caramelized. Transfer to a cooling rack and let cool completely.
  • Make the Banana Vegan Ice Cream:
  • Pour the coconut and cashew milks in a tall (2-quart or larger) container and set aside. In a small saucepan, combine the sugar and 1/4 (60 grams) water and stir over low heat until the sugar has melted. Stir in the cocoa butter and coconut oil until melted. Stir in the salt until dissolved.
  • Gently pour the sugar mixture into the coconut milk mixture. Using an immersion blender, buzz the liquids together until emulsified. Add the roasted bananas and use an immersion blender to buzz the mixture until emulsified. Cover and refrigerate the ice cream base until chilled, for 1 to 2 hours. Do not refrigerate overnight. EASY & HEALTHY BANANA "ICE CREAM"

After seeing this idea floating around the web, I thought I'd experiment a little. Three simple ingredients, no sugar added, no ice cream machine needed... How much healthier and easier could it get? This "ice cream" is smooth like soft serve and naturally sweet. Plus it has the potential for so many add-ins (dark chocolate chips, chopped strawberries, nuts... just to name a few). Please note "Cooking Time" includes time needed to cure in the freezer. If you are as excited as my 4-year-old was to eat this "ice cream", you may choose to serve it directly after turning out of the food processor instead of freezing for 2-4 hours, but please be aware that it will be soft and melt much faster. My daughter, the best taste-tester around, approves, and I hope you do too!

  • Slice bananas and arrange in one layer onto a parchment or wax paper lined cookie sheet. Freeze for 2 hours.

Roasted Banana Cream Eclairs image

Steps:

  • Preheat the oven to 425 degrees F.
  • For the choux paste: Line a baking sheet with parchment paper. Bring the water, milk, butter, sugar and salt to a simmer over medium heat in a medium saucepan, stirring with a wooden spoon. As soon as it comes to a boil, add the flour, stirring constantly, until the dough forms a ball and pulls away from the sides of the pan, about 1 minute. Remove the pan from the heat and let the dough cool for 3 to 4 minutes, stirring occasionally.
  • Transfer to a stand mixer fitted with the paddle attachment and mix on low speed to allow the dough to cool, 2 to 3 minutes. Add the eggs, one at a time, with the mixer on medium speed. When all the eggs have been incorporated, scrape the dough into a pastry bag fitted with your desired tip.
  • Pipe the dough into 4 1/2-by-3/4-inch lengths on the prepared baking sheet, spacing them about 3 inches apart. You should end up with about 15 eclairs. With a damp fingertip, flatten any points. Bake until eclairs are deep golden brown and puffed, rotating the sheets halfway through, 22 to 25 minutes. They should be very light and crisp. Turn the oven off.
  • Poke each eclair on either end with a toothpick to allow some steam to release. Return the eclairs to the oven, prop the door open a crack and allow them to dry out, about 15 minutes. Transfer the baking sheet to a wire rack and allow the eclairs to cool completely.
  • For the chocolate glaze: Meanwhile, bring the cream to a simmer in a medium saucepan. Remove from the heat and mix in the chocolate, cocoa powder and honey. Whisk until the chocolate has completely melted. Transfer to a medium bowl and allow the glaze to cool and thicken.
  • For the pastry cream: Add the milk, vanilla bean and salt to a saucepan and bring to a simmer. Meanwhile, whisk together the egg yolks, sugar and cornstarch until thick, pale and smooth. Remove the vanilla bean pod from the hot milk and scrape the seeds into the milk, discarding the pod. Temper the hot milk into the egg mixture by slowly pouring it in while whisking constantly. When combined, pour back into the pot and bring to a simmer over medium heat.
  • Stir continuously until thickened, then remove from the heat and mix in the butter and vanilla extract. Strain through a fine-mesh sieve into a bowl, then set a piece of plastic wrap directly on the surface of the pastry cream to prevent a skin from forming. Let cool to room temperature, then refrigerate until cold, at least 1 hour.
  • For the caramelized bananas: When the pastry cream is almost ready, preheat the oven to 450 degrees F. Line a rimmed baking sheet with parchment paper or a Silpat. Stir together the cinnamon and sugar in a small bowl, then pour into an even layer on the prepared baking sheet. Place the bananas cut-side down on the cinnamon sugar, coating them as much as you can. Using a paring knife or fork, poke the skin of the bananas a few times to allow steam to release. Bake until completely caramelized, 15 to 20 minutes. Allow to cool slightly before gently flipping them over.
  • Remove the bananas from their skins and discard the skins. Place the roasted bananas in a food processor and puree until smooth. Add the pastry cream and puree until smooth. Pour into a pastry bag fitted with a small metal tip.
  • For the garnish: In a large skillet, heat the oil over medium-high heat. Add the bacon and cook until crispy. Add the peanuts and salt and toast together, about 1 minute. Transfer to a paper towel-lined sheet tray to drain any excess fat. When cooled slightly, roughly chop the mixture.
  • To serve, poke a small hole in both ends of each eclair using a paring knife. Fill the eclairs from both ends with the banana pastry cream. Dip the tops in the chocolate glaze, allowing any excess to drip off. Lightly sprinkle with the bacon and peanut garnish.

  • In a bowl whisk together the sugar, the cornstarch, the yolks, and the whole eggs and add the milk, scalded, in a stream, whisking.
